FRIED FISH FILETS - CATFISH, TALAPIA
I worked at a hospital for years and the cafeteria served crispy fried catfish nearly every Friday. I asked the manager for the recipe.. She just gave me the basics.... cornmeal, flour, salt, black pepper and paprika...dip in milk and deep fry. The breading is what makes it taste so good.

Steps:
- Combine breading ingredients in gallon size ziplock bag. Shake to mix together well.
- Melt shortening or oil in skillet until hot.
- Place filets in milk. Remove and salt both sides, according to taste.
- Place 2-3 filets in bag and shake until coated. Remove from bag and dip again in milk.
- Place fish in ziplock bag for a second coating. Repeat this process for remaining pieces.
- Fry 3 pieces of fish in hot oil (iron skillet) for approximately 6-7 minutes on each side until done and golden brown. Repeat with remaining filets.
PAN FRIED TILAPIA
Steps:
- Heat oven to 300 degrees F.
- In a shallow baking dish combine flour, seafood seasoning, salt and pepper. Add the tilapia and lightly coat each side.
- Heat oil in a large skillet over medium-high heat. Shake off any excess seasoned flour and place in the skillet. Brown on both sides, about 2 to 3 minutes per side. Place tilapia on a baking sheet that is lined with a paper grocery bag or paper towels and keep warm in the oven while you prepare the sauce.
- Turn down the heat to the pan the tilapia was cooked to low and add the butter. Once the butter is melted, add the garlic, lemon juice and parsley and saute for 2 minutes. Place the fillets on serving plates or a platter, top with the sauce and serve.
DEEP-FRIED TILAPIA
Steps:
- Season fillets with salt and pepper. Dust with 1/3 cup of flour.
- Beat buttermilk and egg in a bowl. Combine remaining flour, cornmeal, seafood seasoning, baking powder, and baking soda in another bowl. Dip all flour-dusted fillets into egg mixture, then into seasoned flour mixture.
- Heat oil over medium-high heat in a large frying pan or deep fryer. Fry fillets, working in batches if needed, until golden, about 2 minutes on each side. Season again with salt as soon as your take them out of the pan or fryer.
