When I make this coffee cake, I have to start with twice as many blackberries as called for because I end up eating them as I go along. I love blackberries! :)

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 cup sugar
1 large egg, beaten
3/4 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla extract
1/2 cup sugar
1/2 pint fresh blackberries, rinsed and drained

Steps:

  • Preheat oven to 350°F.
  • Mix together flour, baking powder and the 1 cup of sugar.
  • Add the beaten egg, milk, melted butter and vanilla; mix until smooth.
  • Mix together the 1/2 cup sugar and the blackberries, stirring to coat the berries evenly; set aside.
  • Pour cake mixture into a well-greased 9" round cake pan.
  • Top cake batter with sugared berries; swirl around gently with a spoon, leaving some on top.
  • Bake at 350° for 30 minutes or until a toothpick inserted in the middle of the cake comes out clean (if it hits a berry, try somewhere else).
  • Cool in pan on a wire rack.

You can use either fresh raspberries or fresh blackberries for this tender and delicious coffee cake. I prefer to toast my pecans in the oven for 3 to 5 minutes to really bring out their flavor.

2 cups fresh raspberries
6 tablespoons brown sugar
2 cups all-purpose flour
⅔ cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup sour cream
¼ cup butter, melted
2 teaspoons vanilla extract
2 eggs
2 cups toasted, chopped pecans
2 teaspoons milk
½ teaspoon vanilla extract
½ cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 10 inch Bundt cake pan with non-stick cooking spray.
  • Stir together raspberries and brown sugar; set aside. In a separate bowl, mix together flour sugar, baking powder, baking soda and salt; set aside.
  • In a third bowl, cream together sour cream, butter and 2 teaspoons vanilla. Beat in eggs one at a time. Stir in flour mixture just until moist.
  • Sprinkle 1/2 cup of berries and 1 cup pecans in pan, pour in half of the batter. Pour on the remaining berries and remaining cup of pecans. Spread the remaining batter over the berries.
  • Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into center of the cake comes out clean. While cake bakes, mix the frosting. In a small bowl, stir together 2 teaspoons milk, 1/2 teaspoon vanilla and 1/2 cup confectioners' sugar. Remove cake from pan and let cool 20 minutes before frosting.

2 1/4 c all purpose flour
1 c white sugar - divided
3/4 c unsalted butter, cubed
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
3/4 c sour cream
2 tsp almond extract
1 Tbsp vanilla extract
2 large eggs - divided
1/2 pkg (4 ounces) cream cheese, softened
1/2 c blackberry preserves or apple butter, strawberry, huckelberry, etc
1/2 c sliced almonds
1/8 c powdered sugar
10 to 15 drops of vanilla extract

Steps:

  • 1. Pre heat the oven to 350 degrees. Grease a 9" springform pan. I used pan grease and the coffee cake was very easy to remove from pan. I love my springform pan..
  • 2. Mix together with a fork, flour, 3/4* cup sugar and the butter and mix well until it resembles small peas. Scoop out 1 1/4 cup of this mixture and put into another bowl. (this will be for the topping)
  • 3. To the remaining mixture, add baking soda, baking powder, salt, sour cream, almond extract, vanilla, and one egg*. Mix until just combined.
  • 4. Spread the batter into prepared springform pan and make sure to get this up the sides at least 2 inches. "You want to create an edge or crust for the filling to sit inside of"..this is where it starts to get messy unless you have dropped something on the floor or scattered the flour.
  • 5. In another bowl, beat the cream cheese, 1/4 cup sugar* and the other egg*. Mix well. Spread on top of the batter and try to spread it up to the edges.
  • 6. Spoon the jam or a filling of your choice on top of the cream cheese mixture. You do not have to have it evenly spread out, but just little drops makes the best presentation.
  • 7. Add the almonds to the reserved crumbs and spread on top. Bake for 45 to 50 minutes. Top should be a light shade of brown.
  • 8. Cool for 15 minutes then take the springform side off. Set in refrigerator for 1 hour..the house will smell wonderful and have the best almond smell.
  • 9. Mix the powder sugar and the drops of vanilla and drizzle over coffee cake..

