Skip the bread and enjoy all the flavors you love in a BLT, without all the carbs! So easy and seriously satisfies my BLT cravings. Add some avocado if you wish!

4 slices center cut bacon (cooked and chopped)
1 medium tomato (diced)
1 tbsp light mayonnaise (or whole30 approved mayo)
3 large iceberg lettuce leaves
fresh cracked pepper
1 ounce avocado optional (add 1 point)

Steps:

  • Carefully remove 2 large outer leaves of a head of lettuce. If you rip or tear one, just save it for the 3rd leaf you need to shred. Shred the 3rd leaf and set aside.
  • Dice tomato and set aside in a bowl.
  • Combine diced tomato with mayonnaise and fresh black pepper.
  • Place lettuce cups on a plate, top with shredded lettuce. Add tomato then bacon and roll it like a wrap and dig in!

If you're looking for a quick, refreshing, low carb lunch option, these BLT Lettuce Wraps with Avocado are perfectly delicious and simple!

4 wide lettuce leaves
1 large avocado (cut in half)
2-3 small tomatoes (sliced)
4 slices bacon (cooked)
¼ cup whole milk plain greek yogurt
1 tsp lemon or lime juice
1 Tbsp dried parsley
1 tsp garlic powder
1 tsp onion powder
¼ tsp salt
¼ tsp black pepper
2 Tbsp water

Steps:

  • Arrange your lettuce leaves flat on the counter.
  • Mash up one half of the large avocado and spread 1-2 Tbsp on to each lettuce leaf.
  • Add 2-3 tomato slices to each lettuce leaf.
  • Then add one slice of bacon to each lettuce leaf.
  • Roll each lettuce leaf up however you'd like depending on the shape of the lettuce. You can secure them with a toothpick if you'd like.
  • To make the dressing, add all of the remaining ingredients, including the other half of the avocado, and blend them together in a blender or food processor. Pour the dressing into a small dish for dipping.
  • Enjoy your BLT lettuce wraps with avocado ranch dressing by dipping the wraps in the dressing or drizzling the dressing on top.

16 ready-to-serve fully cooked bacon strips, warmed if desired
8 flour tortillas (8 inches), room temperature
4 cups chopped lettuce
2 cups chopped tomatoes (3 small tomatoes)
2 cups shredded cheddar cheese
1/2 cup ranch salad dressing

Steps:

  • Place 2 bacon strips across the center of each tortilla. Top with lettuce, tomatoes and cheese; drizzle with salad dressing. Fold 1 side of the tortilla over filling and roll up.

½ lb(s) sliced bacon, cooked until crisp
2 heads iceberg lettuce
4 ripe Heirloom tomatoes, cut into ½-inch slices
2 Tbsp snipped fresh chives
1 large avocado, peeled
1 cup mayonnaise
½ cup sour cream
⅓ cup chopped scallions
2 Tbsp lemon juice
Salt and freshly ground black pepper

Steps:

  • In a food processor combine the avocado, mayonnaise, sour cream and lemon juice and mix together until smooth. Add the chopped scallions and season well with salt and pepper.
  • To compose the salad, cut the iceberg lettuce into 1 inch discs. (You should get 2 portions per head of lettuce.) Place the first slice of lettuce on a plate. Spoon 1 tablespoon of the avocado ranch dressing on top of the lettuce. Then arrange the tomato slices on top and season with salt and pepper.
  • Place 2 pieces of crisp bacon on top of tomatoes. Finally, top with another slice of iceberg lettuce. Drizzle more Avocado Ranch dressing on top of salad and sprinkle with chives.
