Creamy Cilantro-Lime Sauce( recipe follows
2&1/2 pounds fresh skinless salmon fillets, each about 1&1/2 inches thick
Rub
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon chili powder
3/4 teaspoons kosher or regular salt
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 cup red jalapeno pepper jelly
1/4 cup snipped fresh basil leaves
2 tablespoons fresh lime juice
1(10 oz) package plain couscous
1/4 cup finely chopped yellow bell pepper
Garnish; Basil sprigs and or lime wedges, if desired

Steps:

  • 1) Prepare Creamy Cilantro-Lime Sauce,(recipe below).Cover and refrigerate until ready to serve. 2) Prepare Salmon Scallops. Rinse fish and pat dry. Cut thickest parts of salmon fillet into rounds using a 1&1/2 to 2-inch round metal cookie cutter,(16-20 scallops). Place in large glass bowL,(freeze remaining salmon pieces for a later use). 3) Prepare the Rub. Combine oil,garlic,chili powder,salt, cumin and cayenne pepper in small bowl. Spoon rub evenly over salmon scallops gently rubbing with your fingers until well coated. Evenly thread salmon scallops through their sides onto each of 4-12 inch long metal or bamboo skewers,(if using bamboo,soak for 30 minutes in cold water). Let stand 30 minutes or overnight, if desired)). 4) Prepare Jalapeno-Basil Glaze. In small saucepan combine pepper jelly,basil, and lime juice. Cook and stir over low heat until jelly melted. Remove from heat. 5) Prepare couscous according to back of package directions. 6)If using charcoal grill, grill skewers on greased rack of an uncovered grill directly over medium coals for 8-12 minutes or until salmon scallops are opaque, turning once and brushing occasionally with some of the sauce. If using gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above. *To serve: Reheat glaze mixture. Divide warm couscous evenly between 4 large serving plates.Top couscous with a salmon skewer.Drizzle some of the remaining glaze over all.Artfully top with a dolop of creamy cilantro-lime sauce. Top each with a scatter of chopped yellow bell pepper.Garnish with fresh basil sprigs and or lime wedges for spritzing, if desired. Makes 4 servings. Creamy Cilantro-Lime Sauce. In small bowl,combine 1/4 cup mayonnaise,1/4 cup sour cream,1 tablespoon minced fresh cilantro leaves and 2 teaspoons fresh lime juice.

1/2 cup finely diced shallots
1 large or 2 medium oranges, zested
Olive oil
3/4 cup orange juice
1 3/4 cups chicken broth
2/3 cup dry white wine
2 habanero peppers, cut into quarters, stems and veins removed
1/4 cup orange liqueur (recommended: Grand Marnier)
9 large sea scallops rinsed and dried
Salt and freshly ground black pepper
Chopped chives and orange slices, for garnish

Steps:

  • Cook shallots and zest in 2 tablespoons olive oil over medium-high heat until they begin to brown. Add orange juice, broth, wine and habanero slices. Cook over high heat to reduce. Taste often and remove and discard habaneros when desired heat is achieved. When habaneros are removed, add the liqueur.
  • Brush scallops with olive oil and season with salt and pepper. Sear scallops on a grill pan to a slightly under-cooked state, about 3 1/2 minutes per side but watch them closely. Remove from grill pan and add scallops to the thickened orange glaze, tossing to coat well until scallops are cooked to desired doneness.
  • Smear a clean plate with orange glaze top with 3 scallops. Drizzle scallops with more glaze and garnish with chives and orange slice.

2 pounds salmon middle cut, boned, or fillets
6 ounces butter
8 scallops, without roe
3 generous teaspoons wholegrain mustard
4 level teaspoons dried dill wood, or 2 teaspoons each of dried and fresh dill
Salt and freshly ground pepper
10 ounces fresh spinach or rocket (arugula)

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the salmon piece or fillets skin-side up in a shallow ovenproof dish. Cook in the oven for 15 minutes.
  • Meanwhile gently melt the butter in a small saucepan. Remove from the heat and stir in the mustard and dill. Season to taste. Remove the salmon from the oven and arrange the scallops round it, baste with the mustard sauce.
  • Return to the oven for a further 5 minutes. Slice the salmon quite thickly and serve on top of the spinach rocket and spoon over the mustard butter.

