BLACK BEAN MANGO SALAD (VEGAN)

This Black Bean Mango Salad is bursting with sweet mango, savory black beans and tons of crunchy vegetables tossed in lime dressing and ready in 15 minutes!

Number Of Ingredients 15

3 cups diced mango ((about 2 large or 3 medium mangoes))
1 cup diced cucumber ((½ English cucumber or 2 Persian or))
½ cup diced red onion ((about ½ medium onion))
½ cup diced red bell pepper ((about ½ pepper))
2 tablespoons seeded and fine diced jalapeno ((1 large jalapeno or 2 serrano))
1 cup cherry or grape tomatoes (halved)
3 cups thinly sliced red cabbage ((or Napa cabbage))
¼ cup cilantro (chopped (leaves and light green stems))
1 can cooked black beans, rinsed and drained ((one 14 oz can), or 1½-2 cups cooked beans)
2 tablespoons fresh lime juice ((1 large lime))
¼ teaspoon sea salt (or pink salt, or ⅛ teaspoon regular salt (adjust after tossing))
⅛ teaspoon black pepper (freshly ground)
⅛ teaspoon cayenne ((optional - skip for mild))
½ teaspoon agave syrup (or maple syrup (or honey for non-vegan version))
1 tablespoon extra virgin olive oil

Steps:

  • Using a vegetable chopper, dice mango, cucumber, red onion, red bell pepper and jalapeno (see photo below for size reference). Using a knife, slice the tomatoes in half, slice the cabbage thinly and finely chop cilantro. Add to a large bowl, along with cooked black beans.
  • Add lime juice and seasoning ingredients to a small bowl. Pour the olive oil while whisking so it emulsifies and creates a rich dressing.
  • Pour the dressing over the salad and toss gently to combine. Chill until ready to serve. Enjoy!

This Southwestern black bean salad recipe is healthy and delicious! This fresh black bean salad is perfect for potlucks, parties and busy weeks. Recipe yields 4 large or up to 8 side servings.

3 cans of black beans (15 ounces each) or 4 1/2 cups cooked black beans, rinsed and well-drained
2 ears of corn, shucked, or 1 cup of canned corn (drained) or defrosted frozen corn
1 orange, yellow or red bell pepper, chopped
1 cup quartered cherry tomatoes
1 cup chopped red onion (from 1 small onion)
1/2 cup finely chopped fresh cilantro (about 1/2 medium bunch)
1 medium jalapeño, finely chopped (keep the seeds for heat if you'd like, or remove them for mild flavor) or 2 tablespoons finely chopped pickled jalapeño
1/2 teaspoon lime zest (from 1 lime, preferably organic)
2 tablespoons lime juice (about 1 lime), to taste
1/4 cup extra-virgin olive oil
1/4 cup white wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt, to taste
Optional garnishes: sliced avocado, crumbled feta, lime wedges

Steps:

  • In a large serving bowl, combine all of the ingredients and toss to combine. Taste, and adjust as necessary until the flavors really pop-I usually add another teaspoon or two of vinegar (you can use lime juice instead, for more mild flavor) and another 1/4 teaspoon salt.
  • Cover and chill to enhance the flavors-preferably for at least 2 hours, or overnight. Serve in individual bowls as is, or with any of the garnishes listed. Leftovers keep well for up to 4 days or so; you might want to wake up the flavors with an extra squeeze of lime juice or tiny splash of vinegar.

2 medium or 3 Ataulfo mango (chopped)
1 large tomato (chopped)
1 large bell pepper (chopped)
1 cup corn (cooked or frozen (thawed))
15 - 19 oz can black beans (rinsed and drained)
1/2 cup cilantro (finely chopped)
2 tbsp red onion (minced)
2 tbsp olive oil (extra virgin)
1 lime (juice of)
2 tsp cumin (ground)
1/2 tsp salt
red chili pepper flakes (to taste)

Steps:

  • In a large bowl, add mango, tomato, bell pepper, corn, black beans, cilantro, onion, olive oil, lime juice, cumin, salt, hot pepper flakes.
  • Gently stir to combine. If you have time, allow flavors to marry each other in the fridge for a few hours.
  • Serve cold with cilantro lime chicken, grilled salmon or add Instant Pot quinoa to make it one complete meal.

1/4 cup extra-virgin olive oil
2 tablespoons cider vinegar
1/4 cup freshly chopped cilantro leaves
Kosher or fine sea salt and freshly ground black pepper
1 (15.5-ounce) can black beans, drained and rinsed
1/2 mango, peeled, flesh removed from the pit and cut into 1/2-inch dice (1 generous cup)
1/2 small jicama (about 1/2 pound), peeled, and cut into 1/2-inch dice (about 2 cup; see Note)
1/2 small red onion, cut in 1/2, then into thin slivers (about 1/4 cup)

Steps:

  • This is a delicious way for me to sneak more fruit and vegetables into our family dinners. More than a 15-minute side dish, this can be dressed this up by spooning it into a radicchio-leaf cup for a first course, complement the next batch of salmon fillets or steaks off the grill, or taken along on your next picnic.
  • Whisk the olive oil, vinegar, and cilantro together in a large bowl until blended. Season lightly with salt and pepper. Add the beans, mango, jicama, and onion and toss gently to coat with the dressing. Season with salt and pepper, to taste. Serve right away or let stand at room temperature for up to 30 minutes. Toss and check the seasoning before serving.

3 ears fresh corn, kernels cut off the cob
1/4 cup diced red onion
2 red bell peppers, diced
1 jalapeno pepper, seeded and diced
1/2 cup cilantro, chopped
2 tablespoons shallots, minced
2 avocados, diced
2 limes, zest of
9 tablespoons fresh lime juice
4 tablespoons extra virgin olive oil
2 garlic cloves, minced
1/4 teaspoon cayenne pepper
2 tablespoons sugar
1 teaspoon cumin
2 teaspoons salt

Steps:

  • Combine all ingredients, except avocados, in a large bowl and mix well. Toss with desired amount of dressing.
  • Cover and chill for a few hours or overnight. Right before serving, add avocados and mix gently, being careful not to mash avocados.
  • Serve at room temperature.
