A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

1 pound dry navy beans
6 cups water
1 pinch baking soda
1 bay leaf
6 slices bacon, cut into 1/2-inch pieces
1 yellow onion, diced
⅓ cup molasses
¼ cup packed dark brown sugar
1 teaspoon dry mustard powder
1 ½ teaspoons salt
½ teaspoon freshly ground black pepper, or to taste

Steps:

  • Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
  • Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
  • Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.

Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

8 ounces thick-cut bacon, cut into 1/2-inch strips
1 large yellow onion, diced
3 cloves garlic, minced
1 teaspoon paprika
One 8-ounce can tomato sauce
1/3 cup molasses
1/4 cup bourbon
2 tablespoons packed light brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
Kosher salt and freshly ground black pepper
1 pound dried navy beans, picked through

Steps:

  • Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
  • Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
  • Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.

3 tablespoons molasses
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon mustard powder

1 15-ounce can navy beans, undrained
2 hamburger buns or 3 slices white sandwich bread, torn into pieces

Steps:

  • Preheat the oven to 375 degrees F. Cook the pancetta and about two-thirds of the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer the bacon and pancetta to a bowl using a slotted spoon. Reserve the drippings in the skillet.
  • Add the onion to the skillet and cook, stirring occasionally, until soft and golden, about 8 minutes. Add the ginger, garlic and chili powder and cook, stirring, 1 minute. Add the tomatoes and their juice, the molasses, Worcestershire sauce, vinegar, mustard powder, 1/2 teaspoon salt, and pepper to taste. Increase the heat to medium high, bring to a simmer and cook until slightly thickened, about 5 minutes. Add the pinto beans, then add the navy beans and their liquid and return to a simmer. Stir in the pancetta-bacon mixture. Transfer to a 2-quart baking dish.
  • Pulse the buns with the remaining uncooked bacon in a food processor until finely ground. Sprinkle the crumbs evenly over the bean mixture. Cover and bake 45 minutes, then uncover and bake until the crumbs are golden brown, about 20 more minutes.

Squat, glazed ceramic bean pots lurk in cabinets all over New England. They're traditional for Boston baked beans, but enameled cast iron is faster. Beans in cast iron can be brought to a boil over a burner before the dish goes into the oven; this saves about an hour.

1 pound dried navy or Great Northern beans
1/2 pound salt pork or bacon, rind removed, cut into 1/4-inch dice
1 onion, chopped
4 garlic cloves, peeled
1/2 cup dark molasses or maple syrup, preferably Grade B
1/4 cup ketchup
3 tablespoons mustard powder
1 tablespoon Worcestershire sauce
1 teaspoon pepper, plus more to taste
1 thyme branch (optional)
1 bay leaf (optional)
1 teaspoon salt, plus more to taste
1 tablespoon cider vinegar, plus more to taste

Steps:

  • Pick through the beans for stones, rinse them thoroughly and soak in water overnight. (Leave soaking until ready to cook; you'll need the water.)
  • Heat oven to 300 degrees. Place a Dutch oven, 5-quart size or larger, over low heat. Add the salt pork or bacon and fry until crisp, 12 to 15 minutes. Raise heat to medium and stir in the onion. Cook until onion is translucent, stirring occasionally, 5 to 8 minutes.
  • Add the beans to the pan along with enough of the soaking liquid to cover them by 1/2 inch, adding fresh water if needed. Add the garlic cloves, molasses or maple syrup, ketchup, mustard powder, Worcestershire sauce, 1 teaspoon pepper and the thyme branch and bay leaf, if using. Stir well and bring to a boil. Cover the pot and put in oven.
  • Check the liquid level in the pot every hour or so, and add hot water as needed to barely cover the beans. Cook until beans are very soft but not falling apart, 2 to 3 hours. Remove from oven. Stir in 1 teaspoon salt and 1 tablespoon vinegar; let sit at room temperature for 30 minutes, then taste a bean and some liquid, adding more salt, pepper or vinegar, if you like. Serve, or cool completely and reheat.

1 tablespoon Worcestershire sauce
1 tablespoon minced garlic (2 to 3 cloves)
3 cans (each 15 ounces) navy beans or small white beans, rinsed and drained
Kosher salt and freshly ground pepper
3 sprigs thyme

Steps:

  • Preheat oven to 375 degrees.
  • In a 2-quart Dutch oven, cook bacon over medium, flipping occasionally, until some of the fat is rendered and bacon is browned in places, about 7 minutes. Transfer to a plate.
  • In a large bowl, combine maple syrup, mustard, ketchup, brown sugar, chicken broth, Worcestershire, and garlic. Stir in beans. Season with 1 1/2 teaspoons salt and 1/2 teaspoon pepper.

