GRILLED CHICKEN BLUEBERRY PECAN SALAD WITH HONEY MUSTARD VINAIGRETTE
Let's be honest - sometimes we go green. Sometimes we can't pass up the bread. Grilled chicken blueberry pecan salad means you don't have to choose! This crispy, crunchy recipe offers a fresh take on chicken salad. Grab your favorite leafy greens or make a savory sandwich with your honey mustard dowsed salad. You can't lose.

Steps:
- Preheat grill for direct heat grilling.
- Season chicken breasts with 1/2 teaspoon kosher salt, 1/4 teaspoon pepper and garlic powder and grill, turning once, until chicken is cooked through. Let stand 10 minutes; slice and reserve.
- In a bowl, whisk honey, Dijon mustard, vinegar, olive oil, garlic, 1/2 teaspoon kosher salt and 1/8 teaspoon pepper until blended.
- In a bowl, combine lettuce, blueberries, apple, red onion and pecans and toss with some (about 1/2 cup) of the dressing.
- Arrange sliced chicken over lettuce mixture and drizzle with additional dressing.
FRENCH BLUEBERRY BALSAMIC CHICKEN RECIPE
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F.
- If you are using frozen blueberries thaw them and reserve both the berries and the juice.
- Season the chicken with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- In a large skillet, set over medium heat, melt the butter into the oil. Brown the chicken breasts for 3 minutes on each side, until they turn golden brown. Transfer the browned chicken to an ovenproof baking dish.
- Add the shallots to the pan and cook, stirring constantly, for 2 minutes. Add the blueberries and any blueberry juice, balsamic vinegar, honey, rosemary, and the remaining salt and pepper to the pan. Bring the mixture to a rapid boil. Reduce the heat and allow it to simmer, uncovered, for 5 minutes.
- Pour the blueberry balsamic sauce over the browned chicken, place a lid on the baking dish, and cook it in the preheated oven for 30 to 40 minutes, until the chicken is thoroughly cooked.
- Allow the chicken to rest at room temperature for 10 minutes, and then serve hot.
- Enjoy.

- Preheat barbecue to medium heat.
- Grill chicken breasts, bone side down, for about 14 minutes.
- Turn chicken and continue grilling until a meat thermometer inserted into the chicken reads 165°F (about 10-14 minutes).

Steps:
- Preheat oven to 350 degrees F.
- Heat 1 tablespoon each olive oil and butter in a large, heavy, nonreactive sauté pan.
- Season the chicken with salt and freshly ground black pepper and add to the pan when the oil and butter are hot and bubbly. Sear the chicken breasts over medium high heat until golden brown, about 1 minute per side or until a light crust forms. Remove to a baking dish and set aside.
- Add the remaining olive oil and butter to the pan and, when hot, stir in the shallots and cook until soft and lightly caramelized, about 4 minutes.
- Add the blueberries and stir 1 minute, followed by the balsamic vinegar, maple syrup, rosemary, salt and pepper and simmer about 10 minutes, or until the blueberries have collapsed.
- Pour the blueberry balsamic mixture over the chicken and put the pan in the top half of the oven for about 10 minutes, until the chicken has cooked through to a temperature of 170 degrees F.

Steps:
- Wash and drain chicken.
- Soak in buttermilk (enough to cover the pieces) for at least 30 minutes.
- Heat shortening or oil to 375 degrees in an electric or cast iron skillet (should be enough hot oil to come half-way up the chicken when placed into the skillet). Place seasoned flour in a paper bag.
- Shake off excess buttermilk from chicken and drop into bag of flour, two or three pieces at a time, and shake to coat.
- (Option: For a thicker, crispier chicken, remove piecesfrom flour, dip in buttermilk a second time and shake them in flour mixture again.)
- Place coated chicken pieces in hot oil and reduce the heat to 325 degrees.
- Cook chicken for 10 minutes on one side, flip chicken over, and cook another 10 minutes on second side.
- Drain cooked chicken on paper towels.
- For the glaze, melt butter over low heat. Whisk in honey until blended.
- Bring to a simmer and add pecans.
- Simmer for 15 to 20 minutes, stirring occasionally.
- Ladle over hot fried chicken.

Steps:
- Pound chicken breasts to a thickness of 1/4".
- Heat oil in medium skillet over medium-high heat.
- Dip chicken in egg, then in crumbs to coat well. Shake off excess.
- Cook until golden brown, about 1-1/2 minutes per side.
- Remove from skillet and keep warm.
- Add Grand Marnier to skillet.
- Bring to a boil, scraping brown bits.
- Blend in marmalade.
- Mix in remaining ingredients and reduce heat to low.
- Return chicken to skillet.
- Cover and simmer 10 minutes.
- Baste chicken with glaze and continue cooking until juices run clear when pierced with tip of sharp knife, about 5 minutes.
- Check frequently to avoid burning glaze.
- Serve immediately.
