BOURBON-GLAZED HAM
Using a bone-in ham is important because bone intensifies the flavor of the meat. A bourbon-glazed ham is an Easter dinner classic. Each serving should include a bit of crust; its sweetness complements the saltiness of the meat.

- Preheat oven to 350 degrees. Trim all but 1/4 inch fat from the ham, and score remaining fat in 3/4-inch diamonds, just deep enough to reach the meat without cutting into it. Place ham, fat side up, on a rack in a roasting pan.
- In a small bowl, mix together brown sugar, mustard, and bourbon. Brush 1/4 of the glaze over the ham. Bake the ham, brushing with remaining glaze every 30 minutes, until heated through (140 degrees on a meat thermometer), about 2 hours.
- Let ham stand about 15 minutes before carving. Using a knife with a long blade, carve downward to the bone. Run the knife horizontally through the ham, along the top of the bone, to release the slices.

BOURBON BROWN SUGAR MUSTARD

- Combine bourbon, water and mustard seed in a small bowl. Mix to wet all seeds, and then allow to steep until nearly all of the liquid is absorbed, about 4 hours, or overnight. Alternatively, heat bourbon, water and seeds until mixture just comes to a boil; remove from heat and steep for about 2 hours.
- Prepare canner, jars & lids.
- Transfer soaked seeds to the bowl of a food processor; process until smooth, or leave grainy, as you prefer (my mini Cuisinart will not get the mustard entirely smooth). Add vinegar, mustard powder, sugar, and salt and process briefly to mix. Transfer to a medium saucepan.
- Over medium heat, stirring constantly, bring mustard to a boil; continue to boil mustard until it reduces to your desired thickness, remembering that it will thicken further upon cooling (I cooked mine for about 3 minutes).
- Taste and adjust seasonings (add additional water if you need to tinker with the flavor and the mustard is getting too thick).
- Fill hot jars to a generous 1/4-inch headspace (more like 1/2-inch), tamping down the mustard into the jar. Thoroughly bubble by passing the handle of a wooden spoon along the edges and middle of the jar. Wipe rims, affix lids and process in a boiling water bath for 10 minutes. Allow to rest for 5 minutes in the hot water prior to removing from the canner.

GRILLED BOURBON SKIRT STEAK
Here's another found recipe that I haven't tried but sounds great and I want to save. I love a good skirt steak and add the bourbon and spices and how can you go wrong. I'll be making this soon to see if it's as good as it sounds. Would be good with baked beans. Finally made this and LOVED it. I made two small changes - added a teaspoon of liquid smoke to increase that smokey flavor and a teaspoon of fresh, grated garlic as we love it. It was so easy and sooooo good. Try this and I don't think you'll be disappointed.

- In bowl, combine bourbon, brown sugar, soy sauce, Worcestershire, Tabasco, mustard and cornstarch, stir until sugar has dissolved.
- Place steak in bowl, pour marinade over meat, cover and marinate in fridge for at least 1 hour.
- Preheat grill to medium-high heat.
- Remove stak from marinate, place on grill.
- Cook, turning once, 3-5 minutes per side for medium-rare, or until done to your liking.
- Transfer steak to cutting board, cover loosely with aluminum foil and let rest for 5 minutes.
- Cut steak into thin slices, arrange on platter and serve.
BOURBON AND BROWN SUGAR MARINATED STEAK

- Prepare a medium-hot grill fire. Meanwhile, combine the soy sauce, bourbon, sugar, mustard, and hot sauce in a large zip-top bag. Seal and shake to combine the ingredients and dissolve the sugar. Add the steak to the bag, seal, massage to cover the steaks with marinade, and set aside for 15 to 20 minute at room temperature.
- When the grill is ready, remove the steak from the marinade and shake off any excess, but don't pat it dry. Reserve the marinade. Grill the steak until good sear marks appear, 3 to 4 minute With tongs, rotate the steak 90 degrees (to get a crosshatch of grill marks) and continue grilling until grill marks form and the edges are a little crisp, another 3 to 4 minute Flip the steak and grill the other side in the same way until the exterior is nicely seared and the steak is cooked to your liking, 10 to 12 minute total cooking time for medium rare. Let the steaks rest for about 5 minute.
- Meanwhile, pour the marinade into a small saucepan and boil over medium-high heat until syrupy, about 3 minute (watch carefully to prevent burning). For flank steak, slice the meat thinly across the grain. For strip steaks, slice thickly or serve in chunks. Serve with a drizzle of the sauce.

BOURBON MUSTARD CHICKEN

- Place chicken between 2 sheets of waxed paper; pound to 1/4" thickness, using a meat mallet or rolling pin.
- Place chicken in a shallow baking dish.
- Combine brown sugar, mustard, bourbon, green onions, salt, and Worcestershire sauce; stirring well.
- Brush mustard mixture evenly over both sides of chicken breast halves.
- Cover and marinate in frig 1 hour.
- Remove chicken from marinade, reserving marinade.
- Combine butter and oil in lg. skillet, and place over med-high heat. Saute chicken 3 to 4 mins. on each side or until done.
- Remove chicken to a serving platter, and keep warm. Drain and discard pan drippings.
- Add reserved marinade to a skillet; bring to a boil, stirring constantly.
- Pour sauce over chicken.
