Mushroom-Quinoa Veggie Burgers with Special Sauce image

These hearty mushroom, black bean and quinoa veggie burgers are a healthy and satisfying homemade alternative to store-bought veggie burgers. And they take just 25 minutes of active time to prep, so while they're special enough for entertaining, they're quick enough for weeknight dinners.

1 large portobello mushroom, gills removed, roughly chopped
1 cup no-salt-added canned black beans, rinsed
2 tablespoons unsalted creamy almond butter
3 tablespoons canola mayonnaise, divided
1 teaspoon ground pepper
¾ teaspoon smoked paprika
¾ teaspoon garlic powder, divided
½ teaspoon salt
½ cup cooked quinoa
¼ cup old-fashioned rolled oats
1 tablespoon ketchup
1 teaspoon Dijon mustard
1 tablespoon extra-virgin olive oil
4 whole-wheat hamburger buns, toasted
2 leaves green-leaf lettuce, halved
4 slices tomato
4 thin slices red onion

Steps:

  • Place mushroom, black beans, almond butter, 1 tablespoon mayonnaise, pepper, paprika, 1/2 teaspoon garlic powder and salt in a food processor. Pulse, stopping once or twice to scrape down the sides, until a coarse mixture forms that holds together when pressed. Transfer to a bowl and add quinoa and oats; stir well to combine. Refrigerate for 1 hour.
  • Meanwhile, whisk ketchup, mustard and the remaining 2 tablespoons mayonnaise and 1/4 teaspoon garlic powder in a small bowl until smooth.
  • Shape the mushroom mixture into 4 patties.
  • Heat oil in a large grill pan or nonstick skillet over medium-high heat. Add the patties and cook until golden and beginning to crisp, 4 to 5 minutes. Carefully flip and cook until golden brown, 2 to 4 minutes more.
  • Serve the burgers on buns with the special sauce, lettuce, tomato and onion.

Made with cooked quinoa, black beans for texture, and quick cook oats to hold everything together, these Veggie Burgers are packed with protein and hold their shape well.

1 14oz can Black Beans
1 1/2 cups Cooked Quinoa ((see note))
2 Tbsp Tomato Paste
2 cloves Garlic, chopped
1 Egg
1/2 cup Quick Cook Oats ((see note))
3 Tbsp Cilantro Leaves, finely chopped
3/4 tsp Salt
1/4 tsp Black Pepper
4 Hamburger Buns
Lettuce
Thinly Sliced Tomatoes
Avocados or Avocado Crema
Thinly Sliced Red Onion

Steps:

  • Drain and rinse beans. Transfer to a large bowl and mash with a potato masher, dough cutter, or with the back of a sturdy spoon. (You want about half the beans to be in pieces and half the beans to be smooth and creamy.)
  • Add quinoa, tomato paste, garlic, egg, oats, chopped cilantro, salt, and black pepper. Stir everything together to combine.
  • Divide the mixture into 4 portions. Use your hands to form 4 burger patties that are about 1/2-inch thickness. (If you aren't cooking the burger patties right away, see the instructions below to freeze.)
  • Sear the burger patties over direct heat on a grill or heat 1 Tbsp cooking oil in a large skillet and sear on both sides. The patties are done when they are golden brown on the outside and hot all the way through to the center.
  • Serve with any of your favorite burger toppings.

Steps:

  • Finely dice garlic, onion, mushroom and grate carrot. Saute in a large pan with coconut oil until lighlty browned.
  • Lightly toast raw almonds and sunfloer seeds in a pan over medium heat until edges turn golden. Set aside to cool. Once cooled grind into a flour using a nut and seed grinder or coffee grinder.
  • Combine all ingredients into a large bowl and mix well. Use your hands to form individual veggie burger patties then place on a plate.

  • In large skillet over medium high heat add oil, diced onions and minced garlic to hot pan. Cook onions and garlic until fragrant, stirring occasionally for 4-5 minutes. Transfer to heat-safe bowl and place in fridge to cool.
  • Meanwhile add drained/rinsed black beans to large bowl and mash with fork or potato masher. Add cooked quinoa, cooled onion-garlic mixture, spices, salt and egg. Stir or mash until well combined and place mixture in fridge to chill for 30 minutes (up to overnight) – this will help the burger patties hold together better while cooking.
  • Using a 1/3 cup measuring cup, scoop burger mixture and shape with hands. You should get about 5 burger patties.
  • In large skillet over medium heat, spray with oil if using cast iron pan, then place burger patties in pan without crowding. Cook for about 4 minutes on one side, or until golden before flipping and cooking for an additional 3-4 minutes. Transfer cooked patties to tray and allow to cool slightly for 5 minutes before assembling buns. This will also help set the burgers a little more.
