BLACK TAHINI NOODLES

150 g fine rice noodles
2 limes
1 punnet of cress
50 g black sesame seeds
2 tablespoons teriyaki sauce

Steps:

  • Cook the noodles in boiling salted water according to the packet instructions, then drain, reserving a mugful of cooking water. Meanwhile, finely grate the zest of 1 lime, snip the cress and put both aside.
  • Toast the sesame seeds in a dry non-stick frying pan on a high heat for 1 minute, tossing regularly. Reserving one quarter of the seeds, pound the rest in a pestle and mortar until fairly fine, then muddle in the teriyaki and the juice of 1 lime. Taste, season to perfection with sea salt and black pepper, and you've got a black tahini!
  • Toss the noodles and black tahini together, loosening with a splash of reserved noodle water. Serve sprinkled with the lime zest, cress and reserved seeds, with lime wedges on the side, for squeezing over.

Tahini with pasta? Oh, yes! Flavored with a bit of soy sauce, honey, and ginger, the sesame paste makes a wonderful creamy sauce for pasta.

1/2 pound fettuccine (or other wide pasta noodle)
1/2 cup sesame paste
1/2 cup water
1 tablespoon soy sauce
1 tablespoon fresh lemon juice
1 teaspoon honey
1 teaspoon freshly grated ginger
1 clove garlic (peeled and grated)
Pinch of crushed red pepper flakes (to taste)
Garnish: Sliced scallions, sesame seeds

Steps:

  • Gather the ingredients.
  • Bring a large pot of salted water to a boil and add the pasta. Cook according to the package directions.
  • In a bowl, whisk together the sesame paste, water, soy sauce, lemon juice, honey, grated ginger, garlic, and crushed red pepper flakes until smooth.
  • Drain the cooked noodles and toss with the tahini sauce. Top with the sliced scallions and sesame seeds.

6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry vinegar
1/4 cup honey
1/2 teaspoon hot chili oil
2 tablespoons dark sesame oil
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
1 pound spaghetti
1 red bell pepper, julienned
1 yellow bell pepper, julienned
4 scallions, sliced diagonally (white and green parts)

Steps:

  • Place the garlic and ginger in a food processor fitted with a steel blade. Add the vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, and ground peppers. Puree the sauce.
  • Add a splash of oil to a large pot of boiling salted water and cook the spaghetti al dente. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with 3/4 of the sauce. Add the red and yellow bell peppers and scallions; toss well. Serve warm or at room temperature. The remaining sauce may be added, as needed, to moisten the pasta.

200g soba noodle
100g sugar snap pea , halved lengthways
1 red pepper , deseeded and thinly sliced
½ cucumber , sliced or peeled into ribbons
2 tsp sesame seed , toasted
2 tbsp tahini paste
2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sugar

Steps:

  • First make the dressing. Mix the tahini with 2 tbsp water, then stir in the soy sauce, rice vinegar and sugar. Set aside.
  • Cook the noodles following pack instructions, then drain and rinse well under cold water. Divide the noodles between 2 bowls and top with the sugar snaps, red pepper and cucumber. Just before serving, pour over the dressing and sprinkle with the toasted sesame seeds.
