- Slice the kielbasa in 1/4 inch pieces
- Cut the peppers and onion into 1/4 strips
- Mix ingrediants,place everything in dutch oven or crock pot and pour pineapple chucks and juice over the top.
- cook at 35 - 40 minutes 350 degrees or for 4 hours on low in crock pot.

- Cut onions and peppers into 3/4" wide strips. Saute until onions start to become clear. Cut Kielbasa in 1" chunks and add to onions and peppers. Add pineapple, including juice. Place lid on Dutch Oven. Cook at around 350 deg. for 35 minute.

COMFORTING CHEESY KIELBASA AND POTATO BAKE

- 1. Cut the kielbasa in half length wise and then cut into 1/2 inch slices. Place in a large bowl. You can use any other cooked sausage, andouille etc., if you want to change it up.
- 2. Cut the onion into thin slices and place in the bowl.
- 3. Peel the potatoes and cut into about half inch cubes. Place them in the bowl.
- 4. Add the salt, pepper, onion powder, garlic powder, parsley, paprika and olive oil to the bowl. Mix well. Shred the cheddar cheese and set aside.
- 5. Preheat oven to 400 degrees. Spray a 9 X 13 pan with cooking spray on the bottom and sides. Add the kielbasa and potato mixture to the pan and spread out evenly.
- 6. Cook uncovered for 35 to 45 minutes or until potatoes are fork tender, stirring every 10 minutes. When the potatoes are done, turn the oven off and add the shredded cheddar to the top. Let it sit in the oven for an additional 5 minutes, or until cheese is melted.
GRILLED KIELBASA SKEWERS
Using kielbasa makes these skewers an easy summer dinner. The sausage grills evenly with the vegetables. Italian dressing adds zesty flavor to the fresh veggies. This is an easy meal to put together and quick to grill because the sausage is already cooked.

- 1. Cut kielbasa into 1" slices. Cut onion, bell peppers, corn on the cob, zucchini, tomato and ANY other of your favorite veggies you like int 1/2" to 1" chunks depending on how fast that veggie might cook. For example, the tomato will cook fast so cut into 1" chunk; corn can be cut into 2-3" pieces.
- 2. Place all the cut up vegetables and kielbasa into a large glass bowl. Pour the entire bottle of Italian salad dressing over it all. Mix so everything is coated and let marinate for at least a half-hour.
- 3. Start your BBQ. If you are using wooden skewers, soak them in water for at least 10 minutes before using.
- 4. Skewer the kielbasa and the vegetable, alternating meat and vegetables however you desire.
- 5. Place on oiled or sprayed grill. Grill for about 10 minutes.
- 6. Basically until your vegetables are done to your liking. Remove and serve. These go nicely with rice or pasta salad
KIELBASA AND FRIED BUTTERED SAUERKRAUT
Add some cornbread and you have one easy weeknight meal. Kielbasa and sauerkraut are great together, but adding the butter makes this recipe extra special. Browning the butter and sauerkraut adds tons of flavor. Make sure to let it get browned ... that's where the flavor is.

- 1. Use a large skillet. Put the butter in and melt it around the pan. When it starts to sizzle put in the whole can of sauerkraut.
- 2. While the sauerkraut is cooking, cut up the kielbasa into 1 inch slices. Put aside.
- 3. Stir the sauerkraut. Once it starts turning brown add the kielbasa.
- 4. Continue to stir, add the spices, and stir some more. The sauerkraut should be golden brown with some darkened areas. Let it cook and stir often (sauerkraut burns easily, so you have to watch it. You only want a little bit darkened)
- 5. Once everything is mixed and the sauerkraut is golden brown turn off the heat and let it sit until the burner is cool. (This will darken the sauerkraut further.) Serve and enjoy.

