Time 40m

Yield 12 muffin tops

Number Of Ingredients 9

1 1/2 sticks (12 tablespoons) salted butter, softened
3/4 cup granulated sugar
1 large egg
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 cup buttermilk
Zest of 1 orange plus 2 tablespoons orange juice
1 cup fresh blueberries
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment.
  • Cream together the butter and granulated sugar in an electric mixer. Add the egg and beat well. Set aside 1 tablespoon of the flour for the blueberries, then add the remaining flour to the butter mixture and mix until combined.
  • In a separate bowl, dissolve the baking soda in the buttermilk. Add the buttermilk mixture to the batter along with the orange zest and mix well.
  • Toss the reserved 1 tablespoon flour with the blueberries in a bowl. Using a spatula, fold the blueberry mixture into the batter until combined.
  • Use a standard ice cream scoop (1/4 cup) to scoop out the dough onto the lined baking sheets, spacing the scoops 2 to 3 inches apart. Bake until lightly browned, about 11 minutes. Transfer the muffin tops to a rack set over a baking sheet to cool completely.
  • In a small bowl, combine the confectioners' sugar and orange juice and mix well. Drizzle the glaze over the cooled muffin tops and let set.

Categories     beverage

Time 1h12m

Yield about 3 cups blueberry syrup, enough for 12 drinks

Number Of Ingredients 5

20 ounces fresh blueberries, approximately 4 cups, rinsed and drained
2 cups water
7 ounces sugar
1 lime, juiced
Carbonated water

Steps:

  • Place the blueberries and the water into a medium saucepan, set over medium-high heat and bring to a boil. Reduce the heat to low and simmer for 15 minutes. Remove the saucepan from the heat and pour the mixture into a colander lined with cheesecloth that is set in a large bowl. Allow to cool for 15 minutes. Gather up the edges of the cheesecloth and squeeze out as much of the liquid as possible. Discard the skin and pulp. Return the blueberry juice to the saucepan along with the sugar and lime juice. Place over medium high heat and stir until the sugar has dissolved. Bring to a boil and cook for 2 minutes. Remove from the heat and transfer to a heatproof glass container and place in the refrigerator, uncovered, until completely cooled.
  • To Serve: Combine 1/4 cup of the liquid with 8-ounces of carbonated water and serve over ice.

BLUEBERRY ORANGE SODA (PINKY SURPRISE)

Blueberry Orange Soda (Pinky Surprise) image

A mixture of blueberry juice and a mild (not overpowering) orange soda. I use Polar diet orange soda. This recipe is the end result of my twenty-five-year quest to discover the recipe of the drink "Pinky Surprise", mentioned on the TV show 'Private Benjamin'. This is the closest I've come to what I believe the "Pinky Surprise" might be. You might also want to try substituting pink lemonade for blueberry juice.
