Provided by Food Network

Categories     main-dish

Time 6h30m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons rice vinegar
2 tablespoons dark sesame oil
2 tablespoons reduced-sodium or regular soy sauce
1 tablespoon minced fresh ginger
1 beef top round steak, cut 3/4-inch thick (about 1 pound)
2 baby bok choy, cut lengthwise in 1/2
4 spinach sandwich wraps or tortillas (8 to 10-inch diameter)
2 tablespoons reduced fat or regular mayonnaise
2 tablespoons finely chopped dry roasted peanuts
1 1/2 teaspoons minced fresh ginger
1 to 1 1/2 teaspoons chili-garlic paste
3/4 teaspoon reduced-sodium or regular soy sauce
3/4 teaspoon rice wine vinegar
1/2 teaspoon dark sesame oil

Steps:

  • Combine marinade ingredients in small bowl. Cover and refrigerate 1 tablespoon for the bok choy. Place beef steak and remaining marinade in a food-safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight.
  • Preheat charcoal grill to medium heat.
  • Remove steak from marinade; discard marinade. Place steak on grid over medium, ash- covered coals. Grill, uncovered, 8 to 9 minutes for medium-rare doneness, turning occasionally. Do not overcook. Brush bok choy with reserved 1 tablespoon marinade. Grill bok choy, uncovered, over medium, ash-covered coals 4 to 5 minutes or until tender and lightly browned, turning once.
  • Meanwhile combine Spicy Peanut Mayonnaise ingredients in medium bowl; mix well.
  • Carve steak into thin slices. Cut each bok choy half lengthwise in half again, forming quarters. Cut core from each quarter. Spread mayonnaise mixture evenly on spinach wraps. Divide steak slices and bok choy among wraps. Roll up tightly.

STEAMED BEEF DUMPLINGS

Steamed Beef Dumplings image

This is not my original recipe, TRUE! Was asked to post this as had "success" making this today too! Economical, easy to do, LOVE the versatility and look forward to the first review! :) http://www.grouprecipes.com/5490/steamed-beef-dumplings.html What I will add is recipe is FANTASTIC as can be! Next time, might add some ginger and chilli! UPDATE: Have substituted tamari for soy sauce from the original as will GREATLY lower the salt content

Provided by mickeydownunder

Categories     Healthy

Time 36m

Yield 30 wontons, 6 serving(s)

Number Of Ingredients 12

2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons hoisin sauce
1 teaspoon cornstarch
1 cup bok choy
1 medium carrot, shredded
2 tablespoons green onions
2 tablespoons cilantro
1/4 teaspoon salt
3/4 lb lean ground beef
1/4 cup rice vinegar
1/4 cup tamari

Steps:

  • For dough, combine flour, the 1/2 teaspoon salt, and 2/3 cup boiling water in a medium mixing bowl, stirring constantly with a fork. Add 1/4 cup cold water; mix with your hands until dough forms a ball. (The dough will be sticky.) Cover; set aside.
  • NOTE: I had to add a little bit more water than posted; go by the look and feel.
  • For filling, stir together hoisin and cornstrach in a medium mixing bowl. Stir in finely diced bok choy, carrot, finely sliced green onion, cilantro and salt. Add ground beef; mix well. Using about 1 tablespoon of the filling for each, shape filling into 30 balls. Set aside.
  • NOTE: I used an egg ring to form the wraps; made it easier for filling.
  • Divide dough in half. Return one portion to the bowl; cover and set aside. Divide the other portion into 15 balls. On a well-floured surface, roll each dough ball into a 3-inch circle. Place a meatball in the center of each circle. Fold the dough up and around all but the top of the meatball, pleating dough firmly. Gently flatten the bottom of each dumpling. Repeat with remaining dough and meatballs to make 30 dumplings total.
  • NOTE: Keep a moistened towel over the wontons so they do not dry out while you continue to make the batch.
  • Bring water to boiling in a steamer or Dutch oven. Place dumplings, open sides up, on a greased steamer rack; make sure the dumplings don't touch one another. (If all the dumplings won't fit on a steamer rack, refrigerate remainder until ready to steam.) Place rack over, but not touching, boiling water. Cover and steam dumplings for 16 to 18 minutes or until internal temperature reaches 160 degrees F. Meanwhile, combine rice vinegar and soy sauce. Sprinkle with 1 teaspoon thinly sliced green onion. Serve with dumplings.
  • NOTE: Used a rice steamer and oil sprayed the top insert each time.

