Open-Faced Walnut & Pear Sandwich with Blue Cheese image

Creamy blue cheese is slathered over toasted rye bread and topped with juicy pear slices, peppery arugula and tangy balsamic glaze to make this open-faced pear sandwich.

2 tablespoons walnuts
4 slices of rye bread
2 tablespoons vegetarian blue cheese
Handful of arugula
1 small pear (sliced)
1 teaspoon balsamic glaze (or standard balsamic vinegar)

Steps:

  • Toast the walnuts in a dry frying pan over a medium heat, tossing often, until the nuts are golden and fragrant, then allow them to to cool. Transfer the nuts to a small blender or food processor and whiz until fine, or crush them in a mortar and pestle.
  • Toast the bread and allow it to cool, then spread it with the blue cheese. Top with arugula and slices of pear. Drizzle with a little balsamic and sprinkle with the walnut dust. Enjoy immediately.

We really enjoyed these scrumptious tea sandwiches. They're slightly salty and creamy from the Bleu cheese spread. The mildly sweet and crisp slices of pear are a tasty contrast to the creamy filling. They are perfect sandwiches for parties or afternoon tea.

4 Tbsp cream cheese, room temperature
2 Tbsp Bleu cheese
butter, softened
6 slice bread, thin, rye, pumpernickel or any multi-grain
1/2 c walnuts, chopped very fine, and toasted
2-3 pears, ripe and thinly sliced into 12 pieces

Steps:

  • 1. Spread each slice of bread with a thin layer of butter.
  • 2. Mash cream and Bleu cheese together in a bowl until combined well. Spread equal amounts of cheese on 3 slices of bread.
  • 3. Sprinkle with a heaping tablespoon of walnuts over cheese.
  • 4. Place 4 thin slices of pear on top of cheese and nuts.
  • 5. Cover with remaining bread slices. Press down firmly.
  • 6. Remove crusts and cut into 4 pieces.
  • 7. Serve immediately or wrap well and chill until tea time.

  • Mix together blue cheese, pear, and cream. Season to taste with pepper. Spoon mixture into cooled shells.

Classic combination of ingredients, cheeseboard favourites transformed in salad form with the addition of pepper rocket lettuce!Ideal to serve as a starter, light lunch or as a side for a main that's not too rich.We go light on the dressing here because the blue cheese and juice from the pears act as part of the dressing. 1 1/2 - 2 pears (, any type, juicy and ripe (or nashi pears or sweet apples))
3/4 cup walnuts (, whole (sub almonds, pecans))
120g / 4oz rocket/arugula lettuce
120g / 4 oz roquefort, gorgonzola, stilton or other good blue cheese, (creamy but can be crumbled into chunks (Note 1))
1 1/2 tbsp Dijon mustard
1 1/2 tbsp honey
1 1/2 tbsp cider vinegar
1 1/2 tbsp vegetable or olive oil
1/4 tsp salt
1/8 tsp black pepper

Steps:

  • Dressing: Shake Dressing in a jar.
  • Pears: Halve then scoop out core. Place cut face down and slice into 3mm / 0.12" slices. (Note 2)
  • Walnuts: Spread on tray and toast in a 180°C/350°F oven for 8 minutes or until they smell nutty. Leave some whole, break some in half with hands.
  • Dress rocket: In a large bowl, toss rocket with 2 tbsp Dressing.
  • Assemble: Pile 1/3 rocket on a platter. Scatter with 1/3 pears, 1/3 walnuts, 1/3 blue cheese crumbled into small chunks. Repeat twice more. Drizzle with remaining Dressing just before serving.

4 firm, ripe pears , sliced lengthways into 1cm slices
2 tbsp olive oil
1 tbsp white wine vinegar
1 tbsp honey
250g bag mixed salad leaf
150g pack blue cheese , crumbled
crusty bread , to serve (optional)

Steps:

  • Put the pears in a bowl and drizzle with 1 tsp of the oil. Heat a griddle pan, then cook the pears, in batches, for 1 min on each side. Set aside to cool.
  • Mix the remaining oil, vinegar and honey. Toss the pears, leaves and cheese, divide between 4 plates and drizzle with the dressing. Serve with bread, if you like.

