Not a "figure friendly" side dish, it tastes incredible. Nice to serve at special dinners or when you're not counting fat and calories.

3 lbs red potatoes, unpeeled
salt and pepper
1 pint heavy cream
1 (5 ounce) package boursin cheese
fresh chives or parsley, chopped

Steps:

  • Slice potatoes into quarter inch rounds and toss with salt and pepper.
  • Slowly heat cream and cheese together until thoroughly melted.
  • In a deep casserole dish layer half the potatoes.
  • Cover with half the cream mixture.
  • Repeat.
  • Cover and bake at 350°F for one hour.
  • Sprinkle top with chives or parsley.

This was the result of an "empty out the pantry" night, and WOW was it tasty. It is fairly healthy, too! Note: cooking time includes 1 hour for baking potatoes.

4 medium baking potatoes
1 1/2 cups chopped asparagus
1 1/2 cups fresh spinach
1/4 cup boursin garlic & herb spreadable cheese
1/2 cup skim milk
2 cups imitation crabmeat (flake style)
1/4 cup part-skim mozzarella cheese
salt and pepper

Steps:

  • Scrub potatoes and bake using your preferred method.
  • While potatoes are baking, steam asparagus and spinach until asparagus is crisp-tender.
  • Place veggies in a bowl and add boursin, milk, and crab meat.
  • When potatoes have cooled enough to touch, slice each in half lengthwise and scoop out the flesh into the bowl. Leave about 1/4 inch of flesh for each shell.
  • Mix the veggies, cheese, milk, and potatoes until the potato flesh falls apart and becomes somewhat smooth. You may need to smash the larger chunks against the side of the bowl. Add salt and pepper to taste.
  • Fill each potato shell (you'll need to really pack it in, and there may be some left for nibbling while you wait :>).
  • Sprinkle each shell with 1 Tbsp mozzarella.
  • Bake at 375 for 12-15 minutes, or until heated through.

Boursin cheese is easy to make and much less expensive than the storebought variety. And I like the homemade Boursin much better than any I have tried prepackaged.

2 cups heavy cream
2/3 cup boursin cheese (can use homemade)
2 tablespoons minced shallots
2 cloves garlic, minced
2 1/2 lbs new potatoes, scrubbed and sliced 1/4 inch thick
2 tablespoons snipped chives
salt and pepper
2 tablespoons snipped parsley

Steps:

  • Grease a 13x9x2-inch baking dish.
  • In a saucepan, heat cream, Boursin cheese, shallots and garlic over medium heat, stirring until cheese melts.
  • Preheat oven to 400 degrees.
  • Layer half of the potatoes, then half the cheese mixture.
  • Add all the chives.
  • Repeat layers of potatoes and cheese mixture.
  • Add salt and pepper.
  • Bake one hour.
  • Sprinkle with parsley before serving.

3 lbs potatoes (get the ones that have the buttery taste to them)
3 ounces boursin cheese
8 ounces sour cream
1/2 cup milk (if needed)
salt & freshly ground black pepper
2 ounces butter, sliced

Steps:

  • Wash, peel and cut the potatoes into pieces. Boil in salted water until tender.
  • Mash and add the cheese, sour cream, the milk if needed for creaminess, and salt and pepper. Place in a large pan, top with butter slices (or cheddar cheese) and bake at 325 degrees until hot. Broil a few minutes to get the top nice a browned.
