1/2 cup butter, softened
1/4 teaspoon vanilla extract
3/4 cup confectioners' sugar
2 tablespoons brown sugar
3/4 cup miniature semisweet chocolate chips
3/4 cup finely chopped pecans
Graham crackers

Steps:

  • Beat cream cheese, butter and vanilla until smooth; beat in sugars just until blended. Stir in chocolate chips. Refrigerate, covered, until firm enough to shape, about 2 hours. , Place mixture on a large sheet of plastic wrap; shape into a ball. Refrigerate, wrapped, at least 1 hour. , To serve, roll cheese ball in pecans. Serve with graham crackers.

1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1 tablespoon evaporated milk
1 teaspoon Amaretto
1 cup miniature chocolate chips
1 cup almonds, chopped

Steps:

  • In a large bowl, beat together the powdered sugar and cream cheese until smooth. Beat in the spices, milk and Amaretto. Stir in the chocolate chips. Pinch off walnut-size pieces of the mixture and roll in small balls. Roll the balls in the almonds. Store in refrigerator in an airtight container.

1 tsp brandy extract
1/2 tsp salt
1/4 tsp cinnamon
1/8 tsp nutmeg

Steps:

  • 1. In large bowl, combine cream cheese, powdered sugar, heavy cream, brandy extract, salt, cinnamon and nutmeg. Beat until creamy. Stir in chocolate chips. Drop by rounded teaspoonfuls onto cookie sheets. Chill 5 minutes. Roll into balls. Coat completely with nuts.

3/4 cup brown sugar
1 teaspoon vanilla
2 cups flour
1 (14 ounce) can sweetened condensed milk
1/2 cup chocolate chips
1 cup walnuts, chopped fine
2 bags dark chocolate candy melts (Guittard or Wilton)

Steps:

  • In a large bowl cream butter and brown sugar with a mixer on med speed.
  • Add vanilla. Gradually beat in flour and add milk. Add choc. chips and walnuts. Shape into tiny balls. Place on wax paper and chill 2 hours.
  • Melt candy melts according to the package directions (do not let any moisture come in contact with the melts and do not overcook!).
  • Dip balls into the chocolate to coat. Chill to set.

1/2 cup unsalted butter, (melted and cooled)
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs
2 1/8 cups whole wheat pastry flour
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup eggnog
2/3 cup chocolate chips tossed in 2 teaspoons of flour
1/4 cup brown butter
1/2-3/4 cup powdered sugar
2-3 tablespoons eggnog

Steps:

  • Preheat oven to 350 degrees F. Grease a 9×5 loaf pan and set aside. In a small bowl, whisk together flour, baking soda, powder, nutmeg and salt until combined. Set aside.
  • In a large bowl, whisk cooled butter with sugar until smooth. Add in vanilla extract, mixing until combined, then whisk in each egg one at a time until totally combined. Add half of the flour mixture, stirring with a large spoon, then stir in the eggnog until smooth. Add remaining dry ingredients and stir until just combined and smooth. Fold in chocolate chips. Pour in the greased loaf pan. Bake for 50-55 minutes, until top is golden and cake is just set. Let cool completely, then cover in glaze.
  • To make glaze, whisk together brownie butter, sugar and eggnog, stirring well for 1-2 full minutes until combined. If it still doesn't appear glaze-like, add in eggnog 1/2 tablespoon at a time and mix again. Don't worry if it becomes too liquidy - just add a tiny bit of powdered sugar until you get the desired consistency. Spoon glaze on bread then serve.
