1/3 cup extra virgin olive oil
1/8 cup red wine vinegar
1 Tbsp champagne vinegar
1 1/2 teaspoon dijon mustard
1/4 cup finely chopped parsley
1/4 orange (juiced)
2 tsp honey
1/4 tsp kosher salt
1/2 tsp freshly ground black pepper
1/4 cup chopped basil
2/3 cup chopped salami
2 cups bowtie pasta
1 large handful arugula
1 cup cantaloupe (cut into bite-sized pieces)
1/2 cup feta
1/2 cup Kalamata olives (halved)

Steps:

  • Cook pasta according to package directions. After cooking, draining, and rinsing, allow it to cool and set aside.
  • In a small mixing bowl, whisk together all ingredients for the dressing. Refrigerate until ready to use.
  • In a large bowl, combine pasta, melon, basil, olives, salami, and arugula. Pour the vinaigrette over the salad mixture and toss with your hands.
  • Plate on a large platter and top with fresh feta cheese. Serve cold and enjoy!

Now that the weather is getting warmer, I find myself looking forward to pasta salads and melon. Why not combine the two? One of my favorite pasta salads from BHG "Fresh and Simple Pasta Pronto". Swiss cheese can be substituted for the fontina.

1 1/2 cups dried bow tie pasta
2 cups cantaloupe or 2 cups honeydew melon, chunks
1 cup fontina, cubed
1/3 cup nonfat poppy seed salad dressing
1 -2 tablespoon of fresh mint, chopped
2 cups watercress, stems removed

Steps:

  • Cook pasta according to package directions; drain and rinse well.
  • In a large bowl toss together pasta, melon, and cheese. Combine salad dressing and mint; pour over pasta mixture and toss gently to coat.
  • Serve immediately or cover and chill up to 24 hours.
  • Add watercress to pasta mixture just prior to serving.
  • For a pretty presentation, pasta salad may be served in melon shells :).

1 (12 ounce) bag broccoli florets
1 (10 ounce) basket cherry or grape tomatoes
1 bunch green onions, sliced
½ cup chopped celery

½ green bell pepper, chopped
2 cups creamy salad dressing (such as Miracle Whip®)
⅓ cup grated Parmesan cheese
