We make these every Christmas when guests are arriving. It's generally a job that me and Dad do - while greeting people with a drink you can also be knocking out a few freshly cooked blinis, adding simple toppings as you go. Yum.

1 cup of self-raising flour
1 large free-range egg
olive oil
1 cup of semi-skimmed milk
unsalted butter

Steps:

  • 1. For the blinis, place the flour and a pinch of sea salt in a large mixing bowl. Make a well in the centre, crack in the egg and add 1 tablespoon of oil, then beat into the flour. Gradually whisk in the milk until you've got a lovely, smooth batter.
  • 2. Put a large non-stick frying pan on a medium heat and add 1 small knob of butter. 3. Once hot and the butter's melted, add tablespoons of batter to the pan to make your blinis. Cook for 1 minute on each side, flipping over when they turn golden on the bottom and get little bubbles on top. 4. The first batch always helps you figure out your temperature control, so adjust it up or down if needed. 5. Transfer the cooked blinis to a plate, and continue with the remaining batter until it's all used up. Top with your favourite combos, season to perfection and enjoy. A few years ago, a friend of Ina Garten's (The Barefoot Contessa) in Paris threw a party, but there was a problem. While he had taken care of the drinks, the food slipped his mind. Ina stepped in with these crowd-pleasing blini topped with smoked salmon and creme fraiche. It was a brilliant save, brightened even further with some bubbly. 8 tablespoons butter
1/3 cup buckwheat flour
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1 extra-large egg
3/4 cup milk
2 tablespoons milk
1/2 lb smoked salmon, thinly sliced
1/4 cup creme fraiche
fresh dill, for garnish
salmon black caviar, for garnish (roe)

Steps:

  • In a small saucepan, clarify butter by simmering over low heat. Set aside, allowing milk solids to sink to bottom. Pour off clear yellow liquid & reserve; discard white sediment.
  • Whisk together flours, baking powder, salt, egg, milk and 1 Tablespoon clarified butter until smooth.
  • Heat 2 Tablespoons clarified butter in a small skillet and drop batter in 1 Tablespoon at a time.
  • Cook on medium-low heat until bubbles form on top side of blini, about 2 minutes. Flip and cook until golden brown.
  • Repeat with remaining batter.
  • Place 1 piece of smoked salmon on top of each of the blini.
  • Add a dollop of creme fariche, a dill sprig and a sprinkling of salmon caviar, if desired.
  • Serve immediately.

1/2-ounce fresh yeast
1 cup milk, warmed
2 large eggs, separated
1 cup sour cream
4 ounces all-purpose flour
1 teaspoon salt
Oil for frying

Steps:

  • Cream the yeast with a little milk, then add the remaining milk, the egg yolks and sour cream.
  • Sift the flour and salt into a bowl and add the yeast mixture. Stir to make a thick batter. Leave for at least 1 hour in a warm place. The batter should now look bubbly. Stir well. Just before cooking, whisk the egg whites until stiff and fold them into the batter.
  • Heat a little oil in the pan and pour off any excess. Then pour in a tablespoon of batter. Turn the pancake over when it shows bubbles on the top side. Cook lots. One bliny is never enough.

1 cup all-purpose flour
1 pinch salt
1 tablespoon fast rise yeast
2 eggs
1 1/2 cups milk, warm
2 tablespoons unsalted butter, melted
2/3 cup creme fraiche
3 tablespoons fresh dill, chopped
8 ounces smoked salmon, thinly sliced

Steps:

  • In large bowl, mix together buckwheat & all-purpose flour with salt.
  • Sprinkle in yeast & mix well.
  • Separate yolk & white of ONE egg, then set white aside, reserved.
  • Whisk together remaining whole egg AND yolk of first egg, along with warm milk & 1 tablespoon melted butter.
  • Pour egg mixture onto flour mixture & beat well to form smooth batter. Cover with plastic wrap & let rise in warm place 1-2 hours.
  • In large bowl, whisk reserved egg white until stiff peaks form, then gently fold into batter.
  • Preheat heavy-bottom frying pan or griddle & brush with melted butter.
  • Drop tablespoons of batter onto pan, spacing well apart, & cook about 40 seconds, until bubbles appear on the surface.
  • Flip over the blinis & cook for 30 seconds on other side.
  • Wrap blinis in foil & keep warm in low-temperature oven. Repeat with remaining mixture, buttering pan each time.
  • Combine creme fraiche & dill.
  • Serve blinis topped with salmon & dollop of cream.

