- Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt. Spoon 1 tablespoon into each cup. Bring pastry corners together and pinch to seal. In a small bowl, beat remaining egg. Brush over pastry edges. Bake until puffed and golden brown, about 20 minutes.

- Preheat oven to 350 degrees. Butter a shallow 1-quart baking dish.
- In a large bowl, combine spinach, half-and-half, eggs, 1 cup Gruyere, 2 teaspoons salt, 1/8 teaspoon pepper, and nutmeg; stir to combine. Spread evenly in prepared baking dish, and top with remaining 1/2 cup Gruyere. Bake until set and top is golden brown, 30 to 35 minutes.
CHEESY SPINACH PUFF PASTRY BITES
When I travel home to be with my nieces and nephews, my brother always wants me to cook new things for the kids. What I've done in this recipe is take the crowd-pleasing creamy spinach dip that I make and pair it with puff pastry. Because what kid (or adult!) doesn't love puff pastry?

- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Heat a large nonstick skillet over medium-high heat. Add the bacon and cook until crisp, 5 to 7 minutes. Transfer the bacon to a paper towel-lined plate with a slotted spoon, leaving the bacon fat in the pan. Set the bacon aside.
- Return the skillet to medium-high heat and add the onion. Cook, stirring occasionally, 1 minute. Stir in the garlic. Add the spinach and cook until the spinach is wilted, 2 to 3 minutes. Stir in the salt and pepper and set aside.
- Stir 1 egg, the cream cheese, Parmesan, feta and chives together in a large bowl. Stir in the spinach mixture and the bacon. Set aside.
- Dust a work surface with flour and roll out the pastry with a rolling pin to smooth out any creases. Cut into 4-inch pieces; you should get about 9 squares. Place the squares on the prepared baking sheet.
- In a small bowl, beat the remaining egg together with a splash of water. Using a pastry brush, brush two adjacent sides of each square with the egg wash. Place a heaping tablespoon of filling into the center of the square. Fold the dough over the filling, forming a triangle, and crimp the edges together. Place the bites in the fridge for 10 to 15 minutes. Remove from the fridge and brush the tops with the remaining egg wash. Bake until golden brown and puffed, 15 to 20 minutes. Let cool 5 to 10 minutes before eating.

Got this recipe from a friend. They are one of my favorite appetizers. Cook time is an estimate because she said she doesn't pay that much attention. Chill time is 1-2 hours.

Steps:
- In a saucepan, add the onions and spinach; cook according to the directions on the package of spinach; drain and press out liquid.
- In a mixing bowl add the spinach, eggs, cheeses, dressing, margarine, garlic powder, peppers, and Worcestershire sauce; stir to combine.
- Add the muffin mix; stir to combine.
- Cover and refrigerate for 1-2 hours.
- Shape mixture into 1-inch balls and place on a very lightly greased baking sheet.
- Bake at 350° for 10-15 minutes (estimate).
SPINACH & GOAT'S CHEESE PUFF

- Heat oven to 220C/200C fan/gas 7. Unroll the pastry and put in a large Swiss roll tin. Trim any excess pastry at either end if necessary. Prick all over with a fork, then bake for 10 mins.
- Use a hand blender to blitz the spinach with the eggs, milk, half the goat's cheese and nutmeg, until the spinach is chopped but not puréed. Take the pastry from the oven and press down the centre, as it will have puffed up. Spoon on the filling, scatter with the rest of the cheese, then bake for 15 mins until the filling is set.

- Bring butter and water to a boil in a saucepan.
- Take pan from heat; add in flour and pepper, beating with a rubber spatula or wooden spoon until mixture leaves the sides of the pan and forms a smooth ball.
- Add in eggs, one at a time, beating well after each addition.
- Stir in cheese; let mixture stand for 15 minutes.
- Drop dough by rounded tablespoonfuls 2 inches apart onto buttered baking sheets.

- Drain spinach; squeeze dry with paper towels.
- In 3-quart saucepan over medium heat, heat milk, margarine or butter, and salt until margarine melts and mizture boils.
- Remove saucepan from heat.
- With wodden spoon, vigorously stir in flour all at once until mixture forms a ball and leaves side of saucepan.
- Add eggs to flour mixture, 1 at a time, beating well after each addition, until mixture is smooth and satiny.
- Stir in Gruyere and parmesan cheeses and spinach.
- If not baking right away, cover surface of mixture with plastic wrap and refrigerate.
- Preheat oven to 375 degrees.
- Lightly grease 2 large cookie sheets.
- Drop batter by level tablespoons onto cookie sheets, about 1 1/2 inches apart.
- Bake 15 to 20 minutes until cheese puffs are golden brown.
- Arrange appetizer and garnish on platter; serve immediately.
BLEU CHEESE AND SPINACH PUFFS
Submitted for RSC #11. These decadent mini souffles make a great appetizer or are delicious alongside a steak or roast. I posted these in a reduced fat version, but if you want to make them full fat just 2 eggs for the egg beaters, and regular evaporated milk for the fat free type.

- Preheat oven to 425°F
- In a nonstick skillet, sweat the shallot until translucent, and add spinach and stir occasionally until wilted. Add in the white wine and cook until its evaporated off. Take off the heat and set aside while you prepare the batter.
- In your blender, whip the eggbeaters until frothy, add in the egg and repeat. Add evaporated milk and spices and blend until well mixed and frothy.
- Add the flour 1/4 cup at a time and pulse a couple times to incorporate. Do not overmix our your puffs will turn out tough.
- Grease 9 holes of a muffin pan with butter or cooking spray and put in the oven for 1 minute to heat up.
- Distribute the batter evenly between the 9 holes of the muffin pan, then divvy up the spinach mixture and bleu cheese on top of the batter.
- Bake for 20 minutes or until puffed, golden and cooked through. Immediately remove from tin to a cooling rack.
- These may be enjoyed warm or at room temperature.