BOK CHOY STEAMED RICE

Bok Choy Steamed Rice image

With all the fancy grilled summer meats flying around, it's easy to forget about the side dishes. Nobody wants to spend hours in the kitchen when they could be outside playing volleyball in jhorts. With this easy bok choy rice, you can have something much more interesting in the same time as it takes to make plain rice.

1 large head bok choy
1 ½ cups cold water
1 cup long grain rice
1 teaspoon soy sauce

½ teaspoon sesame oil
¼ teaspoon toasted sesame seeds

Steps:

  • Separate bok choy leaves from stems. Slice stems into 1-inch pieces; chop leaves.

BABY BOK CHOY WITH OYSTER SAUCE

Baby Bok Choy With Oyster Sauce image

This is among the easiest, most flavorful preparations of greens imaginable, and it pairs beautifully with almost any vaguely Asian roasted meat or fish. It is also exceptional on its own, with rice. You could swap out the bok choy for broccoli, if that's all you have, or chard, or beet greens.

Provided by Sam Sifton

Categories     easy, quick, vegetables, side dish

Time 10m

Yield 4 servings

Number Of Ingredients 7

1 tablespoon soy sauce
3 1/2 tablespoons oyster sauce
Pinch of sugar
2 tablespoons rice vinegar (do not use seasoned rice vinegar)
1 tablespoon neutral oil
1 tablespoon finely minced garlic
4 to 6 bunches of baby bok choy, approximately 1 1/2 pounds, cleaned, with ends trimmed

Steps:

  • Combine soy sauce, oyster sauce, sugar and rice vinegar in a bowl and set aside.
  • Heat oil in a skillet or wok set over high heat. When it shimmers, add garlic, then bok choy, and stir-fry for 2 minutes. Add 2 to 3 tablespoons water to the skillet or wok, then cover it and allow to cook for 2 to 3 minutes more, until bok choy has softened nicely at its base.
  • Remove bok choy from the skillet or wok and place it on a warmed platter. Drizzle the reserved sauce over the greens and serve.

BOK CHOY WITH BEEF

Bok Choy with Beef image

Categories     Beef     Ginger     Marinate     Stir-Fry     Quick & Easy     Sherry     Bok Choy     Sesame     Soy Sauce     Gourmet

Yield Makes 4 (main course) servings

Number Of Ingredients 15

1 (1-pound) piece beef tenderloin
For marinade
2 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon medium-dry Sherry
1 1/2 teaspoons Asian sesame oil
2 teaspoons cornstarch
1 1/2 pound baby bok choy
2 tablespoons soy sauce
3 tablespoons medium-dry Sherry
1 teaspoon balsamic vinegar
1 cup vegetable oil
1 1/2 tablespoons minced garlic
1 tablespoon minced peeled fresh ginger
Accompaniment: rice

Steps:

  • Cut beef crosswise (across the grain) into 1/4-inch-thick slices, then cut slices into 1/2-inch-wide strips.
  • Make marinade and marinate meat:
  • Stir together marinade ingredients in a medium bowl until sugar is dissolved.
  • Add beef, tossing to coat, and marinate 30 minutes to 1 hour.
  • Blanch bok choy:
  • Separate bok choy into individual leaves and halve crosswise, keeping stems and leaves separate. Cook stems in a large pot of boiling water 15 seconds, then add leaves and cook 15 seconds more. Drain in a colander, then rinse with cold water to stop cooking and drain well.
  • Fry beef:
  • Stir together soy sauce, Sherry, and vinegar.
  • Heat vegetable oil in a 12-inch heavy skillet over moderate heat until a deep-fat thermometer registers 400°F.
  • Add beef to hot oil with tongs (discard marinade) and cook, stirring carefully, until slices separate, about 1 minute. Transfer beef with tongs to a colander and drain.
  • Stir-fry beef and bok choy:
  • Reserve 3 tablespoons oil from skillet and discard remainder. Heat reserved oil in skillet over moderately high heat until hot but not smoking, then stir-fry garlic and ginger until fragrant, about 30 seconds. Add beef, soy mixture, and bok choy and stir-fry until sauce is simmering and mixture is just heated through, about 1 minute. Serve immediately.
