2 large heads Boston lettuce
3 tablespoons Zinfandel vinegar or other good-quality red-wine vinegar (preferably "O" brand)
1 tablespoon finely chopped shallot
1/4 cup extra-virgin olive oil
1/4 cup walnut oil
1 cup walnut pieces, toasted
1/4 pound Stilton, crumbled or shaved (with a cheese plane)

Steps:

  • Quarter lettuce heads lengthwise, keeping stem ends attached. Carefully wash in cold water, then dry in a salad spinner.
  • Whisk together vinegar, shallot, 1/4 teaspoon salt, and 1/8 teaspoon pepper, then add oils in a slow stream, whisking until combined.
  • Spoon vinaigrette over lettuce wedges, then scatter with nuts and cheese.

1/2 head iceberg lettuce, cut into a wedge
1 cup grape tomatoes, cut into halves
1/2 cup red onion, chopped
6 slices cooked bacon, crumbled
1/2 cup blue cheese, crumbled
1/2 cup pecan pieces, toasted
3/4 cup mayonnaise
3/4 cup buttermilk
1/2 cup blue cheese, crumbled
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper

Steps:

  • Place lettuce wedge on a salad plate. Add grape tomato halves and onion on top of wedge.
  • Sprinkle with crumbled bacon, crumbled blue cheese and toasted pecan pieces.
  • Dressing: Mix ingredients and allow to sit for 30 minutes or more for flavors to meld. Drizzle on top of salad.
  • Enjoy!

1 teaspoon vegetable oil
1-1/2 cups mayonnaise
1/2 cup chopped Italian stewed tomatoes
1/4 cup tomato puree
3 tablespoons red wine vinegar
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1 medium head iceberg lettuce
1 cup chopped walnuts, toasted

Steps:

  • In a small skillet, saute garlic in oil until tender. In a bowl, combine the garlic, mayonnaise, tomatoes, tomato puree, vinegar, salt, cayenne and pepper. Cut lettuce into eight wedges; drizzle with desired amount of dressing. Sprinkle with walnuts. Refrigerate leftover dressing.

1 tablespoon white wine vinegar
Kosher salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 large head Boston or other butter lettuce, cored, cleaned and dried (about 7 cups)

Steps:

  • Combine the vinegar, salt, and pepper in a small bowl and mix until the salt dissolves. Drizzle in the oil as you stir, mixing until the vinegar and oil comes together in a smooth dressing.
  • Tear the lettuce leaves into pieces and put all but a handful in a small salad bowl, then season with salt and pepper.
  • Pour most of the vinaigrette over the lettuce (reserve a little to avoid overdressing) and toss, mixing thoroughly. Add the reserved lettuce, toss again, and then add more vinaigrette if the salad seems too dry. Serve immediately.

  • In a bowl, mix the vinegar, maple syrup, and salt. Gradually whisk in the peant or vegetable oil and the walnut oil, if using. The dressing can also be made in a blender up to this point. Stir in the chopped walnuts.
  • FOR THE GREENS:.
  • In a salad bowl, combine the spinach, lettuce and grapefruit.
