UPGRADED KRAFT MAC N CHEESE
This recipe came from a Kraft newsletter. It's very simple, takes the 'blue box' of mac and cheese and adds just a few ingredients and steps to make it taste a bit more homemade. Note that this calls for the "dinner" Kraft mac n cheese, which is the one with the packet of cheese that you squeeze out, not the standard one with the powdered cheese. If you have to use the standard variety, use 2 boxes and add more milk or sour cream, as it tends to dry out during baking.

Steps:
- Preheat oven to 375°F.
- Prepare Mac n Cheese dinner as directed on package.
- Stir in 1/2 cup of the Cheddar cheese, the sour cream and pepper.
- Spoon into greased 1-1/2 quart baking dish; sprinkle with remaining 1/2 cup Cheddar cheese.
- Combine the melted butter and cracker crumbs and sprinkle over the top.
- Bake at 375 for 20 minutes. Let stand 5 minutes before serving.

BLUE BOX MAC & CHEESE
I cringe when the kids want the boxed mac and cheese because I feel it tastes like chemicals and know it it full of them. Several attempts yielded thick and dry results. 20 tries later I finally got it. This recipe makes a creamy sauce that is smooth and velvety without being gummy. They are used to the thinner sauce, right?

- 1. Cook pasta per box instructions. Don't forget to salt the water.
- 2. Meanwhile, whisk all ingredients but the cheese until blended. When pasta finishes cooking, strain and return to the pan. Pour egg mixture over and stir in the cheese over low heat until melted. Pepper to taste.

- Boil the Pasta. Simple enough. Just boil the water, throw in the pasta, and set the timer for 7-10 minutes (Or whatever amount of time your box says) As soon as your set your timer, do the next step immediately.
- Making the Sauce. The difference between the traditional method any my method is the way the sauce is prepared. Melt the butter in a separate pan over medium-low heat.
- Add the Mystery Powder. After all the butter is melted, pour in the orange mystery powder into the pan and spread it around with your spatula.
- Add Milk. Pour a 1/4th cup of milk over the mixture. It looks a bit gross, but it'll get better when you start stirring it.
- Stir. Start stirring the mixture around, ensure that the mixture is smooth and yellow. You're gonna want to stir it like you're gathering it up in one spot, piling up the coagulating bits of sauce into one area.
- Add Sauce and Stir. Pour in the sauce into the pasta and stir until all the pasta is a bright shade of yellow-orange.
