This recipe was given to me by a good friend a couple of years ago, and I've been making it ever since. We love Mexican food, and bowls of this pack enough flavor to please even my husband. -Emily Fast of Leavenworth, Kansas

1 pound boneless skinless chicken breasts, cubed
1 tablespoon canola oil
1 tablespoon chopped onion
1 jalapeno pepper, seeded and finely chopped
3 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
3 cups fresh corn or frozen corn
1 can (15-1/2 ounces) black beans, rinsed and drained
2 tablespoons lime juice
1/2 teaspoon salt
1/2 teaspoon hot pepper sauce
1/4 teaspoon pepper
1/2 cup minced fresh cilantro
16 baked tortilla chip scoops, crumbled
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a Dutch oven, saute chicken in oil until no longer pink. Remove with a slotted spoon and set aside. In the same pan, saute onion and jalapeno pepper until tender. Add garlic and saute; cook 1 minute longer., Stir in the broth, corn, beans, lime juice, salt, hot pepper sauce, pepper and reserved chicken; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Stir in cilantro. Top each serving with crumbled tortilla chips and cheese.

1 Black Chicken
10 gm Dang Shen (abt 4 thin slices / 1 thick slice (cut into 1/2 cm widths))
5 gm Wolfberries (1/2 TBsp)
4-5 red dates
5 gm Hwang Qi (1 long strip)
3 gm Zhong Xiong (4 slices)
2 gm Gan Cao (3-4 thin slices)
5 gm Gao Li Shen Xu (4-5 sticks)
2 Bowls Boiling water
5 Dried Longan (Optional)
2.5 litres water

Steps:

  • Cut off the feet and head of the chicken and discard the head. Cut off the claws of the feet and wash clean.
  • Remove the chicken skin and fats. Cut the chicken into half. Clean the insides and rinse well.
  • Rinse all the herbs except the wolfberries
  • Place the chicken and chicken feet into a stainless steel bowl / porcelain pot with cover.
  • Put all the herbs into the bowl / pot except the red dates and wolfberries.
  • Add in 2 bowls of boiling water and cover the pot. If you are using the stainless steel bowl, cover with aluminium foil or a stainless steel plate that fits.
  • In a larger pot, pour in about 2-2.5 litres of water and bring it to a boil.
  • When it boils, put a steaming rack into the large pot, and place the stainless steel bowl / porcelain pot on top. Cover the large pot.
  • Double- boil the chicken for 3 hours over medium heat, ensuring that there's always sufficient water in the outer pot.
  • After 2.5 hours, add in the red dates and wolfberries and continue to double boil for 30 mins.
  • add salt to taste and serve.

2 tbsp mild olive oil
2 fat garlic cloves , crushed
small bunch coriander stalks finely chopped, leaves picked
zest 1 lime , then cut into wedges
2 tsp ground cumin
1 tsp chilli flakes
400g can chopped tomatoes
400g can black beans , rinsed and drained
600ml chicken stock
175g kale , thick stalks removed, leaves shredded
250g leftover roast or ready-cooked chicken
50g feta , crumbled, to serve
flour & corn tortillas , toasted, to serve

Steps:

  • Heat the oil in a large saucepan, add the garlic, coriander stalks and lime zest, then fry for 2 mins until fragrant. Stir in the cumin and chilli flakes, fry for 1 min more, then tip in the tomatoes, beans and stock. Bring to the boil, then crush the beans against the bottom of the pan a few times using a potato masher. This will thicken the soup a little.
  • Stir the kale into the soup, simmer for 5 mins or until tender, then tear in the chicken and let it heat through. Season to taste with salt, pepper and juice from half the lime, then serve in shallow bowls, scattered with the feta and a few coriander leaves. Serve the remaining lime in wedges for the table, with the toasted tortillas on the side. The longer you leave the chicken in the pan, the thicker the soup will become, so add a splash more stock if you can't serve the soup straight away.

This is so tasty, and healthy too! We love black beans. Prep time does not include soaking and cooking the beans, but does include cooking the chicken. You can, of course, substitute canned beans, just drain them. The soup can also be frozen in a sturdy plastic container, or a ziploc bag. To serve, defrost and heat in microwave or on stovetop.

1 lb black beans, soaked, cooked, and drained
1 lb boneless skinless chicken breast, cut in bite size pieces
1/2 teaspoon cumin powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 large onions, diced
2 (14 1/2 ounce) cans diced tomatoes, one can drained only
2 cups corn
2 (14 ounce) cans chicken broth (I use 99% fat free)
2 tablespoons cumin
2 tablespoons garlic powder
2 teaspoons black pepper

Steps:

  • Sprinkle chicken pieces with 1/2 tsp cumin, 1/2 tsp garlic powder, and 1/4 tsp black pepper.
  • Cook on medium high heat in small about of oil, until chicken is cooked through and lightly browned, or about 5-7 minutes.
  • Combine all ingredients and cooked chicken in crockpot.
  • Stir well, and taste to make sure spices are how you like them.
  • Cook on high heat one hour, then low for 3-4 hours, or for however long you need it to cook.
  • It will be done when you are ready for it.

1 black chicken (also called 'Silkie', found in Asian markets)
8 red dates
1 teaspoon dried goji berries
16 ounces water
Salt to taste

Steps:

  • Wash the black chicken and cut into smaller, soup friendly pieces.
  • Boil the chicken in water for 5 minutes and trim away any excess or visible fats.
  • Place the black chicken, dried goji berries and red dates into a slow cooker.
  • Boil the water and pour into the slow cooker.
  • Using the low setting, gently simmer for 25 minutes.
  • Add a pinch of salt to the soup before serving, or more to taste.

Taste of this tonic soup was pleasant. It was fragrant, flavoursome with natural sweetness in the palate. Adding some Hua Diao wine is important to enhance the taste of the soup. This soup is healthy and beneficial for all in the family. The silky chicken is fairly small compared to a normal chicken. It does not necessarily have black feathers. In fact, its plummage is more furry than feathers and many have snowy white plummage. It is called black chicken because its beak, bones, flesh, skin and even internal organs are black or dark blue in colour. It doesn't look very appealing because of the dark colour and the meat is fairly dry (in my opinion) but it is valued for its curative effects. Modern scientific research has discovered that the silky chicken's level of protein, vitamin B, 18 amino acids and minerals are much higher than normal chicken while cholesterol and saturated fats are much lower. It is almost always prepared in tonics or herbal soups together with chinese herbs

1 silkie aka black chicken, skinned, removed head and feet, quartered
slabs of salt and white pepper
1/2 tablespoon of hsao hsing hua diao rice wine
6 cups water, 50% filled in a large pot (about 1500ml)
20 g , ginseng
15 g , wolfberries about 1 tablespoon
10 g , chinese angelicae root dang gui
5 g , rhizoma chuan xiong
6 g , liquorice root
10 g dried longans

Steps:

  • Boil a pot of water over medium - high heat.
  • 2) When boiled, add in chicken and Chinese herbs. Bring all ingredients to a boil again. Then, reduce heat to low fire, and simmer for 1 - 1.5 hour.
  • 3) Add rice wine right before heat off. Stir briefly to combine. Serve hot.
