Mango & Avocado Black Rice Salad with Cilantro-Lime Vinaigrette image

Bright and fresh, this incredible black rice salad isn't only flavorful, it's packed with nutrients too. It's sweet, creamy, and crunchy, and topped with an addicting cilantro-lime vinaigrette. You'll love this for a healthy lunch!

1 1/2 cups organic black rice
1/2 teaspoon salt
1 large ripe mango, diced
1 small ripe avocado, diced or sliced
1/4 cup roasted almonds
1/2 cup chopped fresh cilantro
1/2 cup diced red onion
For the Vinaigrette:
1/4 cup freshly squeezed lime juice (about 3 limes)
1 1/2 tablespoons olive oil
1 teaspoon honey (agave nectar if vegan)
1/4 teaspoon Kosher salt
1 clove garlic, minced
2 tablespoons chopped fresh cilantro
salt and pepper to taste
lime wedges, to garnish

Steps:

  • Rinse rice in mesh strainer. Add to medium saucepan. Add 2 3/4 cups water and a pinch of salt; bring to a boil. Cover, reduce to a low simmer, and cook until rice is tender and water is absorbed, about 30-40 minutes. When rice is done cooking, remove from heat and transfer to a bowl. Cool for 10 minutes before adding dressing.
  • While rice is cooking prepare the dressing: Combine lime juice, olive oil, garlic, honey (or agave), cilantro, and salt in a food processor. Process for 15-30 seconds or until dressing is combined.
  • Once rice is done cooking and has cooled a bit, stir in dressing, cover bowl and place in fridge for an hour or until cool and you are ready to add in the rest of the salad ingredients.
  • Before serving, toss salad again with dressing and fold in cilantro, mango, and red onion. Pour into cold salad bowls and top with roasted almonds and avocado. Garnish with a lime wedge or extra cilantro if desired. Enjoy!

1 cup black rice (rinsed and drained)
4 cups water
1 teaspoon kosher salt
3 tablespoons rice vinegar
1 small shallot (or 2 teaspoons minced red onion)
2 teaspoons honey
2 teaspoons Asian Chili-Garlic Sauce
2 cloves garlic (minced)
1 teaspoon fresh ginger (grated)
¼ cup olive oil
1 tablespoons toasted sesame oil
1 cup sugar snap peas (cut into 1-2 inch pieces)
5 radishes (- sliced thinly)
1 red or yellow bell pepper (seeded and chopped)
¼ cup fresh cilantro (roughly chopped)

Steps:

  • Place black rice, salt, and water in a medium sized saucepan over medium heat. Bring it to a boil and cook until the rice is tender, 20-25 minutes. Drain and let it cool.
  • Make the salad dressing by whisking together rice vinegar, shallot, honey, chili garlic sauce, garlic, and ginger. While still whisking, drizzle in the olive oil and sesame oil until fully combined.
  • To assemble the salad, place now-cooled black rice, sugar snap peas (or shelled edamame), radishes, bell pepper, and cilantro in a large salad bowl. Drizzle it with the dressing and give it a gentle toss.
  • Give it a taste for seasoning and add in if necessary. Serve.

1 pound black beans, picked over, soaked overnight and drained
2 tablespoons canola oil
1 Spanish onion, finely chopped
2 cups long grain rice
Salt and freshly ground pepper
2 cups chopped cilantro leaves, plus 1/4 cup chopped cilantro, for garnish
2 cloves garlic, chopped
1 tablespoon pine nuts
3/4 cup pure olive oil
1/2 cup grated cotija cheese

Steps:

