What a way to start the day! A special fruit sauce you can make ahead of time tops blueberry pancakes.

1/4 cup sugar
1 1/2 teaspoons cornstarch
2 tablespoons orange juice
1/4 teaspoon grated orange peel
2 cups fresh or frozen unsweetened blueberries
2 cups Original Bisquick™ mix
1 cup milk
2 eggs
1 teaspoon grated orange peel
1/4 teaspoon ground nutmeg
1 cup fresh or frozen unsweetened blueberries

Steps:

  • In 1 1/2-quart saucepan, mix sugar and cornstarch. Stir in orange juice and 1/4 teaspoon orange peel until smooth. Stir in 2 cups blueberries. Heat to boiling over medium heat, stirring constantly. Boil about 2 minutes, stirring occasionally, until thickened. Keep warm.
  • Heat griddle or skillet over medium heat or to 375°F. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Grease griddle with vegetable oil if necessary. In medium bowl, stir all pancake ingredients except blueberries with spoon until blended. Fold in 1 cup blueberries. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other sides until golden. Serve with warm sauce.

1 tbsp melted unsalted butter , plus extra for the tin
200g self-raising flour
1 tsp baking powder
1 egg
250ml milk
2 tbsp golden caster sugar
1 large orange , zested and juiced
150g blueberries
icing sugar , for dusting
extra blueberries , blueberry compote or ice cream, to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Brush a 25 x 20 x 2cm baking tray with butter. Tip the flour and baking powder into a bowl and mix in the egg, milk, butter and caster sugar. Stir in the orange zest and 50ml juice.
  • Scrape the mixture into the tin and level the surface. Dot the blueberries over the top and bake for 20 mins or until the middle of the pancake feels cooked through when pressed lightly. Dust with icing sugar and serve with more blueberries, blueberry compote or ice cream, if you like.

Each serving is 2 pancakes each. I found this recipe in Family Circle magazine. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use Splenda sugar blend in place of the sugar.

1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
6 ounces plain low-fat yogurt
1/3 cup skim milk
1/2 cup orange juice
2 eggs
1 tablespoon canola oil
1 teaspoon grated orange zest
1 teaspoon vanilla extract
1 cup fresh blueberries
maple syrup

Steps:

  • Heat oven to 250. Place a large baking sheet in oven.
  • Blend botrh kinds of flour, the sugar, baking powder and salt in a large bowl. Combine yogurt, milk, juice, eggs, oil, orange zest and vanilla in a medium-sized bowl. Whisk until smooth. Add yogurt mixture to flour mixture and stir until a smooth batter forms.
  • Heat a large nonstick skillet over medium-high heat. Spoon batter by 1/4-cupfuls onto skillet, spreading to a diameter of 4-inches. Sprinkle 5 or 6 blueberries onto each pancake. Cook until bubbles appear on surface, about 2 minutes. Turn and cook until underside is lightly browned, about 1-2 minutes longer.
  • Transfer pancakes to baking sheet in oven keep warm. Repeat with batter and berries for a total of 16 pancakes. Serve with maple syrup.

1 1/2 cups all-purpose flour
1/2 cup blue cornmeal
Pinch salt
1 tablespoon sugar
2 large eggs
1 1/2 to 2 cups milk
2 tablespoons melted unsalted butter
1 cup fresh blueberries
Bananas, peeled and sliced
Mixed berries
3 cups fresh squeezed orange juice
2 sticks butter, slightly softened
2 tablespoons honey
Pinch salt
2 cups pure maple syrup
2 cinnamon sticks

Steps:

  • Preheat non-stick griddle. Mix together the dry ingredients in a medium bowl. Beat the eggs and 1 1/2 cups of the milk in a medium bowl until combined, then stir in the melted butter. Add the wet ingredients to the dry ingredients and mix until just combined then gently fold in the blueberries. If the batter seems too thick, add some of the remaining milk. Ladle approximately 1/4 cup of the batter onto the griddle for each pancake. Cook until the bottom is light golden brown, flip over and continue cooking for about 30 seconds. Remove to an ovenproof plate and keep warm in a 200 degree oven until ready to serve. Serve 3 per person with a dollop of orange-honey butter, maple-cinnamon syrup and bananas and berries. Dust with confectioners' sugar.
  • Orange-Honey Butter: Place orange juice in a small saucepan over high heat and reduce to 3 tablespoons. Place butter in a bowl, add the orange syrup, honey and salt and mix until combined. Scoop into a large ramekin, cover with plastic wrap and refrigerate until firm, about 2 hours.
  • Cinnamon Maple Syrup: Heat syrup and cinnamon sticks over low heat for 10 minutes. Remove and let steep for 1 hour. Remove sticks and pour into a small pitcher.

2 large eggs
1 -2 cup buttermilk
2 tablespoons melted butter
1/2 cup heavy cream
1/4 cup fresh squeezed orange juice
1 teaspoon orange zest
1/2 teaspoon salt
2 tablespoons brown sugar
1 tablespoon sugar
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon watkins vanilla
2 -3 cups all-purpose flour

Steps:

  • Combine the Eggs, Buttermilk, Butter, Heavy Cream, O.J. and Zest in a medium bowl. Whisk until mixed.
  • Add the remaining ingredients in the order listed.
  • Add the A.P Flour until desired thickness is achieved.
  • Whisk all ingredients until just mixed. Do not over whisk. Lumps are desired.
  • Pour batter on skillet set at 325 degrees. Cook each side until golden.
  • This recipe can be made a day ahead if refrigerated; before using mix well.

1 cup fresh blueberries
1 medium orange
1 tablespoon light brown sugar
1 teaspoon cornflour
1 tablespoon water
3/4 cup whole wheat flour
1 teaspoon baking powder
1/2 cup porridge oats
1 tablespoon caster sugar
2 large eggs
3/4 cup skim milk
1 teaspoon vanilla extract
2 tablespoons butter, melted

Steps:

  • Put the blueberries in a sieve and rinse under cold water. Grate the zest from the orange into a small saucepan; squeeze the juice and add the sugar. Bring to a boil and boil for 1 minute. Add blueberries, bring back to the boil and then turn down the heat. In a medium bowl blend together the water and corn flour and add to the blueberry mixture. Stir over medium heat until the syrup thickens and the blueberries release some juice and begin to soften. Remove from the heat and set aside.
  • for the pancakes, put the flour, baking powder, oats and sugar into a large bowl. Separate the eggs, putting the yolks into a measuring jug and the whites into a bowl. Add the milk and vanilla to the yolks and then whisk into the dry ingredients. Beat the egg whites until stiff and then fold into the batter carefully.
  • Brush a heated skillet with the melted butter and drop 2 or 3 TBS of the batter into the pan, leaving space in between, as the pancakes will spread. Cook for about 2 minutes, then turn over and cook 2 minutes longer until golden. Repeat with the remaining batter, brushing the pan each time with the melted butter, to make 8 pancakes altogether.
  • Serve topped with the blueberry sauce.

  • In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour.