Give your guests a fresh, light start to a dinner party meal with this glamorous, seasonal starter

1 tbsp wholegrain mustard
1 tbsp red wine vinegar
3 tbsp olive oil
100g mixed garden leaves
200g pack smoked salmon
3 cooked beetroot, finely diced
100g plain flour
1 egg, separated
150ml milk
25g butter, melted
bunch chives, snipped
sunflower oil, for cooking

Steps:

  • For the blini mix, tip the flour into a bowl, then season. Make a well in the middle, then add the egg yolk and half the milk. Whisk until smooth, gradually add the rest of the milk, then the butter and chives. Whisk the egg whites until starting to stiffen, then fold into the batter. To cook, lightly grease a frying pan, then sizzle spoonfuls for 2-3 mins on each side until golden, flipping them over when bubbling. Set aside and keep warm.
  • Make a dressing in a large bowl with the mustard, vinegar and olive oil. Add the leaves, then toss. Serve the salad, salmon and blinis with some beetroot on the side.

3/4 cup buckwheat flour (available at health food stores )
1 teaspoon baking powder
1 teaspoon mustard powder
2/3 cup skim milk
1 1/2 tablespoons snipped chives, plus more for garnish
2 ounces sharp cheddar cheese, shredded (1/2 cup)
salt & freshly ground black pepper
2 large egg whites
4 ounces sliced smoked salmon, cut into thin strips
1/4 cup nonfat sour cream

Steps:

  • In a medium bowl, whisk the buckwheat flour, baking powder and dry mustard. Whisk in the milk until smooth. Add the 1 1/2 tablespoons of chives and the cheddar and season the batter with salt and pepper.
  • In another bowl, beat the egg whites with a pinch of salt until firm peaks form. Whisk one-fourth of the whites into the batter. Fold in the remaining whites.
  • Heat a griddle over moderate heat until very hot and spray with vegetable oil spray. Spoon 1-tablespoon mounds of batter onto the griddle and cook until bubbles form around the edges of the blini, about 2 minutes. Flip and cook the blini for about 30 seconds longer.
  • Transfer the blini to a platter and top with the smoked salmon and a dollop of sour cream. Garnish the blini with chives and serve right away.

Seems gourmet but it isn't nearly hard enough to qualify! It's easy. really tasty and very impressive as an hors d-oeuvres. As you can probably guess from my other recipes, I love salmon and this one showcases it nicely. You really need to use good quality, fresh ingredients for this one, even though you use pancake mix! You can make your own pancakes if you wish, but there really is not a big difference - you just need to make sure that you get 30. Enjoy!

14 ounces smoked salmon, sliced and then minced (Atlantic salmon preferred)
1/4 cup shallot, finely diced
1 tablespoon fresh chives, finely sliced
1 tablespoon fresh parsley, finely minced
2 tablespoons extra virgin olive oil (very good quality)
1 teaspoon capers, finely minced
1 teaspoon lemon zest, finely grated
1 teaspoon lemon juice, freshly squeezed
salt and pepper
1 cup pancake mix, not flavoured (the kind that only needs water)
3/4 cup water
2 tablespoons fresh thyme, chopped
1/4 cup sour cream
2 tablespoons chives

Steps:

  • Combine smoked salmon, shallots, chives, parsley, olive oil, capers, lemon zest and juice. Lightly season with salt and pepper.
  • Combine pancake mix and water and fresh thyme; season to taste with salt and pepper. Stir until just combined. Heat a skillet over medium heat. Make 30 silver-dollar (toonie) sized mini pancakes with about 1 tablespoon batter; cook until golden brown on both sides.
  • Place blinis on a platter, top each with a rounded teaspoon of salmon mixture; Garnish each with a small dollop of sour cream and fresh chives. Serve at room temperature.

