Kids of all ages will love the layers of creamy yogurt, crunchy granola, banana slices and mandarin oranges in this dish. It sweetens the morning meal but also serves as a healthful dessert or after-school snack. "Spooned into clear parfait glasses, this yummy treat makes a pretty presentation," says Linda Franceschi of Eldred, New York.

2 cups (16 ounces) fat-free raspberry yogurt or flavored yogurt of your choice
1 cup reduced-fat granola cereal
2 medium firm bananas, sliced
1 can (15 ounces) mandarin oranges, drained

Steps:

  • In four parfait glasses or bowls, layer half of the yogurt, granola, bananas and oranges. Repeat layers. Serve immediately.

1 serving hot cooked oatmeal
3/4 cup chopped fresh fruit
1 scoop vanilla ice cream

Steps:

  • Place oatmeal in a serving bowl. (Note: Steelcut oatmeal is best for a hearty, chewy texture, but takes more time to make. If pressed for time, instant oatmeal works as well.)
  • Top oatmeal with fresh fruit. (Strawberries, bananas, blueberries, nectarines, mangoes, and raspberries all work well singly or combined together.)
  • Place 1 small scoop of ice cream on top of the fruit. Enjoy a most decadent breakfast.

I put this in my daughter's school lunch a couple of times a week. She loves it. The fruit and cottage cheese are good for her, and the sprinkles make her feel like she's eating a dessert rather than a healthy dish rich in protein, calcium, and vitamin C! I like this as a snack, but with cinnamon and sliced almonds instead of the sprinkles. Also great with a little wheat germ. If making to eat right away instead of packing for a lunch, use fresh or thawed blueberries. Blueberries can be thawed in the microwave for a few seconds at a time.

1/4-1/2 cup low fat cottage cheese
1/4 cup frozen blueberries
1/2 teaspoon candy sprinkles (I use the elongated thin ones(confetti sprinkles)

Steps:

  • Place cottage cheese in a bowl, or lidded container if to be packed for lunch.
  • Top with blueberries.
  • Add sprinkles to the top. Measurement is approximate. I just throw enough on that my daughter can see the color. I don't want to ruin a healthy dish by putting too many sugary sprinkles on it!

  • Repeat two more times to finish with a layer of ceral on top.
  • If you like top with a strawberry or berry of choice.
