BLT PASTA SALAD

This dish is everything you love about a BLT sandwich in pasta form! This pasta salad recipe is perfect for BBQs, potlucks, and summer parties.

1 12-oz. package bacon
1 16-oz. box fusilli or curly pasta
1 c. mayonnaise
3/4 c. whole milk
1 1-oz. packet ranch seasoning mix
Juice of one lemon
1/4 c. grated parmesan cheese
1/2 tsp. ground black pepper
1 pint grape tomatoes, halved
2 c. thinly sliced romaine lettuce
1/2 c. chopped red onion
1/4 c. chopped fresh herbs, such as dill and/or parsley

Steps:

  • Cook the bacon in a large skillet over medium heat, turning as needed, until the fat has rendered and the bacon is golden and crispy, 8 to 10 minutes. (You may need to cook the bacon in two batches, draining the rendered fat from the skillet between batches.) Let the bacon cool to room temperature, then crumble up into bite-sized pieces.
  • Cook the pasta according to package directions. Drain, rinse with cold water, and let cool.
  • Meanwhile, in a large bowl, whisk together the mayonnaise, milk, ranch seasoning, lemon juice, parmesan cheese, and black pepper. Add the pasta, tomatoes, lettuce, onion, herbs and half of the crumbled bacon to the bowl with the dressing. Gently fold together to coat. Top with remaining bacon and serve.

12 oz sliced cooked bacon*
1 to 2 cups croutons
1 lb 3 cups tomatoes (any kind), sliced
1 medium/large head of lettuce (** chopped, rinsed, dried)
3 Tbsp mayo
4 Tbsp sour cream
1 large garlic clove (pressed)
1/4 cup finely chopped fresh chives
1/8 tsp black pepper
1/4 tsp sea salt (or to taste)
1 to 2 Tbsp milk (or add to desired consistency)

Steps:

  • Make the dressing first to allow the flavors to meld. In a small bowl, combine 3 Tbsp mayo, 4 Tbsp sour cream, pressed garlic clove, 1/4 cup chives, 1/8 tsp black pepper and 1/4 tsp salt (or season to taste). Stir together then add 1 to 2 Tbsp milk, or add milk to desired consistency. Cover and refrigerate until ready to use.
  • In a large mixing bowl, combine lettuce, tomatoes, bacon and croutons. Just before serving, drizzle with dressing (adding it to taste) and toss to combine.

¾ cup mayonnaise
¼ cup milk
1 teaspoon garlic powder
⅛ teaspoon ground black pepper
salt to taste
1 head romaine lettuce - rinsed, dried and shredded
2 large tomatoes, chopped
2 cups seasoned croutons

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.
  • In a blender or food processor, combine mayonnaise, milk, garlic powder and black pepper. Blend until smooth. Season the dressing with salt.
  • Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Toss with dressing, and serve immediately.

2 tablespoons cubed avocado
1 bacon strip, cooked and crumbled

1 garlic clove, minced
1/4 teaspoon dill weed

1/3 cup extra-virgin olive oil, plus a drizzle
6 slices thick cut bacon, chopped
1 clove garlic, grated or minced and crushed with flat blade of a knife
1 tablespoon Dijon mustard
2 tablespoons white balsamic vinegar or white wine vinegar
Salt and freshly ground black pepper
3 tablespoons chopped chives
1 large heart romaine lettuce
1 head Traviso lettuce or radicchio
1 pint multi colored, red or yellow cherry tomatoes

Steps:

  • Heat a drizzle of olive oil in a skillet over medium-high heat and add bacon, cook until crisp then drain on paper towels.
  • In a salad bowl, whisk together the garlic, mustard, vinegar and stream in extra-virgin olive oil to incorporate the dressing, season with salt and pepper and stir in chives. Shred lettuces and add to the bowl. Halve the cherry tomatoes and add to the bowl along with bacon. Toss salad to coat evenly with dressing and serve.

10 slices thick-cut bacon
1/2 pound ciabatta bread, cut or torn into bite-sized pieces
1 pound multi-colored heirloom tomatoes, cut into bite-sized wedges
1/2 head iceberg lettuce, roughly chopped (about 5 cups)
2 1/2 ounces baby arugula, roughly chopped
1/4 cup chopped fresh chives
2 tablespoon chopped fresh dill
1/4 cup mayonnaise
1 teaspoon lemon zest
3 tablespoons lemon juice
3 tablespoons vegetable oil
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with foil.
  • For the salad: Place the bacon on the prepared baking sheet, transfer to the oven and cook for 15 to 20 minutes, flipping the bacon halfway through.
  • Meanwhile, make the dressing. Add the mayonnaise, lemon zest, lemon juice, oil, salt, and pepper to a mason jar, cover and shake to emulsify. Set aside.
  • Remove the bacon to a paper towel-lined plate to cool. Add the bread to the pan with the bacon fat and toss to combine. Transfer the pan back to the oven and cook until lightly golden and crisp, 10 to 15 minutes. When the bacon is cool enough to handle, chop it into large bite-sized pieces and set aside.
  • To assemble the salad, add the tomatoes to the base of a bowl or travel container. Add the iceberg and arugula on top. Sprinkle with the chives and dill. Top the salad with the bacon and ciabatta croutons. When ready to serve, drizzle on three-quarters of the dressing and toss to combine. Serve with extra dressing on the side.
