BOSTON CREAM PIE

1 cup heavy cream, boiling
1 cup plus 2 tablespoons sifted cake flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1/4 cup cooking oil
2 egg yolks
1 teaspoon vanilla
2 egg whites
1/4 teaspoon cream of tartar
Pastry cream, recipe follows
Ganache, recipe follows
2 cups whole, 2 percent fat, or 1 percent fat milk
1/2 vanilla bean, split lengthwise, seeds scraped out
6 egg yolks
2/3 cup granulated sugar
1/4 cup cornstarch
1 tablespoon unsalted butter
8 ounces semisweet chocolate

Steps:

  • Preheat oven to 350 degrees. In a medium mixing bowl combine flour, sugar, baking powder, and salt. Make a well in the center of the flour mixture. Add milk, oil, egg yolks, and vanilla. Beat with an electric mixer on low to medium speed until combined. Beat an additional 3 minutes on high speed and set aside.
  • In a large mixing bowl, beat egg whites and cream of tartar on medium to high speed until soft peaks form. Pour the egg yolk mixture over the egg white mixture and fold in. Gently pour the batter into a 9-inch greased pie pan. Bake for 25 to 30 minutes or until the top springs back when lightly touched. Invert the pan onto a wire rack. Cool completely.
  • Pastry Cream Filling: In a medium saucepan, heat the milk and vanilla bean to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 to 15 minutes. In a bowl, whisk the egg yolks and granulated sugar until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in 1/4 cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan.
  • Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling. Remove from the heat and stir in the butter. Let cool slightly. Cover with plastic wrap, lightly pressing the plastic against the surface to prevent a skin from forming. Chill at least 2 hours or until ready to serve. (The custard can be made up to 24 hours in advance. Refrigerate until 1 hour before using.)
  • Ganache: In a medium bowl, pour the boiling cream over the chopped chocolate and stir until melted.
  • To assemble pie, remove the cake from the pan. Cut the cake in half horizontally. Place bottom layer on a serving plate or board, and spread with the pastry cream. Top with second cake layer. Pour chocolate ganache over and down the sides of the cake. Store in refrigerator.

2 1/2 teaspoons active dry yeast
2 tablespoons warm water
1/4 cup sugar, plus a pinch
3 1/2 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons kosher salt
1/2 teaspoon grated nutmeg
1 cup buttermilk, at room temperature
1/4 cup shortening, at room temperature
1 large egg
1 teaspoon pure vanilla extract
Nonstick cooking spray
Vegetable oil, for frying
1 1/2 cups bittersweet chocolate chips
6 tablespoons unsalted butter, cut into pieces
1/8 teaspoon kosher salt
2 tablespoons honey
1/2 teaspoon pure vanilla extract
2 cups instant vanilla pudding made according to the package directions, placed into a piping bag fitted with a Bismarck tip (see Cook's Note)
4 tablespoons rainbow sprinkles

Steps:

  • For the donuts: Sprinkle the yeast over the 2 tablespoons warm water in a liquid measuring cup. Add the pinch of sugar and set aside until bubbly, about 5 minutes.
  • Combine the remaining 1/4 cup sugar with the flour, salt, nutmeg, buttermilk, shortening, egg, vanilla, 150 grams (2/3 cup) water and yeast mixture in the bowl of a stand mixer fitted with the dough hook. Beat on medium-high speed until a smooth ball of dough forms around the hook and only slightly sticks to the bottom of the bowl, 4 to 6 minutes. Transfer the dough to a large bowl lightly sprayed with cooking spray; cover with a kitchen towel or plastic wrap and let rise at room temperature until doubled in size, about 1 1/2 hours.
  • Line a baking sheet with parchment paper and lightly sprinkle with flour.
  • On a lightly floured surface, roll the dough out to a 9-by-11-inch rectangle that's 1/2 to 3/4 inch thick. Use a 3 1/2-inch round cutter to cut out 12 donuts. Transfer the donuts to the prepared baking sheet, cover with a towel, wrap with plastic wrap and let rise until they puff slightly, about 20 minutes.
  • For the chocolate glaze: In a double boiler over hot, but not boiling, water, combine the chocolate chips, butter and salt. Let mixture gently heat until the chips are melted. Remove from the heat and whisk in the honey and vanilla until smooth. Set aside.
  • To fry the donuts: Heat 6 inches of oil in a large heavy pot fitted with a candy thermometer over medium-high heat until the oil reaches 350 to 375 degrees. Fry the donuts in batches, flipping halfway through, until golden brown, 1 to 2 minutes per side. Transfer the donuts to a wire rack to cool for 2 minutes.
  • To fill and decorate the donuts: Once the donuts are able to be handled, but still warm, fill them with the vanilla pudding then dip the tops in the chocolate glaze. Sprinkle with the sprinkles and enjoy!