This is the blin recipe my great grandomother made for me as a young child. I've had blini topped with caviar, smoked salmon, lemon juice and powdered sugar, maple syrup, and my favorite, blackberry jam and sour cream. Just double the recipe up depending on how many blin you want to make.

1 cup flour (sifted recommended, but not necessary)

  • whisk in vegetable oil.

1/3 cup light sour cream
1 tablespoon minced fresh chives
1 ear shucked corn (about 1 to 1 1/2 cups)
1/3 cup flour
2 tablespoons yellow cornmeal (fine ground)
1/2 cup milk
1 large egg yolk
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large egg white
cooking spray
4 ounces smoked salmon, cut into 24 strips (2-inch wide)
chopped fresh chives (optional)

Steps:

  • Combine sour cream and chives in a small bowl. Cover and chill.
  • Cut kernels from ear of corn. Scrape remaining pulp from cob using the dull side of a knife blade. Discard cob. Set corn aside.
  • Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and cornmeal in a medium bowl; make a well in the center of the mixture. Combine milk and egg yolk in a small bowl, stir well with whisk. Add milk mixture to flour mixture, and stir with a whisk until just moist. Stir in corn, salt, and pepper.
  • Place egg white in a bowl, beat with a mixer at high speed until foamy. Gently fold egg white mixture into corn mixture.
  • Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Spoon 1 tbls. batter per blini onto pan, spreading to about 2" diameter. Cook 2 minutes or until tops are covered with bubbles and edges begin to set. Carefully turn blinis over, cook for 1 more mintue. Transfer blinis to a serving platter, and arrange in a single layer; keep warm. Repeat process with the remaining batter. Top each blini with with 1 piece salmon and 1 teaspoons sour cream mixture. Garnish with chopped chives, if using.
  • Makes 8 servings.

1 3/4 cups lukwarm milk
3 cups all-purpose flour
2 eggs, separated

  • Mix the yeast and warm milk and let sit for 10 minutes to bubble. Stir in the flour, egg yolks, and salt. Whisk the egg whites in a separate bowl until you get soft peaks then fold them into the batter.
  • Heat a large skillet with some vegetable oil over a medium-low heat. Dollop heaped tsps of batter into the skillet to make tiny pancakes. Cook until golden underneath then flip and cook on the other side until golden.
  • Top each blini with a smear of cream cheese, a small pieces of smoked salmon and a sprig of dill. Sprinkle on some fresh cracked black pepper too, if desired.

1 cup whole milk
5 tablespoons unsalted butter, divided
1/2 cup all-purpose flour
1/3 cup buckwheat flour
4 teaspoons sugar
1/4 teaspoon kosher salt
1 1/4 teaspoons active dry yeast
2 large eggs, lightly beaten
4 ounces crème fraîche
4 ounces smoked salmon
2 ounces caviar of your choice
minced chives

Steps:

  • Place milk and 3 tablespoons butter in small saucepan. Stir over low heat just until butter melts. Meanwhile, whisk together both flours, sugar, salt, and yeast in a medium bowl. Pour warm milk mixture into dry ingredients and whisk until smooth. Cover with plastic wrap and let rest at room temperature until doubled in volume, 1½-1¾ hours.
  • After resting, batter will be bubbly and lofty. Whisk to deflate; then stir in beaten eggs just to incorporate-the texture should be silky. Meanwhile, set a skillet over medium heat and add a tablespoon of butter. Working in batches, pour 2 tablespoons batter for each blini onto skillet, spacing apart. Cook until bubbles form on top and they begin to pop, about 1½ minutes. Turn blinis; cook until golden brown on bottom, another 1½ minutes (add more butter to the pan as you need it). Transfer blinis to a serving platter. Tent with foil to keep warm while you cook remaining blinis. Makes approximately 12 blinis.
  • Assembly: Serve blinis with a dollop of crème fraîche, smoked salmon, and caviar-the more the better!
