- Combine all ingredients except for ribs in a small saucepan; bring to a boil.
- Place ribs in a greased 13 x 9 baking pan; pour sauce over ribs.

SUSAN'S TOP SECRET BARBECUE SOUL RIBS!
I have never shared this recipe with anyone since it was always my signature dish! My family has made this forever and I guarantee you won't find a better barbecue rib dish ANYWHERE!! This is spicy and sweet and creates melt-in-your-mouth delicious BBQ ribs. It can be made completely in the oven or you can do a combo of cooking on the oven/stovetop and finishing it off on the grill for the perfect char look and taste. We do the oven/stovetop/grill method and it's pure heaven!!!!! If you make this in the oven the entire time, the meat will just fall off the bones. I will never eat ribs anyplace else because this recipe has ruined me from every enjoying them at any restaurant. I hope you love them too!

- Preheat the oven to 350 degrees.
- OVEN METHOD.
- Place ribs in a 9x13 inch baking dish with 1/2 cup of water. Cover and bake in the oven for 1 hour. Drain.
- Mix remaining ingredients in saucepan and heat thoroughly.
- Pour over ribs and bake another 1.5 hours, covered.
- GRILL METHOD.
- Place ribs in a 9x13 inch baking dish with 1/2 cup of water. Cover and bake in the oven for 1.5 hours. Drain.
- Mix remaining ingredients in saucepan and simmer while ribs are in oven.
- Pour sauce over the ribs and baste ever piece of meat.
- Grill until completely cooked through and slightly charred (around 30 minutes). Baste throughout cooking process.
- Use excess sauce to pour over ribs to serve.

- 1. at least a half hour and up to four hours before you plan to cook the ribs, peeled and membrane off the back of the ribs and trim any excess of fat. In a small bowl, mix the rib rub and sugar. Season the ribs liberally on both sides with the rib mixture. Refrigerate.
- 2. Prepare the grill for cooking over indirect heat at 300° using apple or cherry wood for flavor. Place the ribs directly on the cooking grate, meaty side up. Cook for one hour. Flip and cook for another 30 minutes. Flip again and cook until they are nicely caramelized and Golden Brown, about another 30 minutes but may vary depending on your grill. Transfer to a platter.
- 3. Lay out two big double layered sheets of heavy duty aluminum foil, each long enough to wrap whole slab of the ribs. Transfer the ribs to the foil, meaty side up. Drizzle half of the honey on each side. Dust each slab with cayenne pepper. Fold the foil up around the ribs into a packet. Before sealing add half of the Apple juice to the bottom of each packet. Seal the packets bubbly, being careful not to puncture the foil with the rib bones. Return to the grill for 45 minutes to one hour to reach your desired degree of tenderness. The best way to determine the doneness is to open the foil after 45 minutes and feel the texture of the meat. It should be very tender.
- 4. Transfer the foil packets to a platter. Raise the temperature of the grill to 400°. Remove the ribs from the foil and return to the cooking grate. Divide the barbecue sauce equally between two bowls, one for brushing on the ribs as they grill and one for serving at the table. Brush the ribs with the sauce and flip. Brush the other side and cook for five minutes. Flip again, brush, and cook for five minutes. Discard the sauce that you've been brushing with. Remove the ribs to a platter. Serve one half slab to each guest with a second bowl of sauce on the side. Serves four.

STOVETOP SMOKED BABY BACK RIBS
Growing up in the South gave me a real soft spot for smoked barbecue, especially fall-off-the-bone baby back ribs. Did you know you can recreate smokehouse favorites at home, right on your stovetop? Smoking gives meat a rich flavor, crispy exterior "or bark" and amazing tenderness. Slather all of that in a four-ingredient homemade barbecue sauce and you have a blue-ribbon winner!

- Soak 8 ounces (about 4 cups) barbecue wood chips in water to cover for 1 hour. Drain and discard the water.
- Prepare the stovetop smoker: Place a 7-quart black Dutch oven on the stovetop (see Cook's Notes). Cut two pieces of heavy-duty aluminum foil long enough to line the bottom of the pot and still come up the sides with overhang. Lay the pieces one on top of the other in a crisscross pattern (like a plus sign). Place the soaked wood chips on top of the foil and spread in an even layer. Fold one piece of foil overhang over the wood chips. Top with a metal steamer basket.
- For the ribs: Whisk together the salt, paprika, cumin, ground mustard, garlic powder, coriander and allspice in a small bowl. Sprinkle generously all over the ribs. Press the spice rub into the ribs with your hands and transfer them to the steamer basket (it's okay if the ribs overlap slightly). Cover with the lid and fold the excess foil over the lid. You can use more aluminum foil to create a tight seal around the lid as needed to keep the smoke in the pot.
- Cook the ribs in the smoker over medium heat until the meat easily pulls away from the bone, about 1 hour.
- Preheat the oven to 300 degrees F and prepare the slather sauce: Whisk the ketchup, date syrup, mustard and Worcestershire sauce together in a small saucepan and cook over medium heat until warmed through, about 5 minutes.
- Once the ribs are smoked, remove and discard the foil around the seal of the pot. Set the steamer basket of ribs on a sheet pan and carefully lift the warm wood chips out of the pot using the excess foil. Allow them to cool completely on a sheet pan before discarding them.
- Place the steamer basket of ribs back into the pot and cover. Roast until the ribs are fall-off-the-bone tender, about 30 minutes.
- To serve, cut between the bones to separate each rib. Pour the slather sauce on top and serve with coleslaw and cornbread.
