EASY BEEF AND NOODLE CASSEROLE



Easy Beef and Noodle Casserole image

This is something I came up with when I needed something fast to feed my kids and I didn't have many resources in the kitchen. I got 4 stars from 2 kids and 5 stars from another, so that constitutes a "keeper" for me. Hope it makes your life a little easier too...It's a "homemade" taste from convenience items.

8 ounces medium egg noodles, cooked and drained
12 ounces roast beef, with gravy (either leftover or canned Hormel brand)
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
6 ounces whole milk
1/4 cup beef broth
2 tablespoons dried parsley flakes
1/8 teaspoon onion powder
salt & pepper
1/2 cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees.
  • In a well-buttered 2 quart casserole, pour cooked and drained noodles.
  • Mix soup, milk, beef broth and onion powder together until smooth, add to noodles and stir.
  • Add roast beef with gravy, and mix thoroughly.
  • Salt and pepper to taste.
  • Sprinkle dried parsley flakes evenly on top.
  • Sprinkle the top with the bread crumbs.
  • Bake, uncovered, in a 350 degree oven for 30 minutes.

This is the best beef noodle casserole ever! My favorite recipe from my grandmother is this casserole with plenty of vegetables, ground beef, and egg noodles. Top with grated cheddar cheese.

1 tablespoon plus 1 /2 teaspoon kosher salt, divided, plus more to taste
2 tablespoons extra virgin olive oil
1 medium white onion, chopped (1 1/2 cups)
1 bell pepper, seeded, ribs removed, finely chopped, about 1 cup
3 cloves garlic, minced, about 1 tablespoon
1 (28 ounce) can whole peeled or crushed tomatoes
1 1/2 pounds ground beef
4 ounces mushrooms, sliced
12 ounces egg noodles
1 1/2 cups frozen corn, defrosted
1 (15 ounce) can of black olives, strained and chopped
8 ounces cheddar cheese, grated

Steps:

  • Preheat the oven, start heating the water: Preheat the oven to 350°F. Add 1 tablespoon of the salt to 2 quarts water in a large pot, and start to bring to a boil for cooking the egg noodles.
  • Make the tomato sauce: Heat 1 tablespoon of oil on medium high heat in a large, heavy bottomed pot or skillet. Add the onions and bell pepper and sauté until softened, about 4 minutes. Add the garlic and cook for a minute more. Add the tomatoes, breaking them up with your fingers or a knife if you are using whole canned tomatoes. Bring to a simmer and let cook for 10 minutes. Lower the heat to warm.
  • Cook the egg noodles: While the mushrooms are cooking, add the egg noodle pasta to the boiling water. Cook as directed, about 4-5 minutes. Strain when cooked, but still a little firm (al dente).
  • Bake: Sprinkle remaining cheese on top of casserole. Place in the oven. Bake uncovered at 350°F for 30 minutes.

2 cups egg noodles, cooked and drained
1 lb hamburger
1 (15 ounce) can tomato sauce
1 -2 teaspoon minced garlic
4 ounces cream cheese, softened
1 cup sour cream
2 green onions, chopped
1 cup grated cheddar cheese

Steps:

  • Pour cooked noodles in a 2 quart casserole.
  • Brown burger and garlic in skillet; drain.
  • Add the tomato sauce, stir.
  • Let simmer 10- 15 min.
  • Pour meat mix.
  • over noodles.
  • Combine cream cheese and sour cream in small bowl; stir til smooth.
  • Add green onions' stir.
  • Spread cream mix.
  • over meat.
  • Sprinkle on Cheddar cheese.
  • Bake, uncovered at 350% for 30- 35 min.

10 3/4 ounces French onion soup
1 lb beef stew meat, cubed
8 ounces egg noodles, cooked
1 medium carrot, shredded
1 teaspoon poultry seasoning
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • Combine soups and seasonings and shredded carrots in a 13x9" casserole dish.

When I was working on the local election board in the '50s, one of my co-workers gave me this beef noodle casserole recipe, and it has been a family favorite ever since. It's quick to make for unexpected company or easily doubled for a potluck.

1-1/2 pounds ground beef
1 tablespoon butter
1 large onion, chopped
1 cup chopped green pepper
1 tablespoon Worcestershire sauce
6-1/4 cups uncooked wide egg noodles, cooked and drained
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. In the same skillet, melt butter over medium-high heat. Saute onion and pepper until tender. Stir in the beef, Worcestershire sauce, noodles and soups. , Transfer to a greased 3-qt. baking dish; top with cheese. Bake, uncovered, at 350° for 45-50 minutes or until heated through.

1 onion, chopped
1 (8 ounce) package medium egg noodles
1 (8 ounce) can tomato sauce
1 (10 3/4 ounce) can cream of mushroom soup
8 ounces shredded sharp cheddar cheese, divided

Steps:

  • Preheat oven to 350.
  • Brown ground beef and onion, drain.
  • Cook and drain egg noodles.
  • Combine beef mixture and egg noodles in a pot and add tomato sauce, cream of mushroom soup, and 3/4 of the cheese. Stir until cheese is melted.
  • Pour mixture into casserole dish. Top with remaining cheese.
  • Bake for 25-30 minutes, until cheese is melted and bubbly.
