FUDGY MARBLED CHEESECAKE BROWNIES



Fudgy Marbled Cheesecake Brownies image

Combine two favorite desserts in these super fudgy hybrid bars. A wooden skewer makes the marbled effect easy, but you could also use a toothpick or the probe-end of a digital thermometer instead.

2 sticks (16 tablespoons) unsalted butter, plus more for buttering the foil
1/3 cup unsweetened cocoa powder (not Dutch process)
1/2 teaspoon fine salt
1 3/4 cup all-purpose flour (see Cook's Note)
4 ounces semisweet chocolate, chopped
2 1/3 cups sugar
5 large eggs, at room temperature
12 ounces cream cheese, at room temperature
1 teaspoon pure vanilla extract

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 325 degrees F. Line a 9-by 13- inch baking pan with foil, leaving a 2-inch overhang on at least 2 sides. Butter the foil.
  • Whisk together the cocoa powder, salt and 1 1/2 cups of the flour in a medium bowl.
  • Melt the butter and chocolate, stirring frequently, in a medium saucepan over medium heat. Transfer to a bowl and let cool for 10 minutes. Whisk in 2 cups of the sugar and 4 of the eggs. Add the flour mixture, and stir to combine. Chill for 10 minutes.
  • Meanwhile, beat together the cream cheese, vanilla extract, remaining 1/3 cup sugar and 1 egg with an electric mixer in a large bowl on medium-high speed. Add the remaining 1/4 cup flour and beat until just combined.
  • Use 2 ice cream scoops or large spoons to drop alternating scoopfuls of the 2 batters into the prepared pan. (You will have more brownie batter than cheesecake batter and that's okay; just make sure to disperse the batters as evenly as possible.) Spread a couple of kitchen towels on your countertop. Gently drop the baking pan onto the countertop a few times until the batter evens out (the towels should catch the splatters).
  • Make the swirls: Drag a long wooden skewer through the batter, making sure the skewer reaches down to the bottom of the pan. This will marble the colors in a tie-dye effect. Tap the baking pan on the towels a few more times to smooth out the batter.
  • Bake the brownies, rotating about halfway through, until the top is set and the skewer inserted in the center of the brownies comes out with only a few moist crumbs, about 50 minutes.
  • Let the brownies cool completely in the pan set on a rack. Use the foil overhang to help lift them out of the pan. Cut into 16 pieces. Store in an airtight container at room temperature for up to 3 days.

¾ cup sifted all-purpose flour
1 tablespoon unsweetened cocoa powder

1 pinch salt
6 tablespoons salted butter
5 ounces semisweet chocolate
1 ounce bittersweet chocolate
1 cup packed light brown sugar
2 eggs, lightly beaten
½ large banana, mashed
½ cup chopped toasted walnuts
½ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray the bottom of an 8x8-inch metal baking pan with cooking spray.
  • Mix flour, cocoa, and 1/4 teaspoon plus a pinch of salt together in a bowl and set aside.
  • Melt butter in a medium saucepan over low heat. Add semisweet and bittersweet chocolate to melted butter and stir until smooth. Remove from heat; set aside for 2 to 3 minutes.
  • Meanwhile, mix brown sugar, eggs, and banana by hand until combined, about 1 minute. Add melted chocolate mixture to banana mixture and stir well, about 1 minute more. Mix flour mixture slowly into chocolate, stirring just enough to combine. Fold in walnuts and chocolate chips. Spread batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 35 to 40 minutes. Remove from the oven and let cool in the pan on a wire rack for at least 2 hours before cutting.

I found this recipe on the web a few years ago thought it was wonderful. Anytime I make it to take to school or church everyone is asking for the recipe. It is easy!

1 (23 5/8 ounce) box fudge brownie mix
8 ounces cream cheese
2 tablespoons margarine, softened
1 tablespoon cornstarch
1 (14 ounce) can sweetened condensed milk
1 egg
2 teaspoons vanilla extract
prepared chocolate frosting (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Prepare brownie mix to package directions and spread into well greased 13 X 9 pan.
  • In a bowl beat cream cheese, margarine and corn starch until fluffy. Gradually beat in sweetened condensed milk, then egg and vanilla until smooth.
  • Pour evenly over brownie batter.
  • Bake about 40-45 minutes until lightly browned.
  • Cool completely. Then ice with frosting desired. I don't use frosting, I melt milk chocolate chips with a touch of shortening in a zip lock bag in microwave snip corner off and drizzle over top of brownies.
  • Enjoy!

In 1990, when I entered them at our state fair, Kansas was celebrating the 100th birthday of a famous native son, Dwight Eisenhower. In fact, that occasion was the theme of the fair. Found this in Good Housekeeping Magazine, May, 2006. From Lindell Hughes of Neosho, Missouri. She made this as a young girl for a 4-H competition and her recipe eventually won a prize at the state fair. It is made in a 13" X 9" glass or ceramic baking dish. Cooling and chilling time not included in estimates nor is the extra hour in the oven after baking.

2 cups graham cracker crumbs
1/2 cup butter, melted
1 teaspoon cinnamon
1 1/2 cups sugar
3 (8 ounce) packages cream cheese, softened
3 large eggs
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F. In a 13" X 9" ceramic or glass baking dish, mix crumbs, butter, cinnamon, and 1/2 cup of the sugar until crumbs are moistened. Reserve 1 cup of the crumb mixture. Press remaining mixture firmly onto the bottom of dish.
  • In a large mixing bowl, with mixer on medium speed, beat cream cheese, eggs, vanilla, 1/8 teaspoons of salt, and remaining sugar until creamy, about 3 minutes. Add sour cream; beat 30 seconds or until blended.
  • Pour cream cheese mixture over the crumb crust and spread evenly. Bake 20 minutes. Remove cheesecake from oven and sprinkle with reserved crumb mixture. Return to oven; bake 10 minutes longer. Turn off oven and leave cake inside the oven for 1 hour. Remove the cake and cool completely on a wire rack. Cover and refrigerate until well chilled, at least 3 hours or overnight.

This year my mom brought to Thanksgiving dinner a pan of what the original recipe called "brownies" but looked more like a sheet cake. After taking a taste of it, I decided I had to type up and post the recipe - it is so wonderfully moist, almost gooey, and absolutely delicious!