  • Place soaked beans in a medium saucepan and cover with water. Bring to a boil over high heat, reduce heat to medium-low, and simmer until cooked through, about 1 1/2 hours, adding more water if needed. Drain beans into a colander set over a bowl and reserve the cooking liquid from the beans.
  • Heat oil in a medium saucepan on the grates of the grill. Add the onions and cook until soft. Add the rice, toss to coat in the oil and onion mixture, and cook for 2 minutes. Add 3 3/4 cups of the bean cooking liquid (if there is not enough liquid, add some water to measure 3 3/4 cups). Season the rice with salt and pepper, stir well, and bring to a boil. Reduce heat, place cover on the pot, and cook until rice is just cooked through, about 14 to 16 minutes.
  • While the rice is cooking, place cilantro, garlic and pine nuts in a food processor and process until coarsely chopped. With the motor running, add the oil and process until smooth. Add the cheese and process until incorporated. Season with salt and pepper, to taste.
  • Place rice and beans in a large bowl, fold in the cilantro pesto, and garnish with the additional chopped cilantro.

2 cups tightly packed fresh cilantro leaves
1/2 cup pine nuts
1/2 cup grated Parmesan
1 teaspoon fresh lemon juice
2 cloves garlic
1 cup olive oil
2 cups grape tomatoes, cut in half
1/2 shallot, thinly sliced
Olive oil, for drizzling
Salt and freshly ground black pepper
4 cups cooked rotini pasta, cooled
4 cooked chicken breasts (we used grilled), cooled and cut into cubes
Parmesan shavings, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cilantro pesto: Add the cilantro, pine nuts, Parmesan, lemon juice and garlic to a food processor and pulse until the ingredients are roughly chopped, 4 to 5 times. With the processor running, slowly drizzle in the oil through the lid opening. Process to desired consistency; you can make the sauce completely smooth or leave it fairly chunky.
  • For the roasted tomatoes: Line a baking sheet with parchment paper and add the tomatoes and shallot. Drizzle with olive oil and season with salt and pepper. Cook until the tomatoes start to break down and brown slightly, about 15 minutes. Let cool.
  • For the salad: In a large bowl, combine the pasta, chicken, tomatoes and pesto and toss. Garnish with shaved Parmesan and a few cilantro leaves and serve.

This is a wonderful, summer salad, bursting with great color and texture. I found this in Food and Wine magazine. I have also made this using "brown" basmati rice, which worked great and added a terrific, nutty flavor.

2 cups basmati rice
1/4 cup olive oil
1/4 cup white wine vinegar
2 medium tomatoes, diced
1 medium red onion, minced
1 cup chopped cilantro
1/2 cup kalamata olive, pitted and chopped
salt & fresh ground pepper

Steps:

  • Cook rice according to package directions, either on stove top or in rice cooker.
  • Once rice is cooked, transfer to a large bowl and allow to cool, tossing with a rubber spoon until at room temperature.
  • Wisk together ingredients for the dressing: oil, vinegar, salt and pepper in a bowl.
  • Fold tomatoes, onion, cilantro and olives into the cooled rice.
  • Add vinaigrette and toss to combine.
  • Add salt and pepper to taste.
  • **Notefor Leftovers: Leftover rice salad can be tossed with a can or two of white tuna, drained and flaked.
  • Makes a nice lunch!

1/4 cup extra-virgin olive oil
4 scallions, thinly sliced
1 cup frozen shelled edamame, thawed
1 cup grape tomatoes, halved
4 ounces green beans, thinly sliced (about 1 cup)
Freshly ground black pepper

Steps:

  • Preheat oven to 350°F. Cook rice in a medium saucepan of boiling salted water until tender, 35-40 minutes. Drain well, spread out on a plate or a rimmed baking sheet, and let cool.
  • Meanwhile, spread out walnuts on another rimmed baking sheet. Toast in oven, tossing once, until fragrant, 8-10 minutes. Let cool; chop.
  • Whisk lemon juice, vinegar, and agave in a small bowl. Whisking constantly, gradually drizzle in oil. Season vinaigrette with salt.
  • Toss rice, walnuts, scallions, edamame, tomatoes, green beans, and vinaigrette in a large bowl. Season with salt and pepper.