- 1. Preheat oven to 350 degrees
- 2. Boil large pot of water. Cook pasta for 8-10 min until al dente: Drain
- 3. In a medium skillet over medium high heat cook sausage in oil until browned about 5 min.
- 4. In a large bowl, combine ziti, sausage, stewed tomaotes, sauce, oregano, parsley and pepper. Mix well. Pour into 9x13 dish. sprinkle with bread crumbs, and top with cheese.
- 5. Cover with foil and bake in preheated oven 30 min. Remove foil and bake 10-15 min more till golden.

- 1. Place sauerkraut in a colander. rinse sauerkraut well to get rid of some of the bitterness. Press on sauerkraut to remove some of the water.
- 2. Cook chopped onion with a little bit of the butter until golden in color. Set aside.
- 3. Place kielbasa in a Dutch oven.
- 4. Fill with water until kielbasa is covered. Boil kielbasa until heated through. About 5-10 minutes after the water starts to boil.
- 5. Remove kielbasa to a platter. Slice kielbasa. Cut each slice in half. You can cut them into quarters if you wish. I usually cut each slice in half.
- 6. Bring water to a boil for egg noodles. Cook per directions on the bag. Drain noodles. Place noodles back into the large pot.
- 7. Place burner on low heat. Fold remaining butter into noodles until melted. Add cooked onions, Parmesan cheese, salt, and pepper, Mix well and set aside.
- 8. Add sauerkraut and kielbasa to noodles. Stir well over medium heat until hot. Sprinkle with poppy seeds if desired. Salt and pepper to taste. Serve as a main dish or side dish.
BAKED BEANS WITH KIELBASA
I received the basic recipe from a co-worker and then tweaked it by adding my favorite ingredients. The end result quickly became a family favorite.

- 1. Preheat oven to 350 degrees.
- 2. Add the onions & bell pepper to a small sauté pan with a small amount of vegetable oil. Heat until the onions are almost transparent. Transfer to a large mixing bowl.
- 3. Add the remaining ingredients to the bowl, except the kielbasa, and adjust the amounts to your taste. Add the kielbasa and stir to combine.
- 4. Pour the mixture into a baking dish. Bake for an hour, or until heated through and the sauce is thick. VARIATION: Substitute 1 pound of ground beef for the kielbasa. Cook the onions & peppers with the ground beef. Drain before adding to the bean mixture.
ONE POT MEAL - CABBAGE, KIELBASA, RUTABAGA & MORE

- 1. Before getting started, clean and pare vegetables. Shallot, garlic and jalapeno small dice. Cut the carrots in thirds, *rutabaga in bite sized chunks, small red potatoes can be quartered. *NOTE: Rutabaga is very hard and usually comes covered in wax. Use a sharp paring knife when cutting off the wax. When cutting into chunks, it is easier to start cutting on one side, rather than dead center. I like to cut into wide slices, then lay flat and cut into chunks.
- 2. In a large Dutch oven, over med heat, add the 2 teaspoons of olive oil. To the heated olive oil, add the diced shallot, garlic and jalapeno, cook until the shallot is silvery looking, 3-4mins.
- 3. Add to the pot, carrot and rutabaga chunks, stir to combine and let cook until they start to soften, abt.10mins.
- 4. Add the quartered red potatoes, stir to combine and let cook, maybe 5mins. Stirring often to keep vegetables from sticking. If need be, add about 1/2 cup of water, or broth if desired.
- 5. For the Kielbasa; you can cut the links any way you like. For this recipe I cut each link in 4 chunks. Add Kielbasa to the pot and stir to combine
- 6. For the cabbage; it can be cut in any way you like. For this application I sliced it in wide ribbons, however it can be cut into fourths, if you prefer. Place cabbage on top of vegetables and kielbasa. Season with pepper, and salt if desired, to taste.
- 7. Add about 1 cup of water to pot, place a vented lid on top of pot, turn burner to med low. Simmer, until vegetables are tender, and the kielbasa is nicely cooked through. Making sure the pot does not cook dry, continue to add water or broth as needed.
- 8. Serve this meal with a nice skillet of hot out of the oven cornbread, with butter. Enjoy!
