BLUEBERRY CHEESECAKE BARS
Healthy low carb and gluten free blueberry jam cheesecake bars made with chia jam. These sugar free crumb bars can be made with any fresh or frozen berries.

Steps:
- Add blueberries, sweetener, and water into small sauce pan.
- Bring berry mixture to a boil then reduce heat to simmer.
- Stir in chia seeds and simmer for about 15 minutes or until thickened.
- Remove from heat and add vanilla.
- Allow to cool.
- Preheat oven to 375°F. Line an 8x8 baking pan with aluminum foil or parchment paper and grease.
- Pulse together almond flour, oat fiber, sweetener, coconut flour, and baking powder in a food processor until combined.
- Add cubed butter and pulse until mix forms into coarse crumbs. Set aside half the mixture.
- Press remaining crust mixture into prepared pan.
- If desired, bake the crust for about ten minutes before proceeding. (totally optional)
- Spread cooled blueberry chia jam on top of crust.
- Beat cheese topping ingredients with an electric mixer until well blended.
- Drop small scoops of cheese mixture on top of jam.
- Sprinkle reserved crust mixture evenly on top.
- Bake 30-35 minutes or until top is browned.
- Cool on rack then place in refrigerator until set.
- Cut into bars. Store in refrigerator.

- 1. Combine blueberries and 1/2 cup of sugar in small saucepan. Cover and place on low heat. Simmer for 10 minutes and remove from heat. After pan cools place in the refrigerator to chill and thicken for 1-2 hours.
- 2. Preheat oven to 350 degrees. Spray 9 x 13 inch baking dish with nonstick cooking spray. In small bowl combine graham cracker crumbs, 6 tablespoons melted butter and 2 tablespoons sugar. Press evenly into baking dish.
- 3. In stand mixer with paddle attachment mix 1/2 cup sugar and cream cheese until smooth. Turn mixer to low; add vanilla extract and 1 egg at a time mixing just until incorporated. Pour cream cheese mixture over graham cracker crust.
- 4. With chilled blueberry sauce make two thick lines down the length of the pan over the top of the cream cheese. Using bamboo skewers or chopsticks swirl in being careful not to scrap the crust on the bottom.
- 5. Bake 40-45 minutes or until set in the center. Chill well before cutting. Refrigerate all leftovers.
BLUEBERRY PIE BARS
At first glance, these bars may look like every other fruit crumble bar you've had, but they have a secret. Between the jammy fruit and buttery shortbread is a bonus layer of sweetened cream cheese you never knew you needed until now. Wild blueberries are less watery than conventional blueberries and have a more concentrated blueberry flavor that works beautifully in this recipe. They are available frozen and need not be thawed before using, but you can use whichever variety you find. These bars will be delicious no matter what.

- Heat oven to 350 degrees. Line a 9-inch square pan with parchment paper, leaving a 2-inch overhang on two sides. In a food processor, combine shortbread cookies, sugar, flour and salt and pulse until you have fine crumbs. Add butter and pulse until crumbs are evenly moistened. Transfer mixture into the prepared pan and press down into an even layer. Bake until fragrant and a shade darker, 15 to 20 minutes.
- Meanwhile, prepare filling: In a medium bowl, add cream cheese, 1/4 cup of sugar and 1 egg and mix until smooth. In a separate medium bowl, add blueberries, remaining 1/3 cup sugar, cornstarch and salt, and toss to combine.
- Prepare topping: In a food processor, combine shortbread, flour, salt, baking powder and sugar and pulse to combine. Add butter and egg yolk, and pulse until the mixture is evenly moistened.
- Remove crust from oven and top it evenly with cream cheese mixture and then blueberry mixture. Sprinkle topping over blueberry layer, squeezing to make some larger clumps. Bake until filling is set and no longer jiggly, 35 to 40 minutes. Transfer to a rack to cool completely then chill in the refrigerator for at least 1 hour.
- To serve, use a sharp knife to release edges. Using parchment overhang, lift and transfer to a cutting board and cut into 16 squares.

- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- To a medium bowl, add cream cheese, sugar, and lemon juice. Using a handheld mixer, mix until creamy.

- Heat oven to 350. Line an 8-inch square baking pan with non-stick foil or parchment paper.
- In a large bowl, mix oats, flour, brown sugar, baking soda, salt and cinnamon. Add melted butter and stir with fork until evenly moistened (mixture will be very crumbly). - For the quick blueberry jam: Stir together the blueberries, sugar, lemon zest and juice in a medium saucepan over medium heat and cook until the berries release some liquid and soften, 1 to 2 minutes. Mash the mixture with a potato masher until the berries break down, decrease to medium-low heat and cook until the sugar dissolves, 3 to 5 minutes. Sprinkle the cornstarch over top, stir and cook until the jam thickens enough to coat the back of a spoon nicely, about 1 minute. Remove from the heat and allow to cool completely, 30 minutes.
- For the crumble: Preheat the oven to 350 degrees F. Grease a 9-inch square baking dish with cooking spray and line with parchment paper.
- Cream the butter, granulated sugar and brown sugar in a stand mixer fitted with the paddle attachment until light and fluffy, 2 to 3 minutes. Add the vanilla and mix gently until combined.
- Add the flour, 1 cup oats, salt, baking powder and cinnamon and mix on low speed until just combined, scraping down the sides of the bowl as needed. Transfer 1/2 cup of the mixture to a medium bowl and set aside. Press the remaining mixture evenly into the bottom of the prepared baking dish.
- Stir the remaining 1/2 cup oats and chopped pecans into the reserved mixture in the medium bowl. Refrigerate the mixture until the jam is cooled completely.
- Spread the cooled jam evenly over the crust and sprinkle the crumble on top. Bake until golden brown and set, 30 to 35 minutes. Transfer the baking dish to a wire rack and allow to cool completely, about 1 hour. Slice and serve.
