BOMBAY DUCK CURRY

This is a simple recipe which I learnt from Dad. Bombay Duck is a delicate fish which is popularly deep fried. This recipe is a Bengali version of the Bombay Duck curry, lightly spiced and easy to cook. Tastes great with piping hot rice.

8 Bombay duck, fish cut into 2 pieces each (Bombil)
10 garlic cloves, finely chopped
1 inch gingerroot, finely chopped
2 green chilies, coarsely ground
2 red onions, sliced thinly (medium sized)
1 teaspoon cumin seed, for seasoning
4 green cardamoms
1 cinnamon stick
1 bay leaf
2 whole dried red chilies
3 tablespoons mustard oil
salt, as required
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon red chili pepper
coriander, finely chopped for garnishing

Steps:

  • Wash, pat dry and apply salt (1 tsp) and turmeric (1 tsp) to the fish pieces and keep aside for 15 minutes.
  • Meanwhile, heat mustard oil in a flat non-stick girdle or deep pan. When smoking, add dried red chillies, whole spices, cumin seeds. Let splutter. Add sliced onion. Cook for 2 minutes Add ginger-garlic- green chilly paste/ mix. Fry well for 2 minutes in high flame. Add the spice powders and 4 tbspn of water to cook the spices.
  • Move the spice mix to the side of the pan. Add the fish pieces to the same pan, side by side. Reduce flame to medium, and allow the fish to cook in its juices for 5 minutes.
  • With a spoon, spread the cooked spice mix over the fish, add a cup of water. Let the fish cook in the gravy for 5 minutes Since this fish is delicate, take care not to stir too much so that the pieces remain intact.
  • You may add 1 tsp of lemon juice (optional).
  • Garnish with chopped coriander leaves.
  • Remove from flame. Serve hot.
  • Tastes best with rice.

Found this in an old cookbook I borrowed from a friend Around the world in 180 ways. Simply delicious, great for those who aren't too keen on chilli powder, as you can add as much or as little as you like!

450 g chicken, diced
2 onions, diced
2 garlic cloves, minced
2 teaspoons green chilies, chopped
1 teaspoon fresh ginger, grated
2 teaspoons ground coriander
1/2 teaspoon ground cumin
1 teaspoon ground turmeric
1 -2 teaspoon chili powder
1 (400 g) can chopped tomatoes
1/2 cup coconut cream

Steps:

  • Heat a non-stick pan over a medium high heat and use a little oil, or cooking spray to brown chicken. Remove from pan.
  • In same pan cook onions until soft, add garlic, chillies, ginger and spices for 11 minute, or until fragrant.
  • Return chicken to pan and stir to coat well in mixture. Add tomatoes and simmer gently for 30 minutes, or until chicken is tender.
  • Stir in coconut cream until heated through.

BEEF BOMBAY CURRY

This recipe comes from a Dutch language curry cookbook I picked up somewhere along the way. The key is to start off with nice beefsteak, the tenderest cut that you can afford.

2 lbs beef steaks, cut in cubes (i.e., round or london broil)
1 tablespoon oil
2 onions, chopped
2 cloves garlic, minced fine
2 green chili peppers, minced fine
1 tablespoon fresh grated ginger
1 1/2 teaspoons turmeric
1 teaspoon cumin powder
1 tablespoon coriander powder
1 teaspoon salt
1 teaspoon chili powder
1 (14 ounce) can chopped tomatoes, with their liquid
1 cup coconut milk

Steps:

  • Heat the oil in a large frying pan.
  • Add the onions and cook till they soften.
  • In a small bowl or coffee cup, combine the turmeric, cumin, coriander, and chilipowder.
  • Add these spices and the garlic, chilipeppers and ginger to the onions, and mix well.
  • Cook for another minute.
  • Add the cubed beef and cook until it is well browned and completed covered by the spice mixture.
  • Add the salt and the tomatoes.
  • Allow to cook at a slow simmer, covered, until the beef is cooked through and tender.
  • This make take 1 to 1 1/2 hours, depending on the tenderness of the original beef.
  • Add the coconut milk and stir well.
  • Simmer uncovered for 5 minutes, or until sauce slightly thickens.
  • Serve with rice.

A delicious curry where the rich flavours of the infused spices really make this curry stand out and the addition of yoghurt gives it a rich texture. It's well worth that little bit of effort. I always double the recipe so half can be frozen.

