Number Of Ingredients 13

2 1/4 c cake flour
2 Tbsp unsweetened cocoa powder
2 tsp cinnamon
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 c unsalted butter at room temperature
1 1/2 c sugar
2 large eggs , room temperature, lightly beaten
2 tsp vanilla extract
2 (1 ounce) bottles blue gel food coloring (or powder or liquid food coloring)
1 c buttermilk
cream cheese frosting (see link below for recipe for frosting for blue suede cake)

Steps:

  • 1. Preheat oven to 350 degrees. Grease two 9-inch round cake pans, set aside. Mix together flour, cocoa, cinnamon, baking powder, baking soda, and salt. Set aside. In a separate bowl mix butter at medium speed until soft and creamy (about 60 seconds). With the mixer running, slowly add the sugar, scraping down sides as you go. Continue beating at medium speed until the mixture is very light and fluffy, about 5 minutes.
  • 2. Slowly drizzle in the eggs and beat well, stopping to scrape down the sides. Add the vanilla and food coloring ( if you use powdered food coloring or liquid the amount will vary according to brand, use your judgment and go for a really deep blue) and blend well. You may wish to add a tiny bit of red food coloring to give a more blue rather than a green tone to your cake, depending on your brand of food coloring.
  • 3. Using the mixer on low speed, mix in about one-third of the flour mixture, then half of the buttermilk, scraping down the sides of the bowl and folding just until the ingredients are incorporated. In the same manner, fold in half of the remaining flour mixture, then the remaining buttermilk, and finally the remaining flour mixture.
  • 4. Divide batter evenly between the two pans. Smooth surfaces with rubber spatula. Bake until each layer springs back when lightly touched in the center with your fingertip and a wooden toothpick comes out clean when inserted (about 25-30 minutes). When cool frost with cream cheese frosting nd sprinkle with blue colored sugar, if desired.

2 ¼ cups self-rising flour
1 tablespoon unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking soda
½ cup vegetable shortening
1 ½ cups white sugar
2 eggs at room temperature
2 tablespoons blue food coloring
1 teaspoon blueberry extract
1 tablespoon apple cider vinegar
1 cup buttermilk
½ cup butter
1 (16 ounce) package confectioners' sugar
1 teaspoon blueberry extract
½ cup chopped walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease and flour two 10-inch cake pans. Whisk the flour, cocoa powder, salt, and baking soda together in a bowl.
  • Beat the shortening and white sugar with an electric mixer in a large bowl until light and fluffy. Add the eggs one at a time, allowing each egg to blend into the mixture before adding the next. Beat in the food coloring, 1 teaspoon blueberry extract, and apple cider vinegar with the last egg. Pour in the flour mixture alternately with the buttermilk, mixing until just incorporated. Pour the batter into prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  • Beat the butter with the confectioners' sugar until smooth. Beat in 1 teaspoon of blueberry extract, then whip until light and fluffy. Once cake has cooled, spread with icing, and sprinkle with chopped walnuts.

This is a beautiful Elvis named cake. I adapted the recipe from James McNair's Cakes. It has a wonderful spiced flavor, and is best topped with cream cheese icing. You will get oohs and ahhs when you cut into this surprisingly pretty, cake, and you just may have to tell people to "Lay Off" your Blue Suede Cake!

Number Of Ingredients 12

2 1/4 cups cake flour
2 tablespoons unsweetened cocoa powder
2 teaspoons ground cinnamon
1 1/4 teaspoons baking powder
1/4 teaspoon salt
3/4 teaspoon salt
3/4 cup unsalted butter, at room temperature
1 1/2 cups sugar
2 eggs, room temperature, lightly beaten
2 teaspoons pure vanilla extract
2 (1 ounce) bottles blue gel food coloring
1 cup buttermilk

Steps:

  • Position racks in oven so cake will bake in the middle of the oven.
  • Preheat oven to 350°F.
  • Grease two 9-inch round cake pans, set aside.
  • Place flour, cocoa, cinnamon, baking powder, baking soda, and salt together in a sifter.
  • Sift into a bowl and repeat two more times.
  • Whisk well to combine all dry ingredients and set aside.
  • In a separate bowl mix butter at medium speed until soft and creamy (about 60 seconds).
  • With the mixer running, slowly add the sugar, pausing to scrape down sides.
  • Continue beating at medium speed until the mixture is very light and fluffy, about 5 minutes.
  • Slowly drizzle in the eggs and beat well, stopping to scrape down the sides.
  • Add the vanilla and food coloring and blend well.
  • You may wish to add a little red to give a more blueish versus green tone to your cake, depending on your brand of food color.
  • Gel food color will not dilute your batter, but liquid food color will work fine too.

3 sticks at room temperature, and divided butter
2 eggs
1 tablespoon cocoa powder
2 oz blue food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar
1 (8 oz) package cream cheese
1 cup melted marshmallows
1 lb confectioner's sugar
1 cup shredded coconut
1 cup chopped pecans

Steps:

  • Preheat oven to 350 °F. Grease and flour 3 (8-inch) round pans.
  • In a mixing bowl, cream the sugar and 2 sticks butter, mix until light and fluffy. Add the eggs 1 at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture.
  • Pour batter into pans. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting.
  • Icing:
  • Blend cream cheese and 1 stick butter together in a mixing bowl. Add marshmallows and sugar and blend. Fold in coconut and nuts. Spread between layers and on top and sides of cooled cake.

This frosting tastes more like cheesecake than most icings. It is not too sweet. That's why I like it. If you want very sweet you can probably find another recipe that has more sugar. I think this is perfect for the Blue Suede Cake recipe I posted earlier. I have had this recipe for a long time and am not aware of its origin.

2 (8 ounce) packages cream cheese, softened
1/2 c butter, softened
2 c sifted confectioners' sugar
1 tsp vanilla extract
1 tiny pinch of salt

Steps:

  • 1. In a medium mixer bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar and salt. Store icing or frosted cakes in the refrigerator if you have leftovers. Frosts a 2 layer cake or a 9 by 13 inch cake with some left over.

Add in the oil, almond flour, cornstarch, baking soda, baking powder, and salt. Continue mixing for an additional minute until smooth and combined. Add vinegar, cocoa extract, and mix again until smooth and creamy, scraping down the sides of the bowl as necessary to mix the batter evenly.
  • Turn the mixer to low speed. In alternating steps add the flour and water, beginning with the flour. Continue mixing an additional 30 seconds, until combined and smooth. Add the matcha powder and mix again until just combined.
