HEALTHY RED, WHITE AND BLUE FROZEN POPS



Healthy Red, White and Blue Frozen Pops image

These healthy frozen pops are salute-worthy since they're packed with vitamin C and have even a little fiber (2 grams per pop) thanks to the fresh berries. And the best part is that you can get your red, white and blue fix without using artificial food coloring.

Number Of Ingredients 6

2 cups strawberries, hulled and roughly chopped
3 tablespoons coconut cream
2 tablespoon honey
1/2 cup unsweetened coconut milk
2 tablespoons lime juice
2 cups blueberries

Steps:

  • Put six 3-to 4-ounce ice pop molds in the freezer for 30 minutes.
  • Combine the strawberries and 1 tablespoon each coconut cream and honey in a blender. Puree until smooth. Pour into a liquid measuring cup and set aside. Rinse out the blender.
  • Combine coconut milk, 1 tablespoon each coconut cream and lime juice in the blender. Puree until smooth.
  • Evenly divide strawberry puree between the frozen pop molds. Carefully layer the coconut milk over the strawberry puree. Freeze for 30 minutes. Rinse out the blender.
  • When you are ready to complete the frozen pops, combine the blueberries and the remaining 1 tablespoon each coconut cream, honey and lime juice in the blender. Puree until smooth (see Cook's Note).
  • Remove the frozen pop molds from the freezer and fill with the blueberry puree, and insert the frozen pop mold stick.
  • Freeze until set, at least 4 hours up to overnight. Let sit at room temperature for 5 minutes before unmolding and serving.

6 ounces blueberries (1 cup)
3/4 cup sugar
1 cup low-fat plain Greek yogurt
1 cup heavy cream

Steps:

  • In a small saucepan, bring blueberries and 1/4 cup sugar to a boil over high. Reduce heat and simmer, crushing berries against side of pan with a wooden spoon, until mixture is syrupy, 3 minutes. Transfer to a small bowl and refrigerate until cool, 30 minutes.
  • In a medium bowl, whisk together 1/2 cup sugar, yogurt, and cream until sugar dissolves, about 2 minutes. Pour yogurt and blueberry mixtures, alternating them, into eight 3-ounce ice-pop molds, making 5 or 6 layers in each. With a skewer or thin-bladed knife, swirl mixtures together in an up-and-down motion. Insert ice-pop sticks and freeze until solid, about 6 hours (or up to 2 weeks).

Because of the alcohol amount in the pops they will not freeze to rock solid but they will freeze enough to serve as ice pops, you might also want to consider serving this as a slushy in a fancy glass. Fruity gins are best for this recipe. If you are making these into ice pops you will need 5 ice pop molds to hold about 1/3 cup each and 5 wooden popsicle sticks.
