My hubby and I will celebrate our 34th wedding anniversary this year. One of the most requested dishes over the years has been my pinto beans. I've added additional ingredients along the way to make these the best pinto beans recipe EVER! I hope you enjoy them as much as we do. Cooking with Love & Passion sw :)

1 lb dried pinto beans, soaked overnight & rinsed
4-5 oz cured hog jowl, cut in pieces
1 onion, chopped
1 small bell pepper, chopped
4 garlic cloves, chopped
1 Tbsp parsley stems, chopped
5 c water, cold
2 ham hocks
3/4 c bourbon, more if you wish
2 bay leaves
1/4 tsp black pepper
1/4 tsp red pepper flakes
1/2 tsp cumin
pinch brown sugar
smoked sea salt to taste

Steps:

  • 1. Sauté hog jowl in a dutch oven for 4-5 minutes, add onion, bell pepper, garlic, parsley stems in dutch oven until onions are translucent.
  • 2. Add water and ham hocks to dutch oven, boil for 1 hour until ham hocks are tender, remove and slice in pieces.
  • 3. Add ham hock pieces back to dutch oven with remaining ingredients. Bring to a boil, reduce heat and cook for 1 1/2 hours or until beans are tender. Serve with cornbread and a green salad.

I grew up in a household inspired by southern cooking. I made these one night for my husband and served them with cornbread and collard greens. It takes a while to cook, but you don't have to stand at the stove the entire time.

2 cups dried pinto beans
1 small red onion, sliced
1/2 large white onion, sliced
3 tablespoons garlic, minced
1 teaspoon dried basil
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke
fresh ground black pepper
salt, to taste
1/2 teaspoon paprika
1 teaspoon chili powder
2 ham hocks
water (adjustable)

Steps:

  • Soak beans in bowl for several hours or overnight. Rinse twice.
  • Place rinsed beans in large soup pan. Add sliced onion (both red and white), garlic, ham hocks, and basil to pan.
  • Cover beans with water.
  • Add Worcestershire, liquid smoke, paprika, chili powder, salt, and pepper.
  • Cook on low for 3-4 hours, adding water if necessary to keep beans covered.
  • Stir occasionally.
  • Discard ham hocks prior to serving.

Note: To speed up cooking of beans and reduce the gas beans produce, soak beans in cold water overnight or for three hours during the day. You can also use the ham hocks as your meat side dish. However, ham hocks are a high-fat food.

3 smoked ham hocks
2 lbs dried pinto beans
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon ground black pepper
1/2 teaspoon salt
2 teaspoons hot sauce
1/2 medium chopped onion

Steps:

  • Boil ham hocks on high heat for 45 minutes.
  • Add all seasonings except hot sauce and onion. Continue boiling for 20 minutes.
  • Add pinto beans, hot sauce, and onion. Boil on medium heat until beans are done to taste (usually I go for about 1 1/2 hours).
  • Serve with rice and a meat side dish. Tastes even better the 2nd day!

My dad made this ham for Christmas about 15 years ago, and we loved it. I haven't made a different ham since and haven't loved one as much.

1 (8 1/2 pound) cooked bone-in ham (shank end)
40 whole cloves
1 cup firmly packed brown sugar
¼ cup bourbon whiskey
1 ½ teaspoons freshly ground black pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove skin and excess fat from ham, leaving a fat layer about 1/4-inch thick. Score ham in a diamond pattern with a sharp knife. Push cloves into the center of the scored diamond shapes. Place ham with cut side down into a roasting pan.
  • Bake ham in the preheated oven until an instant-read meat thermometer inserted into the thickest part of the meat, not touching bone, reads 125 degrees F (52 degrees C), about 2 hours.
  • Combine brown sugar, whiskey, and black pepper in a bowl until glaze is smooth.
  • Raise oven temperature to 375 degrees F (190 degrees C).
  • Baste ham with 1/3 the whiskey glaze. Return to oven and bake until internal temperature reaches 140 degrees F (60 degrees C), basting ham with whiskey glaze every 10 minutes. Cover ham loosely with a tent of aluminum foil if ham browns too quickly.
  • Let ham rest for 15 minutes before carving.

1 (1 lb) bag pinto beans
10 baby carrots, chopped in half
2 stalks celery, chopped
3 garlic cloves, minced
4 tablespoons salt
1 tablespoon pepper
2 smoked ham hocks
1 (8 ounce) can chopped tomatoes
1/4 cup diced onion

Steps:

  • Soak beans overnight in water.
  • Drain and pick out all bad beans or particles.
  • Place beans in a stock pot with 4 cups of water.
  • Add ham hocks and bring to a boil.
  • Let beans and ham hocks boil for about 10 minutes and then turn down heat to medium.
  • Add carrots, garlic, tomatoes, onion and celery.
  • Cook for 4 hours on medium.
  • By this time the ham hocks should be tender enough to take the meat off of the bone.
  • Cut meat into little pieces the size of peas and return meat to soup.
  • Discard bones.
  • Add salt and pepper by measurement or to taste.
  • Cook an additional 30 minutes to an hour to ensure the softness of beans.
  • Enjoy!

2 pounds fully cooked boneless ham
1 thick boneless pork loin chop (8 ounces)
1/2 pound bacon strips
1 cup panko bread crumbs
1 cup 2% milk
2 large eggs, lightly beaten
Oil for frying
SAUCE:
1-1/2 cups packed brown sugar
1/2 cup white vinegar
1/2 cup bourbon
2 teaspoons spicy brown mustard

Steps:

  • Cut ham, pork chop and bacon into 1-in. pieces; arrange in a single layer in a foil-lined 15x10x1-in. pan. Freeze 30 minutes or until partially frozen., Preheat oven to 350°. Transfer meat to a food processor in batches; pulse until coarsely ground, 20-24 pulses. In a large bowl, combine bread crumbs, milk and eggs. Add meat mixture; mix lightly but thoroughly. Shape into 1-1/2-in. balls., In a large skillet, heat 1/4 in. oil over medium heat. Add ham balls in batches; cook 3-4 minutes or until cooked through, turning occasionally. Remove from pan; drain on paper towels., In a large bowl, whisk sauce ingredients; reserve 1 cup for serving. Add ham balls to sauce, a few at a time, allowing ham balls to soak 1-2 minutes. Transfer ham balls to a foil-lined 15x10x1-in. baking pan. Bake 15-20 minutes or until heated through, brushing occasionally with remaining sauce from soaking. Serve with reserved sauce.
