Using a slow cooker makes easy work of this classic, long-simmered, delicious southern dish. Serve over cooked white rice.

1 pound dry black-eyed peas
6 cups water
1 large ham hock
12 ounces andouille sausage, sliced
1 onion, chopped
2 stalks celery, chopped
4 cloves garlic, minced
2 bay leaves
1 teaspoon ground cumin
½ teaspoon salt
1 pinch red pepper flakes, or to taste

Steps:

  • Place black-eyed peas in a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Pour 6 cups water into a pot; add ham hock. Bring to a boil, reduce heat to medium-low, and simmer until meat is tender, about 1 hour. Transfer ham hock to a plate to cool and reserve 4 cups of the cooking liquid.
  • Layer soaked peas, andouille sausage, onion, celery, and garlic in the bottom of a slow cooker. Remove meat from ham hock and add meat to slow cooker. Sprinkle bay leaves, cumin, salt, and red pepper flakes over the top. Pour reserved cooking water over peas mixture.
  • Cook on High until peas are tender, at least 4 hours.

Hoppin' John is a Southern rice and bean dish traditionally served on New Year's Day to bring prosperity and good luck.

1 pound dried black-eyed peas, soaked
1 medium yellow onion, diced
1 rib celery, diced
1 medium red bell pepper, diced
2 cloves garlic, minced
1 smoked ham hock
32 ounces low-sodium chicken stock
1 bay leaf
1 to 1 1/2 cups long-grained white rice
Hot pepper sauce to taste, for garnish

Steps:

  • In a large (6 quart) slow cooker crock, combine the soaked beans, onion, celery, bell pepper, garlic, and ham hock.
  • Pour the chicken stock into the slow cooker crock and stir to combine the ingredients. Add the bay leaf and push it into the liquid until it's submerged.
  • Cover the slow cooker and cook on low for 7 to 8 hours, until beans are tender. Discard the bay leaf and the ham hock. The stew can also be cooked on high for 4 to 5 hours.
  • Before serving, prepare the rice as you would normally.
  • To serve, spoon some cooked white rice into a bowl and ladle Hoppin' John over the rice. Pass hot pepper sauce at the table for everyone to season to their liking.

This is an easy way to cook dried black beans in a rice cooker. After cooking, you can use them in burritos, veggie burgers, soups, or anything you like! I have also cooked kidney beans and a mixture of kidney and black beans this way.

1 cup dried black beans
3 cups water, or more as needed

Steps:

  • Place black beans and cover with 3 cups water. Let sit for 5 minutes. Discard anything that floats to the surface. Drain.
  • Cover black beans with 3 more cups water. Let soak, 4 hours to overnight. Drain.
  • Combine drained beans and 3 cups water in a rice cooker. Cook on the "Porridge" setting, adding more water if needed, until tender, about 2 hours. Drain.

1 onion, chopped
1 (15 ounce) can black beans, undrained
1 (14.5 ounce) can stewed tomatoes
1 teaspoon dried oregano
½ teaspoon garlic powder
1 ½ cups uncooked instant brown rice

Steps:

  • In large saucepan, heat oil over medium-high. Add onion, cook and stir until tender. Add beans, tomatoes, oregano and garlic powder. Bring to a boil; stir in rice. Cover; reduce heat and simmer 5 minutes. Remove from heat; let stand 5 minutes before serving.

1 lb dried black beans (2 cups), sorted, rinsed
1 large onion, chopped (1 cup)
1 large bell pepper, chopped (1 1/2 cups)
5 cloves garlic, finely chopped
2 dried bay leaves
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
5 cups water
2 tablespoons olive or vegetable oil
4 teaspoons ground cumin
2 teaspoons finely chopped jalapeño chilies
1 teaspoon salt
3 cups hot cooked rice

Steps:

  • In 3 1/2- to 6-quart slow cooker, mix all ingredients except rice.
  • Cover; cook on High heat setting 6 to 8 hours.
  • Remove bay leaves. Serve beans over rice. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base.   • Heat oil in a medium saucepan over medium-high. Add rice and cook, stirring often, until fragrant and lightly toasted, 3 to 4 minutes. Stir in 3 cups of the reserved cooking liquid and remaining 1⁄2 teaspoon salt. Bring to a boil, and reduce heat to medium-low; cover and cook until rice is tender, 15 to 18 minutes. Fluff rice with a fork, and gently stir into pea mixture in Dutch oven. Stir in remaining cooking liquid, 1⁄4 cup at a time, until desired consistency is reached. Sprinkle servings with sliced fresh scallions.
