Blood Orange Smoothie With Grapes and Red Quinoa image

I had never considered using red grapes in a smoothie until I began working on pairing fruit with grains in this week's Recipes for Health. Red grapes and red quinoa are a perfect match. I used blood orange juice as the liquid and sweetened it with a bit of pomegranate molasses. As the mixture was whirling in the blender it occurred to me that a small handful of kale would be welcome; it would darken the color slightly and contribute all that kale has to offer without distorting the sweet/tannic flavor of the drink. The second time I made the smoothie I froze the grapes, which is a great idea. Then you won't have to dilute the flavors with ice.

1/3 cup cooked red quinoa
1 cup red seedless grapes, preferably frozen (6 ounces)
1 cup blood orange juice (or regular orange juice if blood oranges are not available)
1 teaspoon pomegranate molasses
2 tablespoons soaked cashews
Small handful of kale

Steps:

  • Place all of the ingredients in the jar of a blender and blend at high speed until smooth. Serve right away.

16 blood oranges
3/4 cup pomegranate molasses
1/2 cup honey
1 tablespoon orange-blossom water
16 dates, pitted and chopped
Seeds from 1 pomegranate
1/2 cup unsalted pistachio nuts, chopped
1/4 cup chopped mint

Steps:

  • Cut the skin and pith from each orange; then slice each into thirds. Remove and discard the seeds. In a small bowl, whisk together the pomegranate molasses, honey and orange-blossom water.
  • Lay orange slices on a large white platter. Sprinkle with dates, pomegranate seeds and pistachios. Pour the molasses mixture over top, sprinkle with mint and serve.

If blood oranges are unavailable, simply use the sweetest oranges you can find.

4 medium beets
3 tablespoons vegetable oil
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup water
1/4 cup blood orange juice (from about 1 blood orange)
1 tablespoon pomegranate molasses*
1 tablespoon white wine vinegar
1 medium red onion, thinly sliced
3 blood oranges, peeled, cut into1/4-inch-thick slices
1 cup pomegranate seeds (from one 11-ounce pomegranate)

Steps:

  • Preheat oven to 400°F. Place beets in roasting pan and toss with 1 tablespoon oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Add 1/4 cup water. Cover pan with foil; roast beets until knife easily pierces center, about 50 minutes. Cool. Peel beets and cut into 1/3-inch-thick wedges.
  • Whisk orange juice, pomegranate molasses, vinegar, and remaining 2 tablespoons oil in large bowl to blend. Season vinaigrette with salt and pepper.
  • Place onion in small bowl; cover with cold water. Soak onion 1 minute, drain, and squeeze dry in kitchen towel. Add beets, onion, orange slices, and pomegranate seeds to vinaigrette in bowl; toss. Season salad with salt and pepper.

In small saucepan, over medium-low heat, reduce the orange juice to about half. This should yield about 1/3 cup of juice after this process.
  • In clean saucepan, melt the butter and sauté the shallot and garlic for 3-4 minutes, until shallot is translucent. Add the rhubarb and orange juices, balsamic vinegar, pomegranate molasses, chicken stock, orange zest, sage, and ginger. Bring to a boil over medium-low heat. Remove from heat and strain through fine sieve into clean saucepan to remove any pieces of garlic and onion. This will make a clean, smooth sauce. Return mixture to low heat.
  • Mix cornstarch with water to make a paste. Add about 1 tbsp of the hot liquid from the sauce to temper the paste so it will not go lumpy when added to the hot mixture. Add to saucepan mixture and stir or whisk until thickened to consistency desired.

To determine doneness, insert a metal cake tester or the tines of a fork into the center of the thickest part of the fillet for about 5 seconds, then remove it and place it against your lip. If it is pleasantly warm, the salmon is done. (If it is hot, the salmon is overcooked.)
  • Meanwhile, peel and segment any remaining mandarins, and supreme the larger remaining oranges. To do this, cut a slice from the top and bottom of an orange to reveal the flesh. Stand the orange upright and slice away the peel in wide strips, cutting downward, following the contour of the fruit, and removing all the white pith and as little of the flesh as possible. Holding the orange over a medium bowl, use a sharp paring knife to cut along both sides of each segment, releasing the segments and allowing them and the juice to drop into the bowl beneath. Pick out the seeds as you go. Squeeze any remaining juice from the pith into the bowl. Repeat with the remaining oranges.
