Upgraded Kraft Mac N Cheese image

This recipe came from a Kraft newsletter. It's very simple, takes the 'blue box' of mac and cheese and adds just a few ingredients and steps to make it taste a bit more homemade. Note that this calls for the "dinner" Kraft mac n cheese, which is the one with the packet of cheese that you squeeze out, not the standard one with the powdered cheese. If you have to use the standard variety, use 2 boxes and add more milk or sour cream, as it tends to dry out during baking.

1 (14 ounce) package Kraft macaroni and cheese (dinner, blue box)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 teaspoon ground red pepper or 1/4 teaspoon black pepper
6 butter flavored crackers, crushed (like Ritz)
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • Preheat oven to 375°F.
  • Prepare Mac n Cheese dinner as directed on package.
  • Stir in 1/2 cup of the Cheddar cheese, the sour cream and pepper.
  • Spoon into greased 1-1/2 quart baking dish; sprinkle with remaining 1/2 cup Cheddar cheese.
  • Combine the melted butter and cracker crumbs and sprinkle over the top.
  • Bake at 375 for 20 minutes. Let stand 5 minutes before serving.

I cringe when the kids want the boxed mac and cheese because I feel it tastes like chemicals and know it it full of them. Several attempts yielded thick and dry results. 20 tries later I finally got it. This recipe makes a creamy sauce that is smooth and velvety without being gummy. They are used to the thinner sauce, right?

1/2 lb macaroni, elbow
2 eggs
8 oz evaporated milk
1/2 tsp hot sauce
3/4 tsp ground dry mustard
10 oz sharp cheddar - shredded - not aged
1 tsp salt
fresh ground pepper

Steps:

  • 1. Cook pasta per box instructions. Don't forget to salt the water.
  • 2. Meanwhile, whisk all ingredients but the cheese until blended. When pasta finishes cooking, strain and return to the pan. Pour egg mixture over and stir in the cheese over low heat until melted. Pepper to taste.

Add the milk and cook over moderately low heat, stirring occasionally, until thickened, about 10 minutes. Add all but 1/4 cup of the blue cheese and stir until smooth and melted. Season with salt and pepper, and keep the sauce warm over very low heat.
  • Meanwhile, in a medium saucepan of boiling well-salted water, cook the pasta until al dente. Drain well and add the pasta to the cheese sauce, stirring well to coat. Stir in the reserved bacon.

  • Stir. Start stirring the mixture around, ensure that the mixture is smooth and yellow. You're gonna want to stir it like you're gathering it up in one spot, piling up the coagulating bits of sauce into one area.
  • Add Sauce and Stir. Pour in the sauce into the pasta and stir until all the pasta is a bright shade of yellow-orange.
