BLACKENED SALMON FAJITAS

Steps:
- Coat the salmon in 1 tbsp oil and the fajita spice mix. Add 1 tbsp oil to a frying pan and fry for 8 mins until blackened.
- Mash the avocados with a fork, season and squeeze over the juice of 1 lime. Serve the salmon in large flakes with the tortillas, avocado, salsa and the other lime, cut into wedges.

I love spicy Cajun foods. I love salmon. This recipe combines them both into one delicious sandwich.

Steps:
- Heat a heavy skillet over high heat for 15 to 20 minutes.
- Mix mayonnaise with 1-2 teaspoons of Cajun spice.
- Taste, add salt, pepper or more Cajun spice as necessary (depending on your preference); put aside till later.
- Lightly oil both sides of the salmon and sprinkle with the remaining Cajun spice (the more you add, the hotter it becomes, so heads up).
- Place salmon in the hot skillet to blacken; cook 2 to 3 minutes on the first side, turn and finish cooking. Cooking time will vary based on the thickness of fish and the heat of pan.
- Spread 1 tablespoon of the mayonnaise mixture onto each French roll.
- Top each with a blackened salmon fillet, 2 slices of tomato and 1/4 cup of the shredded cabbage and serve.
- ***CAJUN SPICE MIX***.
- Mix all spice mix ingredients together. Store in a sealed ziploc bag.
- Makes about 2/3 cup spice mix.

- Toss sliced peppers and onions in a bowl with olive oil, salt and pepper. Place in grill basket over medium-high heat. Let cook for about 10-15 minutes, tossing and checking while it is cooking. You’ll want to keep an eye on your peppers and onions and make sure they are not burning (though a little charred always works for me!).
- Lay a sheet of heavy-duty (make sure it’s heavy-duty!) aluminum foil over medium high grill. Pat dry your salmon fillets and brush with olive oil or cooking spray on both sides. Sprinkle top side liberally with blackening seasoning and place skin side down on aluminum foil on grill. Close lid and cook for about 10 minutes or until salmon has changed color and flakes. Do not overcook, test with a fork if you are not sure. Inside should be just turning pink.

- In a small bowl, combine paprika, oregano, sugar, garlic powder, onion powder, and cayenne pepper and stir to combine. Rub at least half of the seasoning mix onto the salmon. Add onion, green pepper, and red pepper to a bowl with 2 tablespoons (30 ml) olive oil and the rest of the seasoning mixture and toss and stir to coat. Add the remaining olive oil to a skillet over high heat. Add salmon filets to hot skillet and cook for 3-4 minutes on one side. Flip filets and transfer to a parchment paper-lined baking sheet and bake for 12 minutes.
- Add peppers and onions to the same hot skillet used for the salmon and cook, stirring occasionally, for 8 minutes. Transfer vegetables to a large platter and arrange salmon filets on top.
- Serve with Lime Cumin Mayo (see recipe) and Pico de Gallo (see recipe), cilantro, lime wedges, and flour tortillas. Assemble and eat.
