BEST BREAD MACHINE BREAD
I found this recipe on Allrecipes.com. It makes the lightest white bread with a flaky crust. I wanted to share this recipe because it makes the best loaf of bread and is foolproof. I just got a breadmaker and I have been trying many recipes. This is by far the ultimate white bread recipe. Being new to bread making I was a bit afraid to mix the yeast like this but it is really simple and should turn out perfect!

- Place the water, sugar, and the yeast in the pan of the bread machine. Mix it up a bit. Let the yeast dissolve and foam for 10 minutes.
- Add the oil, flour and the salt to the yeast.
- Select white bread setting for 1 1/2 pound loaf and press start.
- I use the light crust setting but each machine may be different.
- A little helpful hint. After every loaf of bread I made the kneading paddle would get stuck when I tried to clean it. I was afraid I was going to break it trying to force it off. Now I spray it with vegetable oil spray before each use and it slips off easily for cleaning.

HONEY SPELT BREAD MACHINE BREAD
A delicious whole grain bread which is also great for people who can not tolerate wheat. Spelt flour can be found at Health food stores, I use Vita Spelt and I have them order a twenty-five pound bag for use in all of my baking. I got the original recipe out of a friends "Breadman" cookbook, but I have modified it slightly over the years.

- In a large bowl, dissolve yeast and sugar in warm water. Stir in the brown sugar, shortening, molasses, caraway seeds and salt. Add rye flour and 1-3/4 cups all-purpose flour; beat until smooth. Stir in enough remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; shape into three loaves. Place on greased baking sheets. Cover and let rise until doubled, about 1 hour., Bake at 350° for 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

BREAD MACHINE SWEET ROLLS
These are the rolls my Mom ate the whole time she was pregnant with my brother. No WONDER he weighed 11 lbs. 9 oz when he was born! These sweet rolls are to DIE for! You can make these without the bread machine but I like using the bread machine because it cuts out a lot of the work and the time. Plus it does not take away...

- 1. Place ingredients for dough in machine in order given, covering liquid ingredients with flour and adding yeast last. Upon completion of dough cycle, remove dough, divide into 12-18 equal pieces (depending on how large you want your rolls). For the best way to shape your rolls watch the video.
- 2. Place on lightly greased baking sheet, cover and let rise until doubled. I have baked these on two different kinds of baking pans. A 8 inch round and a 9x13 sheet. The 8 inch round makes them more of a "Pull A Part roll" and you have to bake a bit longer. The 9x13 bakes them all the way around and they come out very nice. I prefer the 9 x 13.
- 3. Beat together egg and milk and brush rolls with wash just before baking.
- 4. Bake in preheated, 350-degree oven for 15 - 20 minutes or until golden brown.
CLASSIC DINNER ROLLS, MADE IN BREAD MACHINE

- 1. While this recipe is EASY enough for a beginner to use successfully please be aware that it is NOT quick to make. Real yeast rolls take time to rise properly. Please use bread machine yeast in this recipe. Be careful to store this yeast properly as it can become "inactive".
- 2. Measure all ingredients carefully, placing everything, except melted butter, in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle. Process until machine beeps that dough cycle is complete.
- 3. Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface. Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. (Dough is ready if indentation remains when touched.)
- 4. Heat oven to 375 degrees. Bake 12 to 15 minutes or until golden brown. Brush tops with melted butter. Serve warm, or cool on wire rack.

- Select the DOUGH cycle and press START.
- Check the dough at least twice during the mixing and kneading phase by lifting the lid to take a peek. The first time, look immediately after the machine starts mixing to ensure the paddles are engaged correctly. Look again 15 minutes into the DOUGH cycle to assess the consistency of the dough. For most recipes, the dough should stick to the side, then pull away cleanly.If your dough is too wet, add flour one tablespoon at a time.Conversely, if the dough is too dry, add one tablespoon of liquid at a time until the dough looks just right. - When the DOUGH cycle has finished, check the dough to be sure it has risen to double the original size. If so, remove the dough to a lightly-floured surface for shaping. If your kitchen is cold and the dough has not doubled in size, leave it in the pan until it does. Then remove it for shaping. If your kitchen is warm, check the size of the dough before the DOUGH cycle completes. The dough may need to be removed and shaped early to avoid overproofing.

