2 cups fresh or frozen blueberries
1 teaspoon ground cinnamon
1 teaspoon lemon juice
1 cup all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 cup 2% milk
3 tablespoons butter, melted
TOPPING:
3/4 cup sugar
1 tablespoon cornstarch
1 cup boiling water
Whipped cream, optional

Steps:

  • Preheat oven to 350°. Toss blueberries with cinnamon and lemon juice; pour into a greased 8-in. square baking dish. In a small bowl, combine flour, sugar and baking powder; stir in milk and butter. Spoon over berries. , Combine sugar and cornstarch; sprinkle over batter. Slowly pour boiling water over all. Bake until a toothpick inserted into the cake portion comes out clean, 45-50 minutes. Serve warm. If desired, top with whipped cream and additional blueberries.

1/3 cup plus 1/2 cup sugar
1/4 cup water
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
10 oz blueberries (2 cups)
1 cup all-purpose flour
1 3/4 teaspoons baking powder
1 teaspoon salt
1 large egg
1/2 cup whole milk
1 stick (1/2 cup) unsalted butter, melted and cooled slightly
1 teaspoon vanilla

Steps:

  • Put oven rack in middle position and preheat oven to 375°F. Butter a 9-inch square baking pan.
  • Stir together 1/3 cup sugar with water, lemon juice, and cornstarch in a small saucepan, then stir in blueberries. Bring to a simmer, then simmer, stirring occasionally, 3 minutes. Remove from heat.
  • Whisk together flour, baking powder, salt, and remaining 1/2 cup sugar in a medium bowl.
  • Whisk together egg, milk, butter, and vanilla in a large bowl, then add flour mixture, whisking until just combined.
  • Spoon batter into baking pan, spreading evenly, then pour blueberry mixture evenly over batter (berries will sink). Bake until a knife inserted into center of cake portion comes out clean, 25 to 30 minutes. Cool in pan on a rack 5 minutes.

2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
1/3 cup granulated sugar
2 cups cold milk
1-1/4 cups orange juice
1 cup fresh blueberries
2 Tbsp. powdered sugar

Steps:

  • Heat oven to 350°F.
  • Prepare cake batter as directed on package; pour into 13x9-inch baking dish sprayed with cooking spray.
  • Beat dry pudding mixes, granulated sugar, milk and orange juice with whisk 2 min.; pour over cake batter. Sprinkle with blueberries. Place baking dish on baking sheet. (Baking sheet will catch any sauce that might bubble over sides of dish as dessert bakes.)
  • Bake 1 hour to 1 hour 5 min. or until toothpick inserted in center of cake comes out clean. Cool 20 min. (Sauce will thicken slightly as it cools.) Sprinkle with powdered sugar. Serve warm.

Baking spray (to grease skillet)
5 cups day-old bread (Brioche or French bread works great) (cubed (about 8 ounces or 1/2 pound))
2 cups blueberries
1.5 cup milk
1/2 cup heavy cream (whipping cream)
3 large eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
pinch salt
1/4 cup granulated sugar
1 tablespoon lemon zest (from about 1 lemon)
1/3 cup blueberry jam (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. .
  • Spray a 10-inch cast-iron skillet (or use a similarly sized baking dish) with baking spray. Note: If you don't have a cast-iron skillet, use a similarly sized casserole or baking dish.
  • To skillet, add bread. Sprinkle berries over top of bread and allow some to naturally fall in between cubes of bread.
  • In a bowl, whisk together the milk, heavy cream, eggs, vanilla extract, cinnamon, nutmeg, salt, sugar and lemon zest.
  • Pour milk mixture over bread and just GENTLY press bread down to soak up some of the milk mixture. Dollop blueberry jam over top of bread pudding (if using). Let sit for 10 to 15 minutes.
  • Bake for 65 to 70 minutes until cooked through and set (if it browns too quickly, top with aluminum foil). Check to see if it's done with a wooden skewer (when inserted in the centre of the bread pudding, it should come out clean).Note: The bread pudding will rise as it bakes, but fall a little as it cools.
  • Carefully remove from the oven and let cool for 30 minutes before serving. Serve warm with whipped cream or vanilla ice cream. Enjoy!Note: Bread pudding is best enjoyed freshly made. However, any leftovers can be properly stored in an airtight container in the fridge and used within 3 to 4 days, reheating when ready to enjoy.

1/4 cup powdered sugar
½ teaspoon vanilla extract
2 (3.4 ounce) boxes instant lemon pudding mix
3 cups whole milk
1 (8-ounce) package cream cheese, room temperature
2 (14 ounce) angel food cakes, cubed
4 cups fresh blueberries
Lemon zest and lemon slices for garnish

Steps:

  • For the Whipped Cream: Place cream and sugar in a chilled mixing bowl and mix on high for 1-2 minutes. Add the vanilla and beat for an additional 1-2 minutes or until soft peaks have formed. Set aside.
  • In a large bowl, add the pudding mix and whole milk. Beat for 2-3 minutes or until thickened. Add the cream cheese and beat until mixed in. Fold in half of the prepared whipped cream. Save the other half to top before serving.
  • In a trifle dish, layer 1/3 of the angel food cake cubes, 1/3 of the pudding mixture, and 1/3 of the blueberries. Repeat layers twice.
  • Chill in the refrigerator for 2-4 hours or until fully chilled before serving. Top with reserved whipped cream, additional blueberries, lemon slices, and lemon zest before serving.

1 1/2 cups all-purpose flour

1 cup evaporated milk (could use regular milk)

  • Layer your berries in an 8 x 8 x 2 inch baking dish sprayed with cooking spray. Sprinkle the lemon juice over the berries and kind of mix so they are coated. Mix flour, salt, baking powder, cooking oil, vanilla, cinnamon, sugar and milk together and spread over the berries. Add Topping.

50g soft butter
1 large egg
50g self-raising flour
50g desiccated coconut , plus 2 tsp
50g crème fraîche , plus extra to serve
zest and juice 1 lemon
180g punnet of blueberries

  • Heat oven to 180C/160C fan/gas 4. Beat the sugar and butter until pale and creamy, then beat in the egg. Stir in the flour, coconut, crème fraîche and lemon zest.
  • Put most of the blueberries in a baking dish (about 18cm square-ish) and squeeze over the juice from half the lemon. Dollop on the cake mixture and scatter over the remaining blueberries and 2 tsp coconut. Bake for 35-40 mins until golden, risen and the sponge is cooked. Serve with a dollop more crème fraîche.

1/2 cup butter or 1/2 cup margarine, melted
1 egg
8 ounces cream cheese, softened
1 cup powdered sugar
1 1/2 cups milk
1 (3 1/2 ounce) box cheesecake flavor instant pudding and pie filling
1 (8 ounce) container frozen whipped topping (Cool Whip)
21 ounces blueberry pie filling

Steps:

  • Preheat oven to 350 degrees. With a spoon, mix cake mix, butter and egg together. Press dough into a lightly greased 9 x 13 pan. Bake 14 - 18 minutes or until light golden brown around edges. With a spoon, remove air pockets by pushing down evenly over entire hot crust. Allow crust to cool completely.

1 teaspoon ground cinnamon
1 teaspoon lemon zest
Juice from half a lemon