1 teaspoon ground cinnamon
Pinch fine salt
5 tablespoons unsalted butter, at room temperature
8 tablespoons (1 stick) unsalted butter, at room temperature, plus more for buttering the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
1 1/2 cups fresh blackberries

Steps:

  • Combine the flour, brown sugar, cinnamon and salt in a small bowl and mix to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk the flour, baking powder, baking soda and salt together in a medium bowl.
  • Beat the butter and granulated sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle the blackberries on top. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate, re-invert onto a rack to cool completely.

2 ½ cups sifted all-purpose flour
2 cups granulated sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 ⅓ cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
¼ cup strong coffee, hot
1 tablespoon vanilla extract
1 teaspoon apple cider vinegar
1 ounce liquid red food coloring
Blackberry Compote:
3 cups fresh blackberries
½ cup granulated sugar
3 tablespoons fresh lime juice
Pinch salt
1/4 teaspoon cornstarch
Cream Cheese Whipped Frosting:
2 (8-ounce) packages cream cheese, room temperature
¾ cup confectioners' sugar
1 cup heavy cream, cold
1 teaspoon vanilla extract
Pinch salt
1 cup fresh blackberries, for garnish

Steps:

  • For the cake:
  • Preheat your oven to 325°F. Liberally prepare 3 9-inch round cake pans with the nonstick method of your choice.
  • In the bowl of your stand mixer fitted with the whisk attachment, add the flour, granulated sugar, cocoa powder, baking soda, and salt and mix on low speed. Slowly add the oil and buttermilk.
  • Increase the speed to medium-low and add the eggs 1 at a time, combining well after each addition and scraping down the sides and bottom of the bowl as needed. Slowly add the coffee, vanilla extract, vinegar, and food coloring. Scrape down the sides and bottom of the bowl and mix the batter until just combined. Be careful not to overmix.
  • Evenly pour the batter into the prepared pans and bake for 20 to 27 minutes, or until a toothpick inserted into the center of a layer comes out clean. Do not overbake.
  • Let the layers cool in the pans for 10 minutes, then invert onto wire racks. Let cool to room temperature. Lightly cover the cakes with foil or plastic wrap so they do not dry out.
  • For the blackberry compote:
  • In a medium saucepan over medium heat, warm the blackberries, granulated sugar, lime juice, and salt. Once the blackberries begin releasing their juices and the liquid begins to boil, after about 8 to 12 minutes, use a pastry cutter or fork to mash 1/2 of the berries. Leave the rest whole.
  • Stir in the cornstarch and continue to cook at a boil, allowing the juices to cook down and thicken. The compote is ready when the liquid coats and completely sticks to the back of a spoon. Remove from the heat. Let cool to room temperature.
  • For the frosting:
  • Clean your stand mixer bowl and whisk attachment. Beat the cream cheese on high speed until it begins to thicken and become fluffy.
  • Turn your mixer down to low speed and carefully add the confectioners' sugar. Once the sugar is fully incorporated, turn your mixer speed back up and continue whipping. Add the heavy cream, vanilla extract, and salt. Continue to whip until the frosting is smooth, light, and fluffy. Refrigerate the buttercream for 30 minutes to firm it up.
  • To assemble:
  • Once the layers are completely cooled, place 1 layer on a serving plate. Spread just the top with ⅓ of the frosting. Add ⅓ of the compote over the frosting. Using a butter knife or skewer, swirl the compote into the frosting. Add the second layer and spread with another ⅓ of the frosting. Add ⅓ of the compote, swirling the compote into the frosting again. Add the final layer, bottom-side up, and top with the remaining frosting. Add the rest of the compote and repeat the swirling process. Do not frost the side of the cake. Garnish with the whole blackberries. Serve at room temperature. Store in the refrigerator.