1 1/4 cups cake flour
1 teaspoon baking powder
1/4 teaspoon salt
4 large eggs, at room temperature
1 cup sugar
1/2 cup whole milk
1/3 cup vegetable oil
1 1/2 teaspoons vanilla extract
1 1/2 cups whole milk
2 teaspoons vanilla extract
2 large eggs plus 4 egg yolks
1/2 cup sugar
1/4 cup cornstarch
Pinch of salt
4 ounces semisweet chocolate, finely chopped
1/2 cup heavy cream
1 teaspoon vanilla extract
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch-round cake pan. Fold a sheet of parchment paper into a square, then fold it in half into a triangle. Fold the triangle in half. Put the tip of the triangle in the center of the pan; trim the parchment, following the curve of the pan. Unfold the parchment circle and line the pan.
  • Make the cake: Sift the flour, baking powder and salt into a large bowl. Beat the eggs and sugar in a stand mixer fitted with the whisk attachment on high speed until pale and tripled in volume, about 15 minutes. Gently fold in the flour mixture in two additions using a rubber spatula, scraping down the bowl.
  • Add the milk, vegetable oil and vanilla and beat with the mixer until combined. Pour the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Transfer the pan to a rack and let cool 10 minutes, then invert the cake onto the rack. Invert again and cool completely.
  • Meanwhile, make the pudding: Heat the milk and vanilla in a medium saucepan over medium heat (do not boil). Whisk the whole eggs, egg yolks and sugar in a large bowl until light and fluffy. Add the cornstarch and salt and whisk vigorously until no lumps remain. Whisk about 1/4 cup of the hot milk mixture into the egg mixture, then gradually whisk in the remaining hot milk mixture.
  • Pour the egg-milk mixture into the saucepan and cook over low heat, whisking constantly, until thick and pudding-like, 10 to 15 minutes. Strain through a fine-mesh sieve into a bowl, using a rubber spatula to push the pudding through. Let cool slightly, stirring occasionally. Press plastic wrap directly onto the surface of the pudding and refrigerate at least 2 hours.
  • Stick toothpicks around the side of the cake as a guide for cutting two even layers, then slice the cake in half horizontally with a long serrated knife.
  • Place the bottom half of the cake cut-side up on a platter. Top with the pudding, spreading it to about 1/4 inch from the edge. Carefully place the other cake half on top, cut-side down, pressing gently.
  • Make the glaze: Heat the chocolate, cream, vanilla and salt in a saucepan over medium-low heat, stirring, until melted and smooth, about 2 minutes. Let cool about 5 minutes, then pour over the cake and smooth with an offset spatula. Refrigerate at least 30 minutes or up to 4 hours before serving.

This recipe was adopted by me in September 2006 in a whirlwind zaar adoption. I haven't made this recipe yet, but as soon as I do I will update the recipe description!

4 tablespoons unsalted butter, more for the pan
2/3 cup coarsely chopped pecan pieces
2 cups sugar
1 pinch salt
1/2 cup light Karo syrup
1/4 cup half-and-half
1/4 cup whipping cream
3/4 teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Butter an 8x8-inch baking pan.
  • Line the pan with a piece of parchment large enough to hang over two sides.
  • Butter the paper, too, and tuck it flat against the pan.
  • Put the chopped pecan pieces in a handy spot where you'll be working.
  • Combine the sugar, salt, Karo syrup, half-and-half, cream, and butter in a heavy-based 3-qt pan (do not use a smaller pan), stirring with a wooden spoon over low heat until the sugar is completely dissolved.
  • This can take a while, and it's hard to see; you should feel the texture (rub a little between your fingers or run your finger along the mixture clinging to the spoon) to be sure all the sugar is dissolved.
  • Turn the heat to medium and cook, stirring, until the mixture foams to a boil.
  • Add the baking soda.
  • Lower the heat and stir like mad.
  • The mixture will double in volume and then gradually subside and begin to take on a golden hue.
  • After the mixture settles a bit, put in a warmed candy thermometer.
  • Continue to stir constantly, scraping the sides, and cook over medium-low heat until the thermometer registers just 240°F.
  • Watch very carefully, as the thermometer will hover at 239° for a while and then move up.
  • You must remove the mixture before it passes 240°F.
  • Remove the pot from the heat and take out the thermometer.
  • Continue to stir quickly.
  • The candy will look like a loose caramel sauce.
  • Add the vanilla (watch out, it may sputter) and stir carefully to incorporate.
  • Add the pecans and continue stirring quickly.
  • Don't take your eyes off the mixture at this point.
  • Watch and feel it as it begins to thicken, lighten in color, and become harder to stir.
  • When it has thickened enough to leave a path on the bottom of the pan while you're stirring, it's just about ready.
  • The moment you notice that the mixture is just beginning to lose its glossy shine, turn it out into the buttered pan.
  • Don't wait until the mixture looks completely matte or it will be too dry when you try to cut it.
  • If you stop stirring at the right moment, the mixture will firm up almost the second it hits the pan.
  • Too soon, it will never be anything more than caramel (although very good caramel); too long, it will harden in the pot.

OUTRAGEOUS BOSTON CREAM PIE CUPCAKES!



