BEAN AND MEAT LOAF
When I make meat loaf, I usually just mix together whatever I have on hand. One time I added leftover kidney beans I had in the fridge, and my family loved the meat loaf's soft texture. Now it's our favorite. -Patricia Zwerk of Tucson, Arizona

- In a large bowl, combine the eggs, 1 cup ketchup, beans, bread crumbs, onion, celery, Worcestershire sauce, lemon-pepper and seasoned salt; crumble beef over mixture and mix well. , Shape into two loaves. Place in a 13x9-in. baking dish coated with cooking spray., In a bowl, combine water and remaining ketchup; pour over meat loaves. Bake, uncovered, at 325° for 70 minutes or until meat is no longer pink and a thermometer reads 160°.

BLACK BEAN VEGETARIAN MEAT LOAF
This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

- Preheat oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.
- Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeno pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.
- Bake in the preheated oven until cooked through, 45 to 60 minutes.

SPICY BEAN & LENTIL LOAF
A great vegetarian alternative to meatloaf. Works great as leftovers as well. If you don't have a food processor, you can mash up the beans with a potato masher.

- Preheat the oven to 350°F Lightly grease a 9"x5"x3" loaf pan.
- Heat the oil in a frying pan, add the onion, garlic & celery and cook gently for 5 minutes, stirring occasionally. Remove the pan from the heat and cool slightly.
- Rince and drain the beans and lentils. Place in a food processor with the onion mixture and egg and process until smooth.
- Transfer the mixture to a bowl, add all the remaining ingredients and mix well. Season with salt & pepper to taste.
- Spoon the mixture into the prepared loaf pan and level the surface. Bake for about 1 hour, then remove from the pan and cut into slices to serve.
- Can be eaten hot or cold.

- Mash black beans in a large bowl and combine all ingredients until evely combined. Transfer to pan and pat down firmly and tightly using a spatula. Bake 45 minutes to one hour at 350, until firm and browned on the outside. Allow the loaf to cool and firm up before serving, about 15 to 20 minutes.

- Preheat oven to 350 degrees F. Grease a 9 inch loaf pan with nonstick cooking spray or line with parchment paper.
- Mix flaxseed meal and 1/2 cup water to a small bowl and place in the refrigerator while you make the rest of the loaf. The flaxseed meal will help bind the loaf together.
- Place large pan over medium heat and add 1 teaspoon of olive oil. Once oil is hot, add in onion, garlic, bell pepper, carrots and jalapeno; saute for 5-7 minutes or until onions are translucent and carrots begin to soften a bit. Transfer to a large bowl and stir in spices and cilantro; set aside.

- In medium saucepan, bring the broth (or water) to a boil and add the pearl barley. Return to a simmer, cover and cook for 15 minutes.
- Next, add the quinoa to the barley. Return to a simmer, cover and cook for 15 to 20 minutes or until all the liquid is absorbed. Remove from the heat, keep covered and set aside.

- Next, add the cooked onion/garlic/vegetables/spices to the bowl, followed by the flax, ground oats, cilantro, balsamic vinegar, and lime juice. Stir very well to combine. I usually get my hands involved at this point to ensure that everything is well mixed.
