SPICY MAPLE BOURBON CANDIED BACON
Time to level up bacon. This Spicy Maple Bourbon Candied Bacon smoked on the Oklahoma Joe's Highland Offset Smoker is out of this world.

Steps:
- Preheat your Oklahoma Joe Highland Smoker to 275F indirect cooking. Add wood chunks for extra smoke flavor if desired.
- In your firebox, add a cast iron skillet to warm. Add the bourbon first and let simmer for 3-4 minutes. Next, add the rest of the glaze ingredients and let simmer, stirring occasionally, until it has thickened. Once done, pull off and let cool for 5 minutes.
- Lay your slices of bacon onto a cooking sheet (preferably with a grate). Lather each piece in the maple syrup glaze, crumble brown sugar over top, and lightly season with your BBQ seasoning.
- Add the bacon to the smoker and cook for about 25-35 minutes or until the outside has begun to caramelize and the fat begins to render. Once it is looking good, flip the bacon over and then glaze, crumble brown sugar and lightly season the opposite side. Continue cooking for another 25-35 minutes until it has caramelized.
- When done, pull the bacon out and let cool for 5-10 minutes (please let cool as it can be very hot!). Top with sliced jalapeños and enjoy!
SWEET-GLAZED BOURBON BACON RECIPE BY TASTY

- Preheat oven to 375°F (350ºF for convection ovens).
- Stir together Bulleit Bourbon, maple syrup, and brown sugar.
- Arrange bacon in a single layer on a parchment-lined baking sheet. Brush the Bulleit mixture evenly over one side of the bacon, reserving the remaining mixture.
- Bake for 6 to 8 minutes, then flip the bacon, and brush with reserved bourbon mixture.
- Return to oven and cook for 20 minutes (flipping bacon every 5 minutes) or until bacon is lightly crisp and the glaze is golden brown and bubbling.
- Enjoy!

HONEY-BOURBON GLAZED BACON

- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
- Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.
WHISKEY MAPLE SUNDAES WITH CANDIED BACON

- For the whiskey sauce: Combine the heavy cream, maple syrup, corn syrup and salt in a medium saucepan and stir. Cook over medium-low heat, stirring constantly, until the sauce has reduced and thickened, about 25 minutes. (The sauce should bubble slightly as it's cooking). Stir in the whiskey and take off the heat.
- Pour into a container and let cool to room temperature, then refrigerate until completely chilled, about 2 hours.
- For the candied bacon: Preheat the oven to 350 degrees F.
- Set a wire rack on a rimmed baking sheet and lay the bacon slices on the rack. Microwave the maple syrup and brown sugar together in a small bowl until just melted, 15 to 20 seconds, then stir or whisk to combine. Brush the mixture on both sides of the bacon.
- Bake, rotating the pan halfway through, until crisp, about 15 minutes. Remove and let the bacon cool on the rack for a few minutes, then gently lift the bacon off the rack and set it back down. (Doing this will ensure it doesn't stick to the rack when it cools.)
- For the sundae: Using a 2-ounce scoop, put 3 scoops of ice cream in a dish. Drizzle some of the chilled maple whiskey sauce over the ice cream. Cut a slice of bacon in half and arrange in the dish. Top with the chopped toffee bars. Repeat 5 more times and enjoy!
MAPLE BOURBON CANDIED BACON
Candied bacon with a maple bourbon glaze

- In a bowl, whisk together the brown sugar, maple syrup, and bourbon.
- Cut the bacon strips into thirds. Add the bacon to the maple bourbon mixture and toss until evenly coated.
- Place the bacon strips on a lined baking sheet with a wire rack that has been sprayed with nonstick cooking spray.
- Place in a 375 degree oven for 18 minutes, flip them, and brush will the remaining maple bourbon glaze. Place back into oven for 18 more minutes. (cook time will be less if you are not using very thick cut bacon)Note: The bacon will harden as it comes to room temp.

This is a really easy breakfast item because you can put it in the oven, set the timer and forget about it while you make everything else and pull it out just before sitting down so it's piping hot.

- Preheat the oven to 325 degrees F.
- Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
- Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!
MAPLE-CANDIED BACON
Steps:
- Preheat oven to 400 degrees F.
- Line a rimmed baking sheet with heavy foil. Place a baking rack over the lined sheet tray and arrange the bacon slices across the rack next to each other, not overlapping.
- In a small bowl, whisk the maple syrup and mustard. Generously spoon over the top of the bacon, and bake 12 to 15 minutes. Turn the bacon over and baste with syrup mixture. Bake an additional 5 to 10 minutes, or until the bacon has reached desired crispiness.
- Carefully remove the pan from the oven. Sprinkle hot bacon with a scant pinch of finely ground black pepper. Let the bacon rest on the rack for 5 minutes.

- Preheat oven to 350°. In a small bowl, mix brown sugar, 3/4 teaspoon mustard, 1/2 teaspoon syrup and salt. If desired, stir in bourbon. Coat bacon with brown sugar mixture. - Preheat oven to 375°.
- Arrange bacon in a single layer on a wire rack in an aluminum foil-lined broiler pan. Bake for 10 minutes or just until bacon begins to curl at ends.
- Meanwhile, combine brown sugar and bourbon in a small bowl, stirring until sugar dissolves.
- Remove bacon from oven. Brush both sides of bacon with brown sugar mixture.