Outrageous Boston Cream Pie Cupcakes! image

Sometimes when a craving hits, you don't have time to make the full blown version of an outrageous Boston-Cream-Pie ... so this is the next best thing! My son recently craving my Boston Cream Cake settled for this a less time consuming version. Although you start with a cake mix for the cupcakes, the pastry cream and ganache make these little baby's a perfect individual dessert to serve! Family Favorite ;)

18 1/2 ounces butter recipe cake mix
1 (3 ounce) box French vanilla instant pudding
1 cup half-and-half
1 cup heavy whipping cream
2 teaspoons vanilla extract
1/4 cup powdered sugar
1 cup heavy cream
1/4 cup light corn syrup
8 ounces semisweet chocolate, finely chopped
1/2 teaspoon vanilla extract

Steps:

  • Prepare yellow cupcakes as directed on box.
  • In the meantime, prepare the vanilla custard filling by combining the instant pudding mix the half and half in a medium bowl. In a stand mixer using the whip attachment, combine cream, vanilla and powdered sugar and whip at medium speed until soft peaks form. Gently fold in the pudding mixture to the whipped cream until it is fully incorporated and smooth. Place filling into a pastry bag fitted with a #21 (or standard star) tip.
  • When the cupcakes have cooled, place the tip of the pastry bag inside each cupcake and pipe in filling, being careful not to overfill.
  • When all the cupcakes have been filled, prepare your ganache.
  • Combine the heavy cream and corn syrup in a medium saucepan over medium heat and bring to a simmer. Remove from the heat and add the chocolate; cover and let stand for 8 minutes. (If the chocolate has not completely melted, return the saucepan to low heat and stir constantly until melted.) Stir in the vanilla extract very gently until smooth. Cool the glaze until tepid so that a spoonful drizzled back into the pan mounds slightly. (You can refrigerate the glaze to speed up this process, stirring every few minutes to ensure even cooling.).
  • Dip the tops of the cupcakes in the ganache. Place glazed cupcakes on a cooling rack to dry. Be sure to place wax paper or cookie sheet under rack as the ganache will drip.

This comes out of a 1960s cookbook from rural New Zealand well before fizzy drinks were everyday beverages. I haven't made this but include it out of interest.

1 lemon, juice of
1 ounce tartaric
2 egg whites, well beaten

Steps:

  • Mix the sugar and water and then add the lemon and tartaric acid.
  • Strain and when nearly cold add the beaten egg whites.
  • Bottle in sterilized bottles.
  • When required put into a tumbler a small amount of baking soda and mix with water, then pour in 2 tablespoons of Boston cream.

1/4 cup warm water
2 tablespoons instant yeast
1 cup warm milk
1/4 cup vegetable shortening
2 eggs

3 1/2-4 cups bread flour
1/4 cup sugar
3 tablespoons all-purpose flour
3 egg yolks
1 cup milk, plus
2 tablespoons milk
1 tablespoon unsalted butter
1/2 teaspoon pure vanilla extract
1 tablespoon unsalted butter
2 ounces semisweet chocolate, chopped
1 1/2 cups icing sugar
1/2 teaspoon pure vanilla extract
1/3 cup hot water

Steps:

  • For the dough, hand whisk the water and yeast together in the bowl of an electric mixer and let stand for 2 to 3 minutes to dissolve the yeast.
  • Whisk in the milk and shortening.
  • Stir in the eggs, sugar, salt and 3 cups of the flour.
  • Mix to make a soft dough.
  • Knead with the dough hook on the lowest speed of the mixer for 8 to 10 minutes, gradually adding more flour as required to form a soft but elastic dough.
  • Place the dough in a lightly greased bowl, cover the bowl with a damp cloth and let rise for 45 minutes or until doubled.
  • For the filling, whisk the sugar, flour, and egg yolks together in a bowl.
  • In a small saucepan, bring the milk to a boil.
  • Stir 2 TBS of the hot milk into the eggyolk mixture to temper the yolks and prevent curdling.
  • Stir the egg mixture into the milk and stir constantly until thickened and beginning to boil gently.
  • Remove from heat.
  • Stir in the butter and vanilla and let cool.
  • Place in a bowl, covering with plastic wrap to help prevent a skin from forming.
  • Put in the fridge until needed.
  • Turn the dough onto a lightly floured surface.
  • Pinch off pieces and form into small balls, about the size of golf balls.
  • Cover and let rise for 25 minutes.
  • In a dutch oven heat 4 inches of oil to 375*F.
  • Add the doughnuts a few at a time and fry for 30 to 40 seconds, until deep brown on first side.
  • Turn and fry on the second side for 15 to 30 seconds.
  • Using a slotted spoon, transfer to paper towels to drain and let cool.
  • Whisk the custard to smooth and fluff it.
  • Put the custard in a pastry bag fitted with a large plain tip.
  • Split each cooled doughnut in half and pipe or spoon in some custard.
  • For the glaze, melt the butter and chocolate in a double boiler over barely simmering water.
  • Add the sugar and vanilla, stirring until smooth.
  • Add enough water to make a thin glaze.
  • Let cool for 1 minute, then drizzle over the doughnuts.
  • If the glaze gets too stiff, add more hot water to make it workable again.
  • Enjoy!