This is a recipe I clipped from a cooking magazine over 20 years ago. I suppose the salad is similar to others posted but the dressing is slightly different. Pear nectar can be found amongst the canned juices at your grocer. Buy a good crumbled blue cheese and feel free to cheat and buy pre-sweetened nuts. Enjoy this refreshing salad. Cook time is sugar coating the nuts.

3 medium pears, semi-firm but ripe, peels on
2 tablespoons lemon juice
salad greens, enough for 8 servings
1/2 cup blue cheese, crumbled
1 cup walnuts, candied (see recipe below)
1/2 cup sugar
2 tablespoons butter
vinaigrette dressing (recipe below)
1/3 cup white wine vinegar
1/3 cup salad oil
1/3 cup pear nectar
1 teaspoon dijon-style mustard, sub. grainy brown
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Halve and core the pears. Slice thin, brush with lemon juice to prevent browning. This may be done up to 60 minutes ahead.
  • To arrange the salads: line plates with salad greens.
  • Fan pear slices atop each serving.
  • Sprinkle with some blue cheese and candied nuts.
  • Drizzle with dressing. Serve extra on the side.
  • CANDIED WALNUTS / PECANS.
  • Line a baking sheet with foil. Butter or spray with a nonstick oil.
  • In a heavy skillet, over medium heat, combine: 1 C walnuts, 1/2 C sugar and 2 T butter.
  • Cook until sugar starts to melt, DO NOT stir. Reduce heat to low and cook 'til sugar is golden brown. Stirring occasionally.
  • Remove from heat and pour onto prepared baking sheet. Cool completely. Break into clusters.
  • PEAR NECTAR VINAIGRETTE.
  • In a screw top jar, combine:
  • white wine vinegar, oil, pear nectar, Dijon mustard, salt, pepper.
  • Cover and shake well.
  • Store in refrigerator for up to one week.
  • Shake before serving.
  • Makes about 1°C.

I used mixed greens, pears, honey and bleu cheese-all from Oregon sources in this salad. For alternate versions, try two different varieties of pears. For example, I tested Forelle and Anjou pears. Rogue Creamery artisan cheesemaker supplied the bleu cheese (in particular their Smokey Blue), too. A light dressing tops it off. From a local source. Makes 6 small dinner salads. 2 medium pears, thinly sliced (any variety, read intro)
1/4 cup chopped walnuts, toasted

  • Pour the dressing over the the greens and pears and toss .

1 pre-baked pizza crust
2 cloves garlic, minced
1 tablespoon Dijon mustard
2 sprigs fresh rosemary, chopped
¼ cup white wine vinegar
½ cup olive oil
¼ cup crumbled blue cheese
salt and pepper to taste
¼ cup crumbled blue cheese
⅓ cup shredded mozzarella cheese
2 pears - peeled, cored and sliced
¼ cup toasted walnut pieces

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the pizza crust on a pizza pan. Bake in the preheated oven until just crisp, about 5 minutes.
  • Meanwhile, combine the garlic, Dijon mustard, rosemary, and vinegar in a food processor or blender. Turn on, and drizzle in the olive oil slowly until the dressing has thickened. Quickly pulse in 1/4 cup of blue cheese; season to taste with salt and pepper.
  • Spread the vinaigrette over the pizza crust. Sprinkle 1/4 cup of blue cheese evenly over the crust, followed by the mozzarella cheese. Arrange the sliced pears over the cheese, and sprinkle with the toasted walnuts.
  • Bake in the preheated oven until the cheese has melted and is bubbly, 7 to 10 minutes. Let cool slightly before cutting into slices.
