BLOOD ORANGE CAPRESE SALAD
A colorful twist on the classic caprese salad of mozzarella, basil and tomato, this one uses blood oranges in place of the tomato and is flavored with pomegranate instead of basil.-Taste of Home Test Kitchen

Steps:
- In a small saucepan, combine the pomegranate juice, sugar and lemon juice. Bring to a boil; cook until liquid is reduced by half. Remove from the heat. Stir in brown sugar. Cool to room temperature., Line six salad plates with lettuce; top with orange and cheese slices. Drizzle with 1 teaspoon oil and 2 teaspoons pomegranate syrup (save remaining syrup for another use). Sprinkle with pomegranate seeds and salt.

- Divide arugula evenly between 2 plates. Place blood orange slices and red grapefruit segments on the arugula and sprinkle pomegranate seeds on top.
- Combine balsamic vinegar, caramel syrup, and sesame oil in a cup; mix to combine. Drizzle dressing over salads. Garnish each salad with almond slices and serve.

Steps:
- Combine arugula and bleu cheese in a large bowl.
- Remove peel and white pith from orange.
- Cut between membranes to release orange segments into bowl with arugula and bleu cheese.
- Pour oil and lemon juice over and toss to blend.
- Season with salt and pepper.
- Enjoy!

CAPRESE SALAD
"Salad of Capri" is a wonderful yet simple salad made by layering seasonal tomatoes, fresh mozzarella and basil leaves. It is traditionally flavored with fine olive oil and a little salt to preserve the pure flavors of its fresh ingredients (my personal favorite). You can also use a lite balsamic vinaigrette instead. Either way, finish with a drizzle of balsamic glaze. You will be amazed with the magic balsamic glaze brings to this dish.

Steps:
- Core and cut tomatoes vertically into 1/4 inches' thick slices. If not pre-sliced, cut fresh mozzarella into 18 equal slices.
- Assemble (using the largest diameter slices first), place one slice of tomatoes on each plate followed by a slice of mozzarella and a basil leaf. Repeat, by adding another slice of tomatoes, a basil leaf and another slice of cheese, basil and tomatoes, etc.
- Spoon a light coating of olive oil and very lightly salt. Finish with healthy drizzle of balsamic glaze.
- Important, use fresh mozzarella in brine sold either at the deli counter or in vacuum sealed packages. Fresh mozzarella is not the same as "Buffalo Mozzarella". True Italian Buffalo Mozzarella is traditionally made from buffalo milk. It is sold as "Mozzarella di Bufala Campana" and is certified and protected. It is also welcomed in this salad.

BLOOD-ORANGE SALAD

- Halve the oranges crosswise and break apart the sections into a bowl, trying not to press out too much juice. Cover and refrigerate for at least 1 hour.
- Just before serving, toss the oranges with red pepper flakes and a pinch of salt, enough for both seasonings to be tasted. Divide among six plates and drizzle with olive oil.
