BLUEBERRY BRIE
Warm Blueberry Brie...we have this every year at our work's Christmas party. It is so tasty, it's addictive! You can also make this with raspberry sauce or sun dried tomatoes, both of which taste excellent. This will cook in the microwave in about 3 minutes. Serve with warm French baguette slices!

- Preheat oven to 350 degrees F (175 degrees C).
- Place Brie cheese in a baking dish. Pour blueberry pie filling over the top.

TRIPLE BERRY BAKED BRIE

Steps:
- HEAT oven to 400 degrees F. Unfold puff pastry on a lightly floured surface. Roll gently to seal any cracks in pastry. Spoon preserves onto center of pastry. Place cheese on top of preserves. Sprinkle evenly with nuts. Fold pastry up over the cheese to cover. Trim excess pastry and press to seal seams. Reserve pastry scraps.
- WHISK egg and water in small bowl. Brush seams with egg mixture. Place seam-side down on baking sheet. Cut pastry scraps into decorative shapes and arrange on top, if desired. Brush with egg mixture.
- BAKE 25 minutes or until golden brown. Let stand 20 minutes before cutting. Serve with crackers and sliced fruit.

I love to serve Brie during the holidays. This is much more party friendly because each person can have their own little puff, rather than all digging into the same wheel. :-)

BAKED BRIE WITH BLUEBERRY CHUTNEY
This is from Arielle's Archives, but isn't on the site anymore, and it is wonderful to serve as an appetizer. I used dried onions and bottled grated ginger to save time and it is still very good. Enjoy!

Steps:
- Combine all ingredients, except Brie, in a medium saucepan.
- Bring to a boil, at medium heat, and boil for 1 minute, stirring constantly to avoid sticking or burning.
- Remove from heat, discard the cinnamon stick and chill in a covered container until flavors are well blended and mixture is cold.
- Preheat oven to 350 degrees.
- Bake Brie on an ungreased cookie sheet for 10 to 12 minutes, or until soft.
- Place on a serving plate and top with the cold blueberry chutney.
- Serve with crackers.

BLUEBERRY BAKED BRIE

- BRIE: Preheat oven to 350 degrees F. Cut the top off of your brie wheel (about 1/4' off the top) and place on a baking dish. Bake for 12-15 minutes or until the center is soft.
- BLUEBERRY SAUCE: Combine blueberries, honey, water and lemon zest in a medium sized saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Pour over the baked brie and serve immediately with your choice of crackers, fruits and bread.

- Preheat oven to 400 degrees.
- Prepare a sheet pan with a Silpat or parchment paper.
- Lay out the puff pastry on the Silpat and even out any creases that may be left from it being folded in the freezer.
- Using a fork, poke lots of holes in the center of the puff pastry. Leave the outer 1 inch all the way around alone and don't poke it!!! This will allow the air to release when you pull it out of oven. It will still puff up but once you press on it gently, the air will come out of the holes and settle back down.
- Using a knife, score about one inch all the way around the puff pastry. Don't go all the way through the puff pastry to the sheet pan. You are looking for it to score so there is a separation from the center and the edge. It will create a higher edge (remember you didn't poke holes with the fork there!!)
- Whisk together the egg and milk and brush on the 1 inch outer border.
- Place puff pastry in the oven for 15-20 minutes. Turn the sheet pan at the 10 minute mark to make sure all sides are cooking evenly. I took mine out at 15 minutes total.
- Allow to cool. While cooling, stir the cream cheese, vanilla and sugar together.
- Spoon the cream cheese mixture into the center of the puff pastry (where you had the fork marks) and spread it out.
- Sprinkle blueberries over the cream cheese mixture. Using a sifter, place the powdered sugar inside and sprinkle on top blueberries.
- Serve immediately or refrigerate up to 2-3 hours at most or the puff pastry gets soft.

BLUE BRIE (BAKED BRIE WITH BLUEBERRIES)
I like having a baked brie at parties, always nice to find a new way to do it. This came via a demo table at my local grocery store a few years back. Dried blueberries can be quite expensive, I wonder if you could just dry your own in the oven. They should be easy enough to find in the bulk section and they do 'make' the dish so you can't leave them out. Nice for a special occassion (when calories don't count!). Serve with a selection of crackers or sliced baguette.

- Preheat the oven to 375 degrees.
- Combine the brown sugar, pecans and blueberries in a bowl. Sprinkle the mixture with just enough water to moisten.
- Cut the top off the brie and score lightly in a criss-cross pattern. Place the brie in an oven safe shallow dish or bowl.
- Place the blueberry mixture over the top of the brie. Bake uncovered for about 30 minutes until the cheese is bubbly and heated through (test in teh middle as you would a cake, it 'should' come out gooey.
- Serve right out of the oven, lifting the brie onto a serving platter and surrounding it with crackers or bread.
- Microwave option: microwave on high for 3 minutes, reheat as necessary.
