1 dozen eggs
1/4 cup mayo
1 teaspoon yellow mustard
2 teaspoons chopped pickles
1 teaspoon pickle juice
1 teaspoon sugar
1 teaspoon white vinegar
Hot sauce, such as Tabasco
Salt and black pepper
Paprika, for sprinkling

Steps:

  • Fill a large pot with enough water to cover the eggs, then bring to a boil. Using a slotted spoon gently lower the eggs into the boiling water. Cover and let simmer for 10 minutes. Remove the eggs from the heat and run under cold water until completely cooled.
  • Peel the eggs, cut in half and scoop out the yolks into a medium bowl. Add the mayo, mustard, pickles, pickle juice, sugar, vinegar, hot sauce and salt and pepper to taste, and mix with a fork until well combined.
  • Using a small spoon, fill each egg white half with a generous teaspoon of filling. Lightly sprinkle with paprika to garnish.

Our classic deviled eggs get their kick from mustard and hot sauce. We like the simplicity of the flavor - it's the perfect recipe to use your imagination and add your favorite toppings or mix-ins.

12 large eggs (see Cook's Note)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 to 2 dashes hot sauce, optional
Kosher salt and freshly ground black pepper
Finely chopped chives, for garnish
Smoked paprika, for sprinkling

Steps:

  • Place the eggs in a single layer in a wide saucepan, cover with 1 inch of water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely, then carefully peel them.
  • Dip a clean kitchen towel in a small bowl of warm water. Wipe the blade of your knife with the towel to warm it up and to wet the blade. Slice the eggs in half lengthwise, one at a time, wiping the blade clean between each egg. (The warm, wet blade will give you clean cuts.) Remove the yolks to a medium bowl. Mash the yolks with a whisk. Add the mayonnaise, mustard, hot sauce if using and salt and pepper to taste. Whisk until very smooth. Transfer to a large resealable plastic bag or disposable pastry bag and snip off one corner with scissors.
  • Place the egg whites on a platter. Pipe the filling evenly into the egg whites. Top with chives and a sprinkle of paprika. Refrigerate for 20 to 25 minutes prior to serving.

1 dozen hard-boiled eggs, peeled
1/4 cup mayonnaise
2 tablespoons ranch dressing
2 tablespoons Louisiana hot sauce, such as Frank's RedHot, or more to taste
Kosher salt and freshly ground black pepper
2 tablespoons crumbled blue cheese, plus more for serving
1 stalk celery, finely diced, leaves reserved

Steps:

  • Cut the eggs in half and scoop out the yolks into the bowl of a stand mixer fitted with a whisk attachment; set the whites aside. Add the mayo, ranch and hot sauce. Add salt and pepper to taste and whip until smooth. Fold in the blue cheese and diced celery using a rubber spatula.
  • Using a small spoon, fill each egg white half with a generous mound of filling. Top with the extra blue cheese and reserved celery leaves and serve.

6 medium hard-cooked eggs, peeled, cut in half, and yolks mashed in a bowl
2 Tbsp plus 2 teaspoons mayonnaise
1 tsp dijon mustard
2 Tbsp crumbled blue cheese
salt and pepper to taste
GARNISH
3 Tbsp approx. real bacon bits

Steps:

  • 1. Combine the thoroughly mashed yolks with the mayonnaise and mustard. Add the blue cheese and mash well into the mixture with a spoon. Taste, then season with salt and pepper.
  • 2. Fill the whites evenly with the mixture and garnish each egg half with the bacon bits.
  • 3. 7/6/13 --- Made these for our 4th of July BBQ cookout and they disappeared quickly. Such yummy eggs! Oh, and we used a really yummy blue cheese too. I will get the name and add here.

12 large eggs
2/3 cup mayonnaise
1 1/2 teaspoons tarragon-infused champagne vinegar
3/4 teaspoon dry mustard
2 1/2 teaspoons Dijon mustard
1/3 teaspoon cayenne
1/2 teaspoon curry powder
salt and pepper

Steps:

  • Place the eggs in a saucepan, cover with cold water, and bring to a boil over high heat.
  • Reduce the heat, and simmer for exactly 9 minutes.
  • Pour off most of the water and immediately run cold water over the eggs.
  • Crack the eggshells, roll each egg between your palms and peel under running water.
  • Cut a small sliver off both ends of each egg (so they'll sit without wobbling) and halve them crosswise, forming round cups.
  • Remove the yolks, and mix with the mayonnaise through curry powder with a rubber spatula until smooth.
  • Season to taste with salt and pepper.
  • Mound the yolk mixture into the egg whites.
  • (For fancier eggs, spoon the yolk mixture into a pastry bag with a star tip, and pipe the mixture into the egg whites to form rosettes).
  • Refrigerate until served.

CLASSIC DEVILLED EGGS

Make devilled eggs to serve at a Boxing Day buffet. They're filled with mustard, spring onions, mayo, yogurt and a pinch of cayenne. Top with chives, if you like

6 large eggs
2 tbsp mayonnaise
2 tbsp full-fat Greek yogurt
1 tsp Dijon mustard
2 spring onions, finely chopped
¼ tsp celery salt
pinch of cayenne pepper
chopped chives

Steps:

  • Put the eggs in a pan of just simmering water and cook for 10 mins. Turn off the heat, and leave the eggs to rest in the hot water for 2 mins. Drain, then transfer the eggs to a bowl of ice-cold water and leave to cool. Peel the eggs and slice in half, then scoop the yolks out into a bowl with the mayonnaise, yogurt, mustard, spring onions, celery salt and cayenne pepper. Mash everything together until smooth, then spoon into a piping bag fitted with a plain round nozzle.
  • Pipe the mixture into the hollowed-out eggs, or carefully spoon into the middles using a small spoon. Sprinkle over some chives, if using, then serve.

These are a great Fourth of July appetizer! They're a bit fussy to make, but the colorful presentation is so fun, it's worth it. Spicy horseradish and smoked Spanish paprika give these deviled eggs a bit of a kick. This recipe scales easily; just be sure to go easy on the salt amount and season to your tastes.

3 drops red gel food coloring
⅔ cup water, or as needed
2 drops blue gel food coloring
toothpicks
8 hard-cooked eggs, peeled
2 ½ tablespoons mayonnaise
1 tablespoon hot prepared horseradish
1 teaspoon rice vinegar
⅛ teaspoon salt, or to taste
1 pinch fresh-ground black pepper
¼ teaspoon smoked hot paprika
1 teaspoon snipped fresh chives

Steps:

  • Combine red food coloring and 1/3 cup water in a ramekin or small bowl; do the same with the blue food coloring in a separate ramekin.
  • Gently insert 3 or 4 toothpicks about 1/4-inch deep through the center of an egg and balance it so that one end is dipped in one of the dyes. (Don't pierce the eggs too much, or they'll break after you halve them). Let stand for 5 to 10 minutes, depending upon how strong you like the colors. Dip the other end of the egg in the other dye so the eggs have red, white, and blue bands. Dye the rest of the eggs and let dry on paper towels.
  • Slice colored eggs in half lengthwise and set the whites aside on a serving platter. Push the yolks through a sieve into a bowl or use a potato ricer.
  • Mix mayonnaise, horseradish, rice vinegar, salt, and pepper into the yolks and stir until smooth. Taste and adjust seasoning. Transfer filling into a piping bag fitted with a large star tip.
  • Pipe filling into each egg white half. Place smoked paprika in a fine mesh strainer; hold the strainer over each egg half and tap gently to dust with paprika. Sprinkle deviled eggs with chives. Chill until ready to serve.