500 g lamb, diced
1 large onion, sliced thinly
1 garlic clove, crushed
1 1/2 tablespoons ghee or 1 1/2 tablespoons oil
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon fresh coarse ground black pepper
1 1/2 tablespoons garam masala
2 chilies
2 bay leaves
1 (5 cm) cinnamon sticks
100 ml natural low-fat yogurt
225 g tomatoes, skinned and diced
1 teaspoon salt

Steps:

  • Peel onion and slice and mince garlic. Heat oil in a medium size saucepan; fry onion and garlic over low heat until soft.
  • Add diced lamb and cook, stirring until sealed on all sides. Remove meat from the saucepan and set to one side.
  • Add the coriander, turmeric, black pepper and 1 tablespoon Garam Masala. Stir together for 1 minute.
  • Top and tail green chilies--remove seeds first for a milder heat. Chop small and add to the saucepan stirring for a further minute or two.
  • Add bay leaves and cinnamon; stir in the Yoghurt. Add the chopped tomatoes and bring to the boil.
  • Add the lamb and simmer for 40 minutes. Five minutes from the end of cooking, add the remaining 2 teaspoons of Garam Masala and salt. Thicken slightly if necessary. Remove whole spices.
  • Serve with Basmati rice and accompaniments.

An easy to make, tangy curry. Vary the amount of chillies to your taste, as mine gives a mildly spicy outcome. You can substitute the oil with a mixture of oil and ghee/butter for a richer curry. Enjoy!!

3 medium boiled potatoes
1/2 cup soya wadis (optional)
3 medium tomatoes
1 medium onion
2 garlic cloves
1 inch cinnamon stick
4 -5 cloves
4 -5 cardamom pods
2 dried red chilies
3 tablespoons coriander seeds
3 tablespoons oil
1 tablespoon cream (optional)
1/4 cup coriander leaves

Steps:

  • Soak the soya wadis (if using) in a cup of hot water for about five minutes, squeeze dry and set aside.
  • Meanwhile, dice the the potatoes into big chunks and chop the onion and tomatoes roughly.
  • Place onion, tomatoes, garlic and all spices in a blender. Blend till smooth.
  • Heat oil in pan and add ground paste.
  • Dry the paste until oil comes out and the reddish paste turns deep red- brown in colour.
  • Add the potatoes and soya wadis (if using), reserving a couple of pieces of potato if the paste is a little watery. cover partially.
  • After the curry cooks for about five minutes, mash reserved potatoes thoroughly and add to thicken the gravy if necessary.
  • Remove from fire and garnish with a swirl of cream and the coriander leaves.

1 small whole chicken
5 tbsp tikka masala paste
1 tbsp sunflower oil
1 large red onion, halved and sliced
2 large tomatoes, halved and chopped
1 tbsp fenugreek seeds
1 thumb-sized piece ginger, grated
2 x 400g cans full-fat coconut milk
500g new potatoes, halved
100g baby spinach
25g pack coriander, torn, to serve
poppadums and chutney, to serve (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 6. Put the chicken on a chopping board and, using your hands, rub the skin generously with half the spice paste. Season well, tie the legs together and set aside.
  • Heat the oil in a large flameproof casserole dish over a medium heat. Add the onion and a good pinch of salt and cook for 5 mins or until beginning to soften. Add the tomatoes, fenugreek seeds, ginger and remaining spice paste, and cook for 3 mins more. Stir through the coconut milk and bring to a simmer. Add the chicken and the potatoes to the dish, and cook in the oven for 20 mins, uncovered.
  • Lower the heat to 180C/160C fan/ gas 4 and cook for 55 mins more. Check that the meat is cooked by cutting through one of its legs - the flesh shouldn't be pink.
  • Remove the chicken and place on a chopping board. Stir the spinach through the sauce and leave to rest for 5 mins. Put the chicken back in the dish, top with the coriander and carve at the table. Serve with poppadums and chutney, if you like.

1 thumb-sized piece ginger, grated
2 large garlic cloves
6 large vine tomatoes, halved, deseeded and chopped
800g new potatoes, halved
3 tbsp sunflower oil
1 large onion, thinly sliced
2 green chillies, halved, deseeded and thinly sliced
1 tsp black mustard seeds
2 tsp ground coriander
½ tsp turmeric
1 tsp ground cumin
2 tsp garam masala
small bunch coriander, chopped

Steps:

  • Put the ginger, garlic and four tomatoes into a food processor and blitz until smooth. Set aside.
  • Put the potatoes in a large saucepan. Cover with cold water and bring to a simmer over a medium heat. Cook for 8-10 mins, or until just tender. Drain and leave to steam dry.
  • Meanwhile, heat the oil in a large non-stick frying pan over a medium heat. Add the onions and a large pinch of salt and fry for 15 mins, or until the onions are golden and sticky. Add the chillies, mustard seeds, ground coriander, turmeric, cumin and garam masala to the pan and fry for another 2 mins. Tip in the tomato mixture and bring to a gentle simmer, then carefully stir in the potatoes and remaining tomatoes. Season to taste. Gently simmer the Bombay potatoes for a few mins until everything is warmed through, then serve topped with the coriander.
