Add the mushrooms, 3/4 teaspoon black pepper and chipotle powder and cook, stirring frequently, until the mushrooms are just cooked through, about 5 minutes.

21+ VEGETARIAN SLOPPY JOES

21+ Vegetarian Sloppy Joes image

Just because I don't eat meat doesn't mean I don't miss certain things--especially certain comfort foods. This is one of those foods. I've even impressed a few self-proclaimed carnivores with these. The avocados are optional, but they really do add to the whole...ummm... sandwich experience? Wow that sounds kinda lame. Anyway, I suppose you could use actual ground beef to make these but I cannot vouch for that version of this recipe. Prep/cooking times are estimated.

UNTIDY JOSEPHS (AKA VEGETARIAN SLOPPY JOES)

Untidy Josephs (Aka Vegetarian Sloppy Joes) image

I've tricked many a carnivore with these! This is a quick & easy recipe. Note that if you use regular Worcestershire sauce, the recipe is not truly Vegetarian, as Worcestershire sauce contains anchovies. Vegetarian Worcestershire sauce can be found at Whole Foods, organic markets, etc.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 12

12 ounces morningstar farms or boca frozen soy veggie crumbles (1 bag)

1 tablespoon Worcestershire sauce (vegetarian or regular kind)
1/4 teaspoon chili powder
cayenne pepper, to taste
Tabasco sauce, to taste

Steps:

  • Heat olive oil in medium/large skillet over medium heat. Sautee onion, green pepper, garlic until slightly softened. Add soy crumbles and sautee until thawed. Add 1/2 can tomato sauce, beer, Worcestershire sauce, chili powder, cayenne and Tabasco.
