Boneless Chicken Thigh Recipe (Family Favorite) image

8 chicken thighs ((boneless and skinless))
1 Tbsp low sodium soy sauce
1 Tbsp sesame oil
4 cloves garlic ((pressed, or 1 Tbsp garlic powder))
1 tsp salt
1 tsp freshly ground black pepper ((plus more to taste))
1/4 cup green onions ((cut into thin rounds, plus more for garnish))
1/4 cup Italian parsley ((finely chopped, plus more for garnish))

Steps:

  • Trim fat from chicken thighs. Place the thighs and the rest of the ingredients in a large bowl and mix thoroughly, making sure that chicken thighs are covered with oil and spices really well.
  • Cover the bowl with a plastic wrap and refrigerate for at least 30 minutes. If you are in a rush, you may skip this step, but the chicken will be more flavorful if you let it marinate in oil and spices.
  • Preheat a large skillet with a tablespoon of butter over medium-high heat. We find that a non-stick skillet works better if you are after a nice brown color but a cast iron or copper pan will work as well.
  • Place the chicken thighs on the skillet, one at a time, making sure they are not folded and ensuring that they lay flat on the skillet. Sear chicken thighs for 1 minute or so per side, until nicely browned.
  • Reduce heat to medium and continue cooking for another 4 minutes, flipping chicken thighs twice during the process.
  • Reduce heat to medium-low, cover the skillet with a lid and continue cooking for another 3-4 minutes, until fully done (internal temperature 165 F).
  • Serve with your favorite side dish. Sprinkle with chopped green onions and Italian parsley (optional).

1/3 cup honey
1/3 cup ketchup
1/3 cup low-sodium soy sauce

One 1-inch piece ginger, peeled and minced

Steps:

  • Coat the insert of a 6-quart slow cooker with cooking spray and add the chicken thighs. In a glass measuring cup, whisk together the honey, ketchup, soy sauce, oregano, pepper flakes, garlic and ginger and pour over the chicken. Cover and cook on low until the chicken is cooked through and tender, 5 to 6 hours. Turn off the heat, uncover and let rest for about 10 minutes before serving. The chicken and sauce can be served as-is or, for a thicker sauce, remove the chicken and set aside, covered, to keep warm, then turn the slow cooker to high. Stir the cornstarch and 2 tablespoons cold water together until it resembles heavy cream. Pour the mixture into the sauce, cover and cook until the sauce is thick and bubbling, about 30 minutes. (The mixture must come to a boil to activate the starch and thicken the sauce.) Return the chicken back to the sauce and heat the chicken through, about 5 minutes.
  • Transfer the chicken and sauce to a platter, sprinkle with the sesame seeds and scallions and serve hot with rice.

1 pound (450g) green beans
3 tbsp divided butter
4 minced garlic cloves
1 tsp paprika

1/2 cup (125ml) chicken stock

Juice of 1/2 lemon + lemon slices
1/2 cup fresh chopped parsley
1 tbsp hot sauce

Steps:

  • Add the dried herbs and spices to a small bowl and mix.
  • Toss the chicken thighs in the spice mixture until fully coated and set this aside to marinate while you prepare the green beans.
  • Lay the beans out evenly into a microwaveable dish and cover with ½ cup (or 125ml) water and cook in the microwave for around 8-10 minutes. They should still have a good bite to them but cooked about 80% of the way.
  • Melt 2 tablespoons of the butter in a large skillet and place the chicken thighs in once the butter is starting to bubble and froth.
  • Cook for around 5-6 minutes on either side or until you cut into the chicken and the juices run clear.
  • Remove the chicken thighs from the skillet and transfer to a plate

  • Preheat oven to 425F.

1 large shallot, finely chopped

  • Smoke chicken thighs, maintaining temperature inside smoker, until a thermometer inserted into the thickest portion registers 165 degrees F (74 degrees C), about 1 hour 45 minutes to 2 hours, brushing chicken thighs with reserved sauce every 15 minutes after the first hour of smoking.