1/2 cup unsulfured molasses
1 tablespoon plus 1 teaspoon dry mustard
1/2 cup packed dark-brown sugar
4 canned plum tomatoes, seeded and crushed
2 dried bay leaves
1 tablespoon plus 1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 large onion (about 1 pound), peeled, halved
12 whole cloves
12 ounces salt pork

Steps:

  • Soak the beans in cold water overnight in a large container. Drain in a colander.
  • Heat oven to 300 degrees. In a small saucepan, combine molasses, mustard, brown sugar, tomatoes, bay leaves, salt, pepper, and 5 cups water. Bring to a boil, and whisk until the sugar has dissolved. Stud the onion halves with the cloves, and place in the bottom of a terra-cotta bean pot or Dutch oven.
  • Score the salt pork 1/4 inch deep 1 inch apart, and slice into two even pieces. Transfer to the bean pot. Add the soaked beans. Pour the molasses mixture over beans, stir, and cover. The liquid should cover the beans by 1/2 inch. Add more water if necessary.
  • Transfer to oven to bake, without stirring, until the beans are tender and the liquid has thickened, about 6 hours. Check the beans every 45 minutes, adding more hot water if necessary to keep beans slightly soupy at all times. For the last 50 to 60 minutes of cooking, uncover beans, and, using tongs or a long fork, pull the pork to the surface. Remove from oven, and adjust the seasoning with salt and pepper, if necessary. Serve.

1 onion, diced
¼ cup yellow mustard
¾ cup ketchup

  • Preheat the oven to 350 degrees F (175 degrees C). Cook bacon in a large skillet or in the microwave until much of the grease has been released, but the bacon is still flexible. Drain on paper towels and set aside.

  • Do this a day before: place the beans in a large bowl.

  • The next day drain the beans very well in a colander; set aside.
  • Set oven to 350 degrees.
  • In a large oven-proof Dutch oven cook the bacon pieces until crisp (about 7-8 minutes).
  • Add in well-drained beans and all the remaining ingredients; mix well to combine and bring to a boil on top of the stove.
  • Transfer the pot to the oven.
  • Bake uncovered until beans are tender and the liquid thickens, stirring occasionally (about 3-1/2 - 4 hours).

1 large sweet onion (, thinly sliced)

4 tablespoons pure maple syrup
2 tablespoons ground mustard seeds
1 tablespoon fine salt
2 teaspoons black pepper (, freshly ground)

Steps:

  • Preheat the oven to 250 F (120°C).
  • Spread the onion in an even layer on the bottom of a Dutch oven or heavy cast iron pot (6 quarts / 6 liters).
  • Spread the salt pork over the onion, then the beans.
  • In a large bowl, whisk together the molasses, brown sugar, maple syrup, ground mustard seeds, salt, pepper and water.
  • Gently pour this mixture over the beans.
  • Place the pot on the heat and bring to a boil over medium to high heat.
  • Cover the pot and place it on a rack in the middle of the oven.
  • Bake for about 4 hours or until the beans are tender, stirring once after 2 hours.
  • Remove lid and continue cooking until liquid has thickened to a syrupy consistency, about 1½ to 2 hours longer.

1 (1 lb) package white pea beans
4 -8 ounces salt pork, with as much lean as possible in it
1/2 cup molasses
2 teaspoons prepared yellow mustard
1 -3 teaspoon salt (depends upon how salty you like things)
1/2 teaspoon pepper
1/4 cup catsup

Steps:

  • Wash the beans and pick out any bad ones.
  • Put beans in a 3- or 4-quart pot and cover well with water.
  • Simmer (NOT boil) for about an hour; check occasionally to be sure water doesn't cook away.
  • Drain beans and rinse.
  • Return to pot.
  • Mix together remaining ingredients (except the salt pork) and stir into beans, together with enough water to cover beans well.
  • Put beans into a stoneware pot of some kind. A real beanpot, the kind with the two little handles and the narrow neck, is best. Otherwise, any stoneware pot that holds about 3 quarts and has a well-fitting cover will do. They will not taste as good baked in metal, or even pyrex.
  • Cut the salt pork into two or three pieces and add to the pot; push pieces down into the beans somewhat.
  • Bake at 300 degrees for 6 to 8 hours.
  • Check occasionally, and if top is dry, add more water.
  • If you want to, you can put some hot dogs or rope sausage such as Hillshire Farms beef sausage in on top of the beans for the last hour or so of baking. The meat cooks at the same time as the beans, and picks up their flavor.
  • The right thing to serve with these beans is, of course, Boston Brown Bread, for which I have noticed a couple of recipes here on the Zaar.
  • There are two ways to cut down on the time a bit. One is to simmer the beans about 20 minutes longer and then bake them for only about 3 hours. Also, after simmering, you can put the beans in a crockpot. That takes longer-figure about 18 hours to be sure that the beans won't be crunchy-but they can be left unattended.
