BLUE CHEESE BACON DEVILED EGGS



Blue Cheese Bacon Deviled Eggs image

Mayonnaise and mustard add an irresistible flavor to these classic deviled eggs topped with bacon - perfect appetizers.

12 eggs
1/2 cup mayonnaise
1/4 cup crumbled blue cheese (1 oz)
1 tablespoon finely chopped green onions (1 medium)
1 teaspoon Dijon mustard
1/4 teaspoon freshly ground pepper
1/8 teaspoon salt
3 slices bacon, crisply cooked, crumbled

Steps:

  • In 4-quart saucepan or Dutch oven, place eggs in single layer. Add enough water to cover eggs by 1 inch. Heat to boiling. Immediately remove from heat; cover and let stand 15 minutes. Drain; rinse with cold water. Place eggs in bowl of ice water; let stand 10 minutes.
  • To peel, gently tap each egg on countertop until entire shell is finely crackled. Roll gently between hands to loosen shell. Starting at large end, peel egg under cold running water.
  • Cut eggs lengthwise in half. Slip yolks out into medium bowl; mash with fork. Stir mayonnaise, cheese, onions, mustard, pepper and salt into yolks.
  • Spoon or pipe yolk mixture into egg white halves. Sprinkle with bacon. Cover and refrigerate at least 30 minutes before serving.

  • Mash 6 hard-boiled egg yolks, 2 tablespoons mayonnaise or yogurt, 1 1/2 teaspoons spicy mustard, 1/2 teaspoon lemon juice, 1 teaspoon relish and 1/2 teaspoon paprika. Fill the egg whites with the yolk mixture. Top with chopped chives and crumbled cooked bacon.

1 cup (4 ounces) crumbled blue cheese
2/3 cup mayonnaise
2 tablespoons minced fresh parsley
1 teaspoon hot pepper sauce
1/2 teaspoon celery seed
1/2 teaspoon pepper
Diced celery

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set whites aside. In a large bowl, mash yolks. Add the blue cheese, mayonnaise, parsley, hot pepper sauce, celery seed and pepper; stir until well blended., Stuff or pipe into egg whites. Refrigerate until serving. Sprinkle with celery.

  • Halve eggs lengthwise. Spoon yolks into a bowl. Reserve whites.
  • Mash yolks with fork. Add mayonnaise, honey-mustard, salt and pepper. Fold in bacon and cheese.
  • Fill each half egg white with yolk mixture. Cover and refrigerate until ready to serve.

12 eggs
½ cup mayonnaise
4 slices bacon
2 tablespoons finely shredded Cheddar cheese
1 tablespoon mustard

Steps:

  • Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.
  • Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

  • Hard boil the eggs. In a medium pot with a lid cover the eggs with cold water and bring it to a boil. Once the water starts to boil. Turn the heat off and leave the pot on the heat for 10-12 minutes covered with the lid. Move cooked eggs out of the hot water into ice water to cool the eggs.
  • Cook the bacon. This can be done a few days in advance and it will keep in the fridge for a few days until you're ready to use.
  • We love the "never peel an egg again method" which is basically just cutting directly through the shell of the egg with a serrated edge knife to speed things up and avoid needing to peel the eggs. Carefully spoon the egg whites out of the shell to avoid any egg shells going into the bowl, gently brush excess egg shells away.
