3 lb baby spinach
1 1/4 cups whole milk
1 cup heavy cream
1 small onion, finely chopped
1/2 stick (1/4 cup) unsalted butter
1/4 cup all-purpose flour
1/8 teaspoon freshly grated nutmeg

Steps:

  • Cook spinach in 2 batches in 1 inch of boiling salted water in an 8-quart pot, stirring constantly, until wilted, 1 to 2 minutes. Drain in a colander and rinse under cold running water until cool. Squeeze small handfuls of spinach to remove as much moisture as possible, then coarsely chop.
  • Heat milk and cream in a small saucepan over moderate heat, stirring, until warm. Meanwhile, cook onion in butter in a 3-quart heavy saucepan over moderately low heat, stirring occasionally, until softened, about 4 minutes. Whisk in flour and cook roux, whisking, 3 minutes. Add warm milk mixture in a fast stream, whisking constantly to prevent lumps, and simmer, whisking, until thickened, 3 to 4 minutes. Stir in nutmeg, spinach, and salt and pepper to taste and cook, stirring, until heated through.

From Cuisine at Home. I can't abide frozen spinach, so baby spinach leaves fit the role nicely. Cut down on the fat content by using lower fat milk instead of cream. A brief history of boursin, compliments of www.cheese.com: "Boursin is a modern, creamy, fresh cheese of cylindrical shape without rind. It is made with garlic and herbs or even black pepper. It is a soft industrial cheese with no affinage (maturity/aging process). The cheese was founded by Monsier Boursin in 1957. It has a rich, sweet flavor with a hint of acidity." Update: I discovered recently that there is a posted boursin cheese recipe on this site. I have not tried it.

1/2 cup yellow onion, chopped
1 tablespoon butter, unsalted
2 tablespoons flour
1 cup whole milk
1/2 cup heavy cream
5 ounces boursin cheese
10 ounces baby spinach leaves, chopped
2 tablespoons parmesan cheese
2 teaspoons lemon zest, finely minced
salt
white pepper
cayenne
1 pinch freshly grated nutmeg
2/3 cup fresh breadcrumb
1 tablespoon butter, melted
1 tablespoon olive oil
salt
black pepper

Steps:

  • Preheat oven to 425 degrees.
  • Butter a shallow baking dish and set aside.
  • Prepare the sauce first by sauteing the onion in butter over medium heat. Cook until soft, about 4-5 minutes.
  • Add flour and stir well to coat. Cook about 1 minute.
  • Gradually whisk in the milk and whipping cream, stirring the mixture constantly to break up any lumps. Simmer sauce for 1 minute. DO NOT burn.
  • Next stir in the boursin cheese a little bit at a time, until melted and smooth. Remove the pan from the heat.
  • Now add the spinach, Parmesan cheese, lemon zest and seasonings. Transfer the spinach mixture to the prepared baking dish.
  • Toss together the topping ingredients. Add the topping to the spinach mixture and pat down with your hands.
  • Place the dish on a baking sheet and bake until crumbs are golden and saucy bubbly; approximately 20-25 minutes.
  • NOTE: Casserole can be prepared up through Step #8, covered with foil and chilled for baking at a later time.

Boursin cheese makes a quick and easy sauce for fresh spinach, and a little Parmesan makes it extra-special.

10 to 12 ounces baby spinach (rinsed)
2 tablespoons butter
1/2 cup red onion (finely chopped)
1 container (4.4 ounces) light garlic and herbs Boursin cheese
1 tablespoon grated nutmeg
Dash freshly ground black pepper
Garnish: shredded Parmesan cheese

Steps:

  • Gather the ingredients.
  • In a large saucepan, melt the butter over medium heat and saute the onion. When the onion is softened, add the rinsed spinach. Cook, stirring until spinach has wilted.
  • Stir in the Boursin cheese, nutmeg, and pepper until cheese is melted.
  • Serve garnished with a little shredded Parmesan .

CHICKEN STUFFED WITH BOURSIN CHEESE AND SPINACH



Chicken Stuffed With Boursin Cheese and Spinach image

I created this recipe years ago, and during the past year have seen similar ones in newer cookbooks. While the recipe calls for Boursin cheese, I made it recently with the Tipsy Boursin Cheese recipe posted on this site and it is just as good as when made with the real thing. The stuffing also makes wonderful stuffed mushrooms. I prefer to take the breast off the bone so the spinach is lightly cooked, but it can be made with the bone in - just bake it longer. Use the type of spinach you would buy for a salad and serve it with Jasmine or Basmati rice.

4 boneless chicken breasts, skin on
1 (10 ounce) bag spinach
1 (5 1/4 ounce) box boursin cheese, herb and garlic flavored
salt

3 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees. Use a baking dish that will hold all four breasts, such as a 13 x 9 pan.
  • Make stuffing: Wash and dry spinach. Roughly chop the spinach and place into a medium size bowl. Using a fork or your hands, mash the spinach and cheese together until the spinach is coated with the cheese and most of the lumps are gone.
  • Season the chicken lightly with salt and pepper on both sides. Slide your fingers under the chicken skin to loosen it, leaving some of the membrane intact so it will better hold the stuffing.
  • Lightly drizzle olive oil on the bottom of the pan, and lay the chicken breasts skin-side up on top of the oil.
  • Dividing the stuffing evenly between them, stuff the breasts. Using the opening you made with your fingers, gently push the spinach/cheese mixture under the skin, working it around so it looks attractive.
  • Drizzle the skin lightly with olive oil.
  • Place pan in oven and bake for approximately 45 minutes to 1 hour.
  • If you have extra stuffing, bake it in a small greased dish for about 25 minutes.
  • Check the chicken after 30 minutes and lay a piece of foil over the pan if it is getting too brown.

4 Tbsp butter, unsalted
1 c diced yellow onion
4 Tbsp all purpose flour
2 c whole milk
1 c heavy cream
2 pkg boursin cheese (5.2 oz. each)
3 pkg frozen chopped spinach, thawed and squeezed of excess moisture
4 Tbsp parmesan cheese, grated
2 tsp lemon zest
salt, pepper, cayenne, nutmeg to taste
1 1/3 c panko bread crumbs
2 Tbsp olive oil

Steps:

  • 1. Preheat oven to 425F. Saute onions in 2 T butter until soft--about 5 minutes. Add the flour and stir to coat the onions. Gradually whisk in the milk and heavy cream stirring constantly to prevent lumps. Simmer for one minute.
  • 2. Stir in Boursin cheese a little at a time until melted and smooth. Remove saucepan from heat and add spinach, parmesan, lemon zest, and seasonings. I use salt, pepper, a pinch of fresh grated nutmeg and about 1/4 teaspoon of cayenne.
  • 3. Transfer spinach mixture to a prepared baking dish (I sprayed baking dish with Pam).
  • 4. Combine crumbs, 2T. melted butter, oil, salt and pepper. Top spinach with crumbs, packing down to adhere.
  • 5. Bake 20-25 minutes until crumbs are golden and sauce is bubbly.
