This is a yummy Texas caviar made with black beans and pinto beans instead of black-eyed peas. Serve with scoop-style tortilla chips as a great party appetizer.

2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans white corn, rinsed and drained
1 (4 ounce) can chopped green chiles, undrained
1 jalapeno chile pepper, seeded and finely chopped
1 red bell pepper - cored, seeded and finely chopped
1 green bell pepper - cored, seeded and finely chopped
1 small red onion, finely chopped
1 bunch cilantro leaves, finely chopped
½ cup rice vinegar
½ cup olive oil
⅓ cup white sugar
½ teaspoon garlic powder

Steps:

  • Mix the black beans, pinto beans, white corn, green chiles, jalapeno pepper, red and green bell peppers, red onion, and cilantro together in a large bowl.
  • To make the dressing, stir the rice vinegar, olive oil, sugar, and garlic powder together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over bean mixture, and toss to mix evenly.

Here's a spicy Texas favorite. Black-eyed peas and black beans are marinated in a fiery, flavorful mixture. This is great with tortilla chips or bread -- and plenty of cold iced tea!

½ onion, chopped
1 green bell pepper, chopped
1 bunch green onions, chopped
2 jalapeno peppers, chopped
1 tablespoon minced garlic
1 pint cherry tomatoes, quartered
1 (8 ounce) bottle zesty Italian dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
½ teaspoon ground coriander
1 bunch chopped fresh cilantro

Steps:

  • In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve.

Black Eyed Pea & Mango Salad (Mango Texas Caviar) image

This recipe takes Texas Caviar and ups the ante. The combination of sweet and spicy flavors comes from jalapeños and mango, but you could easily replace the mango with another sweet-tart fruit such as peach, nectarine, or pineapple. The original recipe called for 4 tablespoons of minced pickled jalapeño, but I only use half as much. Add them to your level of comfort (or discomfort!!!)

1 1/2 cup(s) black eyed peas, cooked
1 cup(s) mango, diced
1/2 cup(s) red bell pepper, diced
1/2 cup(s) green bell pepper, diced
1/2 cup(s) onion (red or white), diced
4 tablespoon(s) red wine vinegar
2 tablespoon(s) olive oil
1 tablespoon(s) honey
1 - lime, juice of
2 tablespoon(s) pickled jalapeno, minced (to taste)
1 teaspoon(s) garlic, minced
1/4 teaspoon(s) salt
1/8 teaspoon(s) black pepper

Steps:

  • If you are using fresh black eyed peas, boil them until they become tender (about 15 minutes), then rinse them with cold water, and drain. Dried peas will have to be soaked overnight before cooking. If you are using canned peas you will not need to cook them, but they should be rinsed well to remove any extra sodium.
  • Combine the black eyed peas, mango, bell peppers, onion, jalapeño, and garlic in a large mixing bowl.
  • In a second bowl, whisk together the oil, vinegar, honey, lime juice, salt, and pepper. Pour the dressing over the salad and toss to combine. You can serve this immediately but I think it tastes a little better if it has an hour or so to chill in the fridge.

1 yellow onion (, diced)
1 green bell pepper (, diced)
1 jalapeno (, deseeded and deveined and minced)
1 bunch green onions (, diced)
1 pint grape tomatoes (, quartered)
15 ounces black eyed peas (, drained and rinsed)
15 ounces black beans (, drained and rinsed)
1/4 cup cilantro (, chopped)
1/3 cup olive oil
1/4 cup lime juice
1 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
2 teaspoons ground cumin
2 cloves garlic

Steps:

  • Add the corn, onions, bell peppers, jalapeno, green onions, grape tomatoes, black eyed peas, black beans and cilantro together in a large bowl.
  • To a food processor add the olive oil, lime juice, salt, pepper, cumin and garlic and process until the garlic is smooth then toss it with the ingredients in the bowl and let sit for at least 1 hour before serving.

3 green onions, finely chopped
2 mangoes, diced
3 tomatoes, diced
1 teaspoon garlic powder

1 lime, juice only
1/4 cup vinegar
1/3 cup olive oil
salt and pepper, to taste

Steps:

  • Combine oil, vinegar, lime juice, cumin, and garlic powder; thoroughly mix.

1 cup celery, finely sliced
4 ounces green chilies, chopped
1/4 cup red bell pepper, finely diced
1/2 cup purple onion, diced
2 garlic cloves, finely minced
1 teaspoon salt (or more to taste)
1/2 teaspoon ground black pepper
1 teaspoon Worcestershire sauce
1 1/2 cups Italian dressing
red cabbage leaf, for garnish
minced green onion top, for garnish

Steps:

  • In large glass bowl, combine all ingredients except garnish, stirring to mix well.
  • If liquid does not cover peas in bowl, add a little more dressing.
  • Marinate, covered, in refrigerator for 24 hours.
  • Drain excess salad dressing, and spoon salad onto a shallow bowl lined with red cabbage leaves.
  • Garnish with green onion tops.