- Be sure there are no large visible bubbles, especially on the sides of the rectangle. Press them out or pinch them with your fingers to avoid tunnels in your bread. Also, brush off any excess flour as you go.
- Starting from the short side nearest you, roll the dough into a cylinder. Try not to stretch the dough, but neither should it be too loose. Pinch the seam shut and pull up the ends toward the seam and pinch them closed.
- Turn the cylinder of dough over so you can see the smooth top. Drop it into a lightly greased 8½ x 4½-inch loaf pan or a 9 x 4 x 4-inch Pullman pan. Gently smoosh the dough with your palms to make it level throughout the pan.
- Cover with a cheap shower cap or a tea towel. Let rise until peaking over the edge of the pan.
- About 15 minutes before you think your bread will be ready to bake, preheat your oven to 350˚F.
- Brush the top of the loaf with melted butter. Make one slash down the middle with a sharp knife or a razor blade. Pop into the oven for 30-40 minutes or until the internal temperature is 200˚F.
- Let cool for 5 minutes. Remove loaf from the pan and cool on a wire rack. To avoid squashing the loaf, let it cool at least 30 minutes before cutting.

- Place the water into the bread pan. Spoon in honey then the yeast over the water; allow the yeast to foam for 10 minutes.
- Add oil, butter. Add in flour and salt. Select the dough setting and press start. Remove from machine; cover and let rest 10 minutes.
- Shape into loaves or a boule or a batard; cover with cloth. Place in oven that was turned on to 200* and turned off. Leave the door open first 5 minutes. Let rise 25 minutes.
- Remove from oven and set it to 400*; slash you loaves 2-3 times. When ready place bread inside for 10 minutes; reduce to 350* for 20 minutes. Spray with water a couple of time at beginning of baking. Instant thermometer reads 200*, it's done.

- Dissolve yeast and sugar in 1/2 cup warm water.
- Combine milk, 1/4 cup water, shortening, honey, salt and wheat flour in food processor or bowl. Mix in yeast mixture, and let rest 15 minutes. Add bread flour, and process until dough forms a ball. Knead dough by processing an additional 80 seconds in food processor, or mix and knead by hand 10 minutes. Place the dough in a buttered bowl, and turn to coat. Cover the bowl with plastic wrap. Let dough rise for 45 minutes, or until almost doubled.
- Punch down, and divide dough in half. Roll out each half, and pound out the bubbles. Form into loaves, and place in buttered 9x5 inch bread pans. Butter the tops of the dough, and cover loosely with plastic wrap. Let rise in a warm area until doubled; second rise should take about 30 minutes.
- Place a small pan of water on the bottom shelf of the oven. Preheat oven to 375 degrees F (190 degrees C).
- Bake for 25 to 35 minutes, or until tops are dark golden brown. Butter crusts while warm. Slice when cool.

- 1. Place 1 cup water, bread flour, sugar, salt and yeast into bread machine pan in the order recommended by manufacturer. Select Dough cycle, and press Start.
- 2. When the cycle has completed, place dough in a greased bowl, turning to coat all sides. Cover with a towel, and let rise in a warm place for about 30-40 minutes, or until doubled in bulk. Dough is ready if indentation remains when touched.
- 3. Punch down dough. On a lightly floured surface, roll into a 16x12 inch rectangle. Cut dough in half, creating two 8x12 inch rectangles. Roll up each half of dough tightly, like a jelly roll, beginning at 12 inch side, gently pounding out any air bubbles as you go. Roll gently back and forth to taper end. Place 3 inches apart on a greased cookie sheet. (I fit both on one sheet) Make deep diagonal slashes across loaves every 2 inches, or make one lengthwise slash on each loaf. - 4. Preheat oven to 375°F. Mix egg yolk with 1 tablespoon water; brush over tops of loaves.
- 5. Bake for 20 to 25 minutes in the preheated oven, or until golden brown.

- In a small bowl, dissolve yeast and sugar in 1/2 cup warm water. Let stand until creamy, about 10 minutes.