¼ cup rice vinegar
¼ cup olive oil
¼ teaspoon Dijon mustard
salt and freshly ground black pepper to taste
1 tablespoon vegetable oil
12 large fresh sea scallops
1 pinch sea salt
1 pinch cayenne pepper
2 oranges, peeled and cut in between sections as segments

Steps:

  • Place jalapeno, rice vinegar, olive oil, and Dijon mustard in a blender. Puree on high until mixture is completely liquefied, 1 to 2 minutes. Season with salt and black pepper to taste.
  • Season scallops with sea salt and cayenne pepper. Heat vegetable oil in a skillet over high heat. Place scallops in skillet and cook until browned, 2 to 3 minutes per side. Transfer to a plate. Garnish scallops with orange segments and drizzle jalapeno vinaigrette over the top.

1/2 teaspoon salt
1/4 teaspoon pepper
2 lbs sea scallops
2 tablespoons olive oil

Steps:

  • Combine flour, 1/2 teaspoon salt, and pepper in a pieplate; dredge scallops in flour mixture.

6 tablespoons butter
12 sea scallops
Salt and pepper
1/4 cup chopped shallots
1 teaspoon slivered garlic
Pinch crushed red chili flakes
1/2 cup dry white wine
3/4 cup heavy cream
20 basil leaves, cut in thin ribbons

Steps:

  • Put 4 tablespoons butter in skillet over medium-high heat. When foam subsides, add scallops; sprinkle with salt and pepper. Brown on both sides, adjusting heat so they brown nicely; they need not cook through. Remove them to a plate.
  • Turn off heat, cool pan a bit and wipe out. Add remaining butter over medium heat. When it melts, add shallots, garlic, chili flakes and a little more salt and pepper. Cook about 2 minutes, or until shallots soften.
  • Add wine, raise heat a bit, and let bubble away for a minute or so until reduced by about half; add cream and repeat. When liquid is thick, return scallops and juices to pan.
  • Cook for about a minute, stirring in half the basil, until scallops are just firm. Taste and adjust seasoning, transfer to small bowls or plates with a bit of sauce, garnish with remaining basil, and serve.

Spicy butter adds instant flavour to grilled salmon. This is a clipping from a decade old magazine. **Edit June 24/07 - after reading some of the reviews I had to revisit this recipe and try it grilled and it IS so much better that way. Add a little bit of garlic powder and salt & pepper to it first then grill about 5 to 6 minutes per side (Depending on how thick it is) Thanks for the tips - this has made a good recipe great :)

1 teaspoon gingerroot, minced
1 1/2 teaspoons garlic, minced
2 large jalapeno peppers, halved & seeded
1/4 cup fresh cilantro leaves, loosely packed
1/2 cup butter, softened
1 1/2 lbs fresh salmon fillets

Steps:

  • For Jalapeño Butter:.
  • Combine ginger, garlic and jalapeño peppers in a blender or food processor. Process until finely chopped. Add cilantro and process until combined. Stir in butter.
  • On a piece of plastic wrap, shape butter into a 6 inch long log. Seal and chill until serving time.
  • Sprinkle salmon with salt & pepper. Wrap salmon in foil and place on grill. Grill for 10 to 12 minutes, flipping package over half way. Fish is done when it flakes easily when tested with a fork.
  • To serve, place a 3/4 inch slice of jalapeño butter on top of each serving of salmon.
  • Seal remaining butter and freeze up to 3 months.

12 jumbo sea scallops
1/2 cup orange juice
4 tablespoons butter
1 teaspoon salt
1 teaspoon pepper
1 teaspoon minced garlic

Steps:

  • In a small sauce pan add the 3 Tbsp of butter, orange juice, 1/2 tsp of salt, 1/2 tsp pepper and minced garlic then bring to boil for 2 minutes then reduce the heat and let it simmer for about 10 minutes stirring occasionally. Sit aside.

¼ teaspoon salt

1/4 cup red bell pepper, diced
1/4 cup green onion, chopped

1 garlic clove, minced
2 tablespoons soy sauce

16 large sea scallops

Steps:

  • Mix peaches, red bell pepper, green onions, 2 tablespoons lime juice, chopped cilantro, jalapeño, 1 teaspoon ginger, and garlic in small bowl to blend. Season with salt and pepper (this is the salsa, so you can make ahead and chill in the fridge).
  • Mix soy sauce, sesame oil, and remaining ginger in medium bowl to blend.
  • Add scallops and stir to coat. Let stand 30 minutes at room temperature, turning occasionally.
  • Prepare barbecue (I used my Foreman grill here, too!). Combine honey and remaining 1 tablespoon lime juice in another small bowl. Thread 4 scallops on each of 4 wooden skewers, dampened first to prevent burning.
  • Sprinkle with salt and pepper. Grill scallops until just opaque in centers, brushing occasionally with honey glaze, about 2 minutes per side.
  • Spoon salsa into center of platter. Remove scallops from skewers and arrange atop salsa. Sprinkle with cilantro leaves and serve.
